Yet, most cultures have within their culinary repertoire a rich diversity of plant-based food. They’re just not labelled as such. Often, these dishes are products of religion and this sesame tofu (called Goma Dofu) is an example of that. It is part of Shojin Ryori, the Japanese Buddhist temple cooking, that shuns the use of animal products. Practicing monks would take hours to prepare each ingredient by hand, thereby training virtues such as kansha (appreciation) for the true effort it took and for the food they get to savour. RECIPE:
 • -1 small watermelon, cut into desired shape
 • -1 Tsp sesame oil
 • -5 Tbsp soy sauce
 • -2 Tbsp neutral oil
 • -1 Nori sheet, crumbeled 
 • Combine everything and marinate for 3-5h.
 • Bake at 180C/370F for 1h.
 • Optionally dip in the leftover marinade and crust with sesame seeds.

Vegan Chawanmushi or Japanese Egg Custard—a humble, but delicious Japanese dish that I used to love. It’s a silky steamed egg, lightly seasoned, usually made with fillings like mushroom and carrot.

This might be one of my all-time favourite recipes yet because the result was so realistic I couldn’t believe it was vegan! I also partnered with @mizkanflavors to bring you this recipe.
