It’s made with white beans, jarred marinara, garlic, and a big pile of arugula.

We finish with extra Parmesan and a soft scoop of ricotta on top. It’s cozy, budget-friendly, and exactly the kind of simple meal that helps take the edge off the day. Leftovers are great for breakfast the next day, topped with a poached egg!
Ingredients involved:

Sauté your onion, followed by garlic.

Add marinara and beans. Cook!
Now we are ready to make it even better!

Add the arugula. Cook it down.

You could use spinach too.

Parmesan makes everything better.

Turkey White Bean Chili
makes 3-4 servings
- 2 tablespoons olive oil
- 1/2 medium onion, chopped
- 4 cloves garlic, minced
- 2 (15-oz) cans white beans, rinsed and drained
- 2 cups marinara sauce
- Pinch red pepper flakes (more to taste)
- 5 heaping cups arugula
- 1/2 cup grated Parmesan cheese
- 1 cup ricotta cheese
- salt and pepper, to taste
- crusty bread, for serving (optional)
Heat olive oil in a large skillet over medium heat and cook the onion until softened, about 4–5 minutes. Add the garlic and cook until fragrant, about 1–2 minutes more.
Stir in the beans, marinara, and red pepper flakes. Bring to a gentle simmer and cook for about 10 minutes, stirring occasionally. Lightly smash some of the beans with the back of a spoon to thicken the sauce and make it creamier.
Add the arugula and stir until wilted, about 2 minutes. Stir in the Parmesan cheese and season with salt and pepper to taste.
Serve warm with a scoop of ricotta on top and crusty bread on the side. Finish with an extra drizzle of olive oil or more Parmesan if you like it extra cozy.
