Kheer(Milk rice ) Milch reis

Kheer is the most loved dish in India. It is often prepared during celebrations, poojas, wedding and any other special occasion. On birthdays Preparation of kheer is compulasory in my family.
However since my husband and my son love it i like preparing it often.
I was in supermarket and found a packet of rice called as milch reis. I got that this rice is special and can be used with milk. This was small flat broad rice unlike the usual one that we use for preparing the rice. To my surprise this rice tasted awesome in milk.
I am sure you will love this kheer recipe.

Mango Lassi

Waiting for Summer, No worries its almost approaching. You might have several plans to quench your thirst. Well, i had planned for having Mango Lassi , since summer is the season of fresh ripen mango, it would be an amazing Beverage to overcome high temperature. In India summer is the time when the Mango trees are all cladded with mouth watering mangoes. So people have found out several ways to Kill heat using Mangoes. they simply BBQ the raw mango and then make a hot drink with it which to ,much of our surprise keeps the body hydrated and cool. In my next post i will share with you the raw mango drink.
Well Mango lassi is quite easy in preparation and it also helps in digestion. Here's my Recipe of Mango Lassi. Hope u like it.

Serves: 4
Preparation Time :10-15 Minutes



Ingredients:

  • Mango Pulp- 500 gram
  • Yogurt/Curd- 500 gram
  • Sugar- As per taste
  • Milk(cold)- 200ml
  • Dry fruits- For garnishing
Preparation:
  • Bring together Milk and yogurt into a jar, Blend it with a blender, or if you don't have a blender you can churn it into a mixer grinder, or in a food processor .
  • Once Milk and yogurt are churned well, add the mango pulp and churn again until you achieve a consistent liquid(Lassi).
  • At this point of time , taste the Lassi, if you want it to be more sweet add sugar as per required and churn again until sugar gets dissolve in the Lassi.
  • Your lassi is almost done, you can refrigerate it if you want it to be cold.
  • Once done pour the lassi in a glass.
  • Garnish the lassi with some dry fruits and enjoy!!!!
Your Mango Lassi is now ready to be served, Serve it cold...Enjoy

Shrikhand Delight, The 2 Minute Recipe


Shrikhand delight, a delicacy of Maharastra(India) is an eye soothing and mouth watering Dish. This sweet dish is prepared by incorporating so many dry fruits. Its my husband's favorite dessert. The recipe that am demonstrating here is a very simple one. You can always customize this recipe the way you wish.

Preparation- 5 minutes
Serves- 2
Shrikhand


Ingredients:
                                    
  • Hung Curd/ Strained yogurt- 250 gms . The one i used is the Ready made hung curd called as speise quark (Readily available in Germany).

  • Cardamom- 1 Tsp, Crushed
  • Sugar- 2 Tbsp
  • Saffron strings- 1/2 Tsp
  • Water- 1 Tbsp 
  • Cashewnuts - 8 nuts, chopped.

Preparation:

  • Hung curd or strained yogurt are easily available in the market these days. In case you wish to prepare it at home, you can simply strain the curd over a muslin curd, and leave it overnight to thicken under refrigeration .
  • To the hung curd, add the sugar , crushed Cardamom and give it a gentle blend with a spoon.

  • Now add the saffron string to the water, and you can gently crush this in a mortar.

  • Add the crushed saffron along with the water to the curd. Mix well .

  • For garnishing you can add cashew nuts to this or any dry fruit of your choice.
The Shrikhand delight is ready to be served, serve it cold or mild cold, it tastes awesome anyways.

Til K Ladoo (Sesame Sweet savory)

Wishing everyone a very Happy and prosperous Makarsankranti and Happy Lohri. 14th of January in India is a day where whole India celebrates sankranti in inumerable ways. In Punjab people celebrate Lohri, in east India as makar sankranti , in south India as pongal and in Gujrat the whole sky is filled with kites :-).
On this very day people do eat varity of dishes made with the Sesame seed. One of the most popular dish is the Til k ladoo. In this post i will be detailing the recipe. Its sweet and mouth watering dish.


Ingredients:

  • Sesame seed - 200gms
  • Jaggery - 125gms
  • Water- 90 ml

Preparation:

  • Roast the sesame seed until they turn crispy and light brown in color.
  • Once roasted cool them off.
  • Heat one kadai, switch to medium flame, add water and jaggery.

  • Keep on stirring until the jaggery melts and a syrup kind of solution appears.
  • To check weather right consistency of syrup is achieved or not , we can do a water test. Take water in a bowl. To this add one drop of syrup with the help of spatula. if it spreads in water we have to wait for little more. Once the drops settles at the bottom, rub it between your fingers if u find it sticky and also string like ....that's it ... u have reached to the right consistency of syrup.

  •  Immediately turn off the heat or take the kadai off the heat. Add the roasted sesame seed. mix well.
  • Now grease your palms with water and make small rolls while the mixture is still warm or little more than warm. Be careful dont burn your hand.

voila! Ladoo is ready to be served :-)

Let the balls cool off. store them in an airtight jar or box. This will last for atleast a month.

Jalebi


Happy Deepawali to all.
Make jalebis today and celebrate this Deepawali .
Such is the power of Jalebi. watch http://www.youtube.com/watch?v=mk8Z0WbSWV0&feature=colike just love it. Finger Licking, Mouth Watering Garma Garam Jalebiyaan....Whola. As soon as i hear the name jalebi , i start Craving for it.
So i prepared the batter and have kept in refrigerator ,Next time whenever i feel like having it i can prepare it in no time.
For perfect shape, Try preparing jalebi often :-)

Ingredients: Batter
  • 1/2 cup of all Purpose flour
  • oil- 1 tsp
  • Sugar- 1 tsp
  • 1 Tbsp yeast , activated in 2 Tbsp of lukewarm water
  • luke warm water
Sugar syrup:
  • 1 cup sugar
  • 1 cup water
Frying and shaping:
  • plastic cone bottle or any cone
  • Oil for frying
Preparation:
Batter preparation-
mix all the ingredients by adding little amount of luke warm water unless paste kind of consistency is reached.
Let the mixture rise for atleast 30 min to 1 hour
Syrup preparation:
mix the sugar and water , heat until it becomes little thick, keep the heat at low

jalebi Preparation:
once the batter is ready, put the batter in the cone and adjust the nozzle size.
Heat oil in a skillet for deep frying, keep the heat at medium.
make swirling round shapes and fry until golden brown in color
Take out jalebis and put them in warm syrup for like 10 seconds and take them out.


Jalebi is ready to be served : serve it hot and enjoy Deepawali, it tastes awesome :-)

Coconut Ladoo (Nariyal K Ladoo)

Coconut ladoo ,one was never enough for me. People in my area are too good in the preparation of this sweet dish. Sweetness and the taste of coconut that melts in your mouth with each bite, its a mouth watering dish. One of my Bengoli neighbor always made it awesome. I know many of you like me like this sweet , you can sometimes try it out by yourself. Here is the recipe:

Ingredients:
Coconut(grated) - 2 cups
Milk - 2 cups
Sugar - 1cup
Cardamom - 3 pieces (seeds only)
Saffron - Pinch of
Pistachios - 3 to 4 crushed

Method:


  • Heat one pan and add the crushed coconut to the pan
  • Fry it for while
  • Now add the milk to the grated coconut
  • Keep on stirring in low flame
  • Now add the sugar to it
  • Keep on stirring unless the mixture becomes thick enough so that you can bind it into small balls.
  • Once the mixture becomes dry and milk seems to disappear turn off the heat
  • Allow this to cool for next 5 to 10 min
  • Now add the cardamom
  • Now make out small balls with the help of your palms
  • Garnish each with saffron and pistachios

Your dish is ready to be Served

Gulab Jamun

Hii, in this post we will learn how to make gulab jamun. This is a sweet dish and people in india love it like anything.

Ingredients:

  • Milk powder- 100 gm
  • Backing soda - (pinch of )  
  • Paneer  (fresh paneer preferably made up of cow milk ) - 125 gms
  • All purpose floor (maida) - 2 1/2 tsp
  • Cardamom 
Sugar syrup:
  • Two cups of sugar
  • Two cups of water

  • oil for frying
Method:
  • Take all the ingredients in one bowl and mix them well such that the dough is neither too tight nor too soft.Leave the dough for 15mins. 
  • Now make balls out of this dough.
  • Deep fry them until they turn golden in colour maintain medium to low heat.
  • Now make sugar syrup by adding sugar to boiling water. Add the crushed cardmom seeds into the syrup. once the mixture thickens add the balls into the syrup. 
  • Your gulab jamun is ready to serve.

Apple Halwa

Hii,
in this post we will learn how to make apple halwa. Its a sweet dish and can be served as desert.

Ingredients:
Apple - 2 medium size
Milk - 3 cups
Sugar - 3 tsp
Dry fruits - 1/2 cup

Methods:

  • grate the apple.
  • Boil the milk
  • In the boiling milk add the grated apple.
  • keep on stirring the mixture unless the milk thickens
  • once the milk thickens and apple gets cooked add the sugar
  • Now add all the dry fruits
  • Turn off the heat
  • Allow it to cool Or u can also serve it Hot. Choice is Yours.
