Dragon Fruit Muffins - No Eggs, No Flour

These Dragon Fruit Muffins are adapted from my Homemade Muffin and Bakes category. The red hue is coming from red dragon fruit puree.


Basically, I used a foundation oat muffins recipe for this Dragon Fruit Muffins. Instead of mashed ripe banana that is usually added as natural sweetener, dragon fruit smoothie pack (100% dragon fruit puree) is used instead.


Easy Rolled Oats Muffins

Whole-grain oats is a great way to get soluble fiber in your diet. Research suggests that increasing your intake of soluble fiber each day may result in a drop in "bad" LDL cholesterol.

Rolled oats are usually incorporated as breakfast foods e.g. Homemade Granola or Muesli, High-Fiber Breakfast Oats with Milk. However, not restricted to morning consumption, you can also add rolled oats when making multi-grain rice for lunch or fish + oats egg frittata that tops a lunch protein bowl.

Egg Frittata Breakfast Sandwiches

Skip store-bought breakfast and make your own healthier version.  This time, I improved on these breakfast sandwiches with egg frittata as sandwich fillers. These are great make-ahead breakfast sandwiches.

Our family enjoys egg frittata including Onion Egg FrittataGouda Cheese Egg FrittataPico De Gallo/Salsa Egg FrittataFrozen Veggies Egg FrittataFish & Oats Egg Frittata (made with leftover fish!).

Make a batch, wrap up the extras and warm them up when required.


The idea of make-ahead is to save time especially when the day gets busy. However, you still have to fork out some time about 20 minutes or so, during less hectic days to make this happen; or more accurately, make the egg frittata happen. This is an easy version of entirely-oven-baked egg frittata, all for the sake of us, the busy humans.

In the hot summer months (right now!), high fiber breakfast oats gets amped up with bountiful fresh berries and stone fruits. When it gets to cooler months, we comfort ourselves with warm breakfast such as Black Sesame Oatmeal.


Rise and Puff Healthy Tortilla

Recently, I had the opportunity to try one of the most amazing tortilla products* from Rise and Puff. Besides Organic Tortilla and Original Tortilla which I tried, Rise and Puff also has other offerings e.g.  Gluten-Free Tortilla and Everything Tortilla.


What makes Rise and Puff unique and stand out among other competitor tortilla products is the simple and clean ingredient list. Just four clean ingredients in this award winning Original Tortilla: Unbleached Wheat Flour, Water, Avocado Oil, Sea Salt.

I am sold!


Corn Tuna Bread Rolls Buns

Surprise surprise! This was what I did - Homemade Corn Tuna Bread Rolls, when the corn-tuna mix could not fill all the avocado in these Corn Tuna Avocado Cups.

Well, I am happy to say "I baked!" but equally ashamed to be using store-bought ready-to-use dough for these Corn Tuna Bread Rolls. These savory Corn Tuna Bread Rolls with soft fluffy bread filled with sweet (corn kernels)-savory (tuna) were addictive! The dough-bread was also given generous touches of dried herb sprinkles just before sending off into the oven to bake. Another advantage of making these breads at home is the bread rolls can be loaded with more filling, to optimize the ratio of filling to bread.


Low-Sugar Nuts Seeds Muesli/ Granola

Himalayan Fresh Mulberry Waffle

These delectable and nutrient-rich deep purple superfruit mulberries have some of the highest iron and calcium content compared to blueberries, raspberries blackberries; and a great source of Vitamin C. We had the opportunity to pick them fresh from the trees in a farm recently.

The owners and team of the farm spent four years in various areas of research and development and another fours years to propagate the precious trees. Eight years later, their hard work came to fruition with fresh Himalayan mulberries to harvest.





High Fiber Breakfast Oats

A typical breakfast oats may occasionally look like this - rolled oats with nuts, seeds, fresh berries; 


and other times, like this - rolled oats with chia seeds, berries, banana, dragon fruit. 


Raise your hand (or both hands) if you consume those banana fibers inside of the banana skin, and if you scrape the dragon fruit from the inside of the skin to get fiber to the max. Say yes to zero waste kitchen, and say no to rising food prices. Some frugal fiber does not hurt our health and wallets.


Leftover Fish Egg Frittata (+ Veggies + Oats)

Most of the times, there are no leftovers when it comes to cooked fish. Unlike leftover chicken, leftover cooked fish is trickier to deal with. But especially during inflationary times when bulk-buying groceries/produce/food items gets more bang for the buck - that's when you do buy more then usual, cook more than usual and THERE WILL BE leftovers.

Nothing comes to waste when it comes to frugal-living cooking, even for a tricky leftover cooked fish. There is always my beloved egg frittatas to turn to e.g. Onion Egg Frittata, Chive Egg Frittata, Gouda Cheese Egg Frittata and Frozen Veggies Egg Frittata.

So, the leftover snapper fillets from last night dinner were transformed to this Leftover Fish Egg Frittata upgraded with veggies and rolled oats.


Leftover cooked fish tend to be "dry", adding vegetables such as shredded carrots, or roasted zucchini helps re-introduce a little more moisture into the frittata. I also added (or sprinkled) some oats on top before oven-cooking the frittata, to make it texturally more exciting (plus it's added fiber too!).

Oh did I say? Though made into a protein bowl lunch here, these leftover fish egg frittata can be a great idea for a nutritious breakfast as well (yeah, that's rolled oats in there! right?)


Corn Tuna Avocado Cups

Fresh corn (on the cob) tastes the best but when not in peak season, frozen (much preferred option) and/or canned corn can be a convenient alternative - great in Corn Salad, Spicy Corn Kernels and Pea, Corn Lettuce Wrap.

Our pantry may not stock canned corn but the same does not apply to canned sardines which, besides canned beans, is the most well-stocked in our pantry (recipe: Avocado Sardine Toast); and sometimes canned tuna (recipe: Tuna Chickpea Endive Wrap) - see a pantry cabinet filled with canned sardines. Now, there was just one and only, long forgotten tin of corn kernels sitting on the pantry shelf - probably purchased because of huge discount or sale then - which will be used in today's side-dish/ snack Corn and Tuna Avocado Cups.

The combination of sweet corn and briny savory tuna is a classic combo, so here is this super quick and easy appetizer/snack for today - Corn and Tuna Avocado Cups - a good balance of protein and healthy fats (also try Avocado with Sardine Ricotta Cup).


There will definitely be leftovers for this corn-tuna mash because there are not many avocados to go around. This corn-tuna mix is also very versatile e.g. sandwiches/wraps and atop salad bowls. So, feel free to make a batch, store in airtight container to last in the fridge about 2-3 days.


Sheet-Pan Eggs Sunnyside Up

This oven-friendly method of making mini ramekin eggs was improvised using Sheet-Pan Eggs recipe. Right now, there are no ramekins/containers to wash, equaling the luxury of making egg frittatas: Frozen Veggies Egg Frittata, Onion Egg Frittata, Cheese Egg Frittata.


Egg frittata is a wonderful opportunity to include more veggies in your daily meals. Hard-boiled eggs is batch-cooking friendly, offers convenient protein add-on to protein bowls, but definitely not as quick and time-saving when there is a dozen to peel. Sheet-Pan Eggs is then the answer to quick, easy, no-fuss, batch-cooking sunny-side up fried eggs which are great for filling sandwiches/wraps and top up protein bowls.


Sheet-Pan Turkey Egg Cups Asparagus

Ham and egg is breakfast combo for some but with sheet-pan cooking, this pair can be bulked up with vegetables and meal-prepped as a lunch component or element that forms part of a full lunch.


Mini Ramekin Eggs

When planning for large batch fried-eggs or frittatas, turn to the muffin tinMuffin-Style Baked Eggs with Turkey Breast, Muffin-Style Baked Eggs, Veggie-Egg Frittatas. Of course, the good'ol baking tray/sheet pan can do the same batch-cooking job like how this Chive Frittata was made. Honestly, the muffin tin only makes the eggs look a little prettier and cuter as individual servings.

Short on eggs? Or just not making too many? Turn to the oven-friendly mini ramekin. These mini ramekin eggs are good-sized and shaped to fill your breakfast English muffin (McDonald's style Egg Mcmuffin). Enjoy them for breakfast or healthy snacks.


They are also easy protein add-ons to bowl-meals or workout meal.


Breakfast/ Workout Snack Pita Bread Wrap (Tortilla Wrap Hack)

Type "tiktok tortilla hack" in the search box and be overwhelmed by so many savory and sweet ideas, so many that you will soon run out of tortilla (whatever is already sitting in your kitchen pantry) to cover all grounds. To start with, I belong to one of those who did not even have readily available tortilla in my kitchen when the trend started few months ago; and I am also not one of those who will go out of the way to get tortilla solely for this purpose.


But guess what? I have my regular pita bread, so I am going to conveniently do this experiment. Sweet!


Tomato, Mushrooms Baked Eggs

Good morning! 


Breakfast-worthy, this Tomatoes, Mushrooms, Vegetables Oven-Baked Eggs is a balanced mix of proteins from eggs and edamame, fiber from vegetables, and carbs from some good ol' crusty bread (bread to dip into the runny yolks!). 

Brunch, lunch, dinner - this dish will have no trouble fitting in.


Easy to prepare and versatile in many savory recipes e.g. Fennel Egg ScrambleTomato Egg SoupEgg Frittata, egg is nutrient-dense source of protein, healthy fats, choline and B vitamins that help power our brain. It is an absolute essential ingredient item in my family, how about you?  


Oven-Baked Tomato Eggs

Tomato Egg Stir-Fry 番茄炒蛋 is a such a common and popular dish that every home-cook has his or her way of cooking at home.

Sometimes, Tomato Egg Stir-Fry has more sauce and is "gravy-like" - perfect when paired with steamed rice; and other times, it can also be made with less (or no) sauce at all - Green Heirloom Tomato with Eggs - which can be delicious fillings in sandwiches, burgers or wraps.


Muffin-Style French Toast Popovers

Does this French toast look like a popover? or maybe, again, resemble a muffin?

Another easy way to make individual servings French toast is to use a muffin tin or ramekin.


If you prefer to serve family-style, make French toast in a shallow baking dish, like a casserole.


No matter how they look, these French toasts are made from leftover French bread loaf after making Garlic Bread Toast. This is a great way to revive days-old dry bread and bring boring to life!


Egg Guacamole English Muffin

As the pantry did not have tortilla chips in order for guacamole (see Easy Homemade Guacamole) to serve its purpose as a dip (also see Sardine Cheese Dip), the guacamole is used here as a condiment or dressing-spread (option to use Homemade Pesto as dressing-spread) for this homemade egg English muffin.

Now, does this look like delicious breakfast? Breakfast for lunch or light weeknight dinner, anyone?


Pineapple Chocolate Oatmeal Muffins

How is everyone doing? Wherever you are, I hope you are healthy and staying healthy especially in these unprecedented times due to the pandemic.

Here in California, our "shelter-in-place" or "stay-home" order has been in effect since middle of March and looks like it's not going to end anytime soon. Routines have changed and we are all adjusting to the new normal. A lot of us are finding ways to stay sane especially when we have to stay home most of the times.

Baking is definitely an activity that some of you find therapeutic. So let's bake the blues away with these Pineapple Cacao Chocolate Oatmeal Cup Muffins. They are perfect for breakfast, snacks or during these times - DESSERTS ! that lift up your mood!
