There is almost 30g of protein in this wee little jar and the secret is silken tofu. A great option if you want to switch up your regular overnight oats.  Recipe (Serves 3): Cream: - 300g silken tofu - 2 Medjool dates, soaked in hot water for 5 minutes and drained - 1 small banana - 1 tsp vanilla extract - 1/2 cup vanilla protein powder  Base: - 1 & 1/4 cup almond meal - 1/4 to 1/3 cup vanilla protein powder - 1 & 1/2 tbsp instant coffee - 2 tbsp runny cashew butter - 2 - 3 tbsp water (plus more depending on how runny your nut butter is) - 1 tbsp rice malt syrup - 1 tsp vanilla extract - pinch of salt  Top: - 1 tsp cacao powder #mealprepideas #tiramisu #silkentofu #breakfast #healthybreakfast

I especially love these tofu “mousse” recipes because they’re so simple and easy. This is tofu… a tofu crème brûlée! 😎
400g silken tofu 200g dark chocolate (70%) 1/2 tsp vanilla 3 tbsp maple syrup (or more) (Serves 4) Instructions: 1 Melt dark chocolate using a double boiler or (Thermomix: 3-5 minutes, 50 degrees, speed 1). 2. In a blender, combine melted chocolate with silken tofu, 1/2 tsp vanilla, and 3 tablespoons maple syrup. Blend on high for 3 minutes (Thermomix: 3 minutes, starting from speed 3 and gradually increasing to 9). 3. Transfer the mixture to a bowl and refrigerate for at least 4 hours, preferably overnight. Peanut Butter Mousse with Chocolate Ganache 😍🥜🍫 By Georginaburgess_ INGREDIENTS For the Peanut Butter Mousse 350 grams silken tofu 3-4 tbsp smooth peanut butter to taste 3-4 tbsp agave syrup (you can also use maple syrup or powdered sugar to sweeten) to taste 1 tsp vanilla paste or extract 1 pinch salt For the Chocolate Ganache 100 grams 70% dark chocolate chips (or broken or chopped) 1 400g tin full fat coconut milk the creamy part at the top (leave in your fridge for an hour then scoop out the creamy part that has solidified at the top) INSTRUCTIONS Add the silken tofu, peanut butter, maple syrup, vanilla extract and pinch salt to a blender and blend until smooth – taste test and add any more of the ingredients to your preference.

150g dark chocolate 300g silken tofu 2 tbsp maple syrup 1 tbsp cocoa powder 1 tsp cinnamon powder Pinch of salt 8 ginger nut biscuits (ginger snaps) 50g vegan butter  Instructions 1. Start by melting your chocolate, either with a bain-marie or by throwing it in the microwave, whatever your go-to method is. 2. Throw all of the ingredients, apart from the ginger nuts and butter, into a blender and blitz until smooth and completely combined. 3. Blitz or smash up the ginger nut biscuits, then mix in the melted butter until well combined. 4. Evenly dish out the biscuit base into your glasses/pots and press down on them to compact them a little. 5. Pour out the blended cheesecake mix into the pots. You can optionally crumble on some extra ginger nut biscuit to make it fancy.  by @vegan_punks
