German style soup with little Indian twist

Its -5 Degree celsius. Sun shines throughout the day but you can hardly feel its warmth.It's February and days are longer by an hour in the evening which definitely gives a lot of hope that Winter will pass by . Chilled wind makes it worse ,its then you desperately search for a cosy den. Not just a cosy corner but also comforting food to soothe the bruises of the winter soul. A hearty soup bowl could be a perfect remedy.
Nothing fancy was the idea, rather to create something from the locally available supermarket would best save the time. All that boring soup can be elevated to an interesting dish with few magic tricks. check out the magic.

Watermelon cooler(Tarbuj ka sharbat)


#Beat the heat. Yes its summer, am hunting for thirst quenching drinks. I made this water melon cooler with just lime and melon. This is very simple but a refreshing drink. Easy to prepare and really nice to serve.  
In my last two post in the beat the heat series i posted the mango cooler and stone apple drink. Am looking forward for many more drinks to bring in this series of Summer dink.

Watermelon cooler(tarbuj ka sharbat)

Thus recipe
serves- 4
Preparation time - 10 minutes

Ingredients:

  • Fresh watermelon - sliced and deseeded
  • Salt as per taste
  • Ice cubes
  • Lime juice- 1 Tsp
Preparation:
  • Pump in the watermelon in the blender and blend to puree it.
  • Pour in the serving glass.
  • Sprinkle salt and add in squeezed lime juice.
  • Drop some ice cubes
Sit back , relax and enjoy.. your refreshing watermelon cooler.

Adrak wali Chai aur aloo k pakode(Ginger tea with potato fritters)

Am not a chai(Tea) addict but at times i love having them. Unlike me my mom and mom in law are chaicoholic "Chai addicts". This is the story of most of the Indians who love having their tea twice or thrice a day. Most of the evenings in India is spent with chai accompanied by one or the other kind of fritters, the popular among all is the aloo pakoda.

Aam Jhor(Mango sweet & savory juice)


Aam jhor is the famous mango juice of Bihar and Jharkhand, India. During earlier times it was prepared by baking and grilling the raw mangoes over chulha(Mud oven) , but modern day technology mimics the properties of chulha thus mangoes can be easily baked over any baking or grilling system.

High Medicinal Value
A glass of aam jhor greatly helps in fighting with the heat stroke both before and after the heat stroke affects the body. It helps in keeping the body cool thereby protecting the body from heat.
The baked mangoes works as a medicine and nullifies the affect of heat stroke, when applied over the body of the person affected by heat stroke.
Taste
If you ask me about the taste of aam jhor i can only say that its irresistible. I can bet that this is most popular drink during summer in eastern India apart from bel ka sharbat(woodstone cooler)  and ganne ka juice(sugarcane juice).

Bael Ka Sharbat(stone apple or wood apple cooler)

Bael tree is a tree of great use in India. The leaves are invaluable as they are used to perform religious rituals and is extensively used in Ayurveda. The fruit is eaten once it ripes. The sharbat or juice that is prepared from bael is a great cooler specially when you are dealing with high temperature like 45 to 49 degree C.
I have seen different varieties of bael fruit hanging in the trees. The outside of the bael is woody in nature and inside is pulpy.

Mixed Dal /Mixed Lentil recipe

Lentils are rich source of protein. I always feed my baby some or the other lentils. I myself like it very much with rice and chapati. This is a quick and easy mixed lentil/dal recipe. I am using three commonly used lentils in this recipe. They are masoor dal, moong dal and arhar dal. Addition of vegetables like eggplant and tomato adds to the taste  and makes it an awesome finger licking Dal.

Egg salad

Majority of my friends like hard boiled egg. I love them too. When i was a kid i would hear this add on the TV saying "Sunday ho ya Monday roj khayein Andey"  , Which meant eat eggs everyday. These are rich source of protein and one should take them in their diet on regular basis. This recipe is also suitable for people on diet because its really healthy. There are several ways people consume the boiled eggs. In many parts of the world eggs are served as soft boiled or in poached form while in many other parts they are usually served in hard boiled form .
I believe that the environment, ecology and weather has a major impact on the food culture of a region and it is quite interesting to note that when you walk 40 km from a place you will find that the food culture has already taken a bent as compared to the one from where you started and as you proceed to walk on, and with each 40 km of distance you will discover a new cuisine and a new food culture,"Diversity" Isn't that amazing!!!.

Kidney Bean Salad/Rajma Salad

Summer has almost reached, and its time for some filling and soothing salads. What can be better than a kidney bean salad to celebrate spring. I can see the eagerness of the the buds to blossom, trees are swaying with beautiful small green coloured leaves, saying as if they are happy to be back again.
I am also liking the rise in temperature which makes me feel warm even when am outside . To celebrate such serene beauty of the Nature lets have some serene salad simple yet satisfying.

Kidney Bean Salad by Wahsushkitchen
Kidney Bean Salad

Serves: 2
Preparation- 15 minutes
cooking-5 minutes
Level of difficulty- easy

Ingredients:

  • Kidney Bean- 1 can(250 g) boiled
  • Carrot -2
  • Lettuce leave
  • Potato- 2
  • Cherry tomato
  • Zucchini-1
  • Salt as per taste
  • olive oil
  • Yogurt or curd
  • Herbs of your choice(Salat krauter)
  • Freshly crushed Pepper cons
Preparation
  • Steam potato , carrot, zucchini in a steamer by greasing the steamer with olive oil for 5 minutes. Slice the carrot , zucchini and potatoes.
  • Shred the lettuce leaves.
  • Grill the potatoes (Optional)
  • Mix all the herbs and salt in the yogurt to prepare the dressing for the salad.
  • Place potato, carrot , zucchini over a layer of lettuce leave on a plate.
  • Over them place handful of beans and cherry tomato.
  • Season with salt and pepper.
  • Apply the yogurt dressing.
  • Garnish with a slice of lemon and sprinkle some lemon juice and olive oil.`

Mango Lassi

Waiting for Summer, No worries its almost approaching. You might have several plans to quench your thirst. Well, i had planned for having Mango Lassi , since summer is the season of fresh ripen mango, it would be an amazing Beverage to overcome high temperature. In India summer is the time when the Mango trees are all cladded with mouth watering mangoes. So people have found out several ways to Kill heat using Mangoes. they simply BBQ the raw mango and then make a hot drink with it which to ,much of our surprise keeps the body hydrated and cool. In my next post i will share with you the raw mango drink.
Well Mango lassi is quite easy in preparation and it also helps in digestion. Here's my Recipe of Mango Lassi. Hope u like it.

Serves: 4
Preparation Time :10-15 Minutes



Ingredients:

  • Mango Pulp- 500 gram
  • Yogurt/Curd- 500 gram
  • Sugar- As per taste
  • Milk(cold)- 200ml
  • Dry fruits- For garnishing
Preparation:
  • Bring together Milk and yogurt into a jar, Blend it with a blender, or if you don't have a blender you can churn it into a mixer grinder, or in a food processor .
  • Once Milk and yogurt are churned well, add the mango pulp and churn again until you achieve a consistent liquid(Lassi).
  • At this point of time , taste the Lassi, if you want it to be more sweet add sugar as per required and churn again until sugar gets dissolve in the Lassi.
  • Your lassi is almost done, you can refrigerate it if you want it to be cold.
  • Once done pour the lassi in a glass.
  • Garnish the lassi with some dry fruits and enjoy!!!!
Your Mango Lassi is now ready to be served, Serve it cold...Enjoy

Chicken noodle soup, The Classic style

The snow c laded land , constant low temperature ,Kind of relaxed mood and old sad song in the background,  What do you prefer to have in this situation. I definitely enjoy hot chicken noodle soup , that do make your senses and belly happy while helping you to carry on your classic way of celebrating cold.
No doubt, Its chicken soup for the soul. I say so  because its simple, no complication. Its just chicken , noodles and veggies cooked in a clear soup. Enjoy your cold wintry days with this recipe.

Preparation time :10 mins
Cooking time: 45 mins
Serves- 4    



The classic chicken Noodle soup
Ingredients:

  • Chicken - 500 gms, boiled and chopped, or the leftovers will also do.
  • Carrots- 4 chopped
  • Onion- 1 chopped
  • celery- 4 sticks chopped
  • Egg Noodles- 400 gms
  • Pepper- freshly crushed
  • Salt as per taste
  • Oil for cooking
  • Vegetable bullion
  • Chicken stock - 700 Ml

Preparation:

  • If you do not have boiled chicken , boil it by adding the chicken in 1Ltr of water. Add salt while boiling. Strain the chicken stock and reserve it once chicken gets cooked. Let the chicken cool of , then chop it.
  • Heat oil in a soup pot.
  • Add in the onion , celery, carrot. Saute until they are soft , add salt to this.
  • Add  the chicken stock or vegetable stock, boil. Add the vegetable bullion or any other bullion cube of your choice.
  • Add the egg noodles once the vegetable stock is hot . Cook Noodle until it is la dent...cooked.
  • Add in the chopped chicken pieces, season with pepper and simmer for 2 minutes. 
Your chicken Noodle soup is ready to be served, serve it hot.  Enjoy Winter :-)

Tortellini Salad


There are times when i have little patience to cook a dish that takes a long time. That's when i look for easy to cook, healthy and filling meals.
Today i just opened my cupboard and found a packet of tortellini. That's when i decided of making a quick tortellini salad. Being a tortellini fan i would use it here and there every now and then.
I would also like to share my experience from the time i included salad in my daily diet, i have been benefited a lot health wise . Here's sharing you the healthy recipe, Hope you like it.

Preparation- 10 minutes
Cooking - 8 minutes.
Serves- 4


Tortellini Pasta Salad

Ingredients:
  • Carrot- 4 , large in size , Washed peeled and chopped.
  • Tomato- 4, Medium in size, cut into cubes.
  • Lettuce leaves- Washed , Dried with kitchen towel, and gently tore with hand into small chunks.
  • Corn - 1/2 cup boiled and salted.
  • Lime juice- 2 Tbsp
  • Tofu- 100 gms, cut into cubes
  • Tortellini Pasta- 250 gms.
  • Pepper cons- Freshly crushed
  • Salt as per taste.
  • Butter- 1 Tbsp.
  • Olive oil

Preparation:
  • Boil 1 liters of water, by adding salt to it. Once the water gets boiled, add the tortellini to it and cook it for 8 minutes. After 8 minutes turn off the heat and drain the water. Transfer the tortellini in a large bowl. Add 1 tbsp of butter to it and simply toss it.
  • In the same bowl bring together all the other ingredients, mix well by adding lime juice and olive oil.
  • Season with salt and pepper.
Your quick and healthy tortellini salad is now ready to be served.
if you want to eat them cold you can cover it and refrigerate it . This way tortellini absorbs all the flavors of lime and pepper and make our salad more mouth watering.

cheesy Macroni soyabean fry salad

Hi in this post we will learn to how to prepare chessy macroni soyabean salad.

Ingredients:

  • Macroni
  • soyabean granules
  • chillies -2
  • oil for frying
  • salt as per taste
  • onion- sliced
  • jeera
  • turmeric
  • pepper
  • tomato sauce
  • cheese
  • cucumber
  • bell pepper
  • carrots
  • cabaage- finely chopped
  • Tomato- finely chopped
  • Lemon Juice
Method:
  • Boil macroni (Add salt and oil in the water used for boiling)
  • boil soya bean granules(Add salt and oil in the water used for boiling)
  • In a pan heat oil,add cumin seeds let them crackle,add chopped green chillies
  • to this add chopped onions,fry them until they turn white
  • Add finely chopped tomatoes, fry until it softens
  • now add soyabeans granules, fry until it looses its moisture 
  • Add turmeric and pepper to this
  • now add bolied macroni 
  • Add tomato sauce, chilli sauce and soy sauce
  • Finally add cheese let it melt.
For The Salad
  • Chop bell pepper,onion, carrot, cabbage,cucumber. to this add salt.
  • To this add fried macroni and 1 tea spoon lemon juice
  • Now add sauces of your choice.
