Craving dumplings, but not the carbs? Cabbage to the rescue. These cute little bundles have the savory filling you love in a pork pot sticker, but with a veggie-forward wrapper that’s great for getting extra greens in. Whether you’re looking for an alt for your Chinese-inspired spread or just want a high-protein snack that won’t mess with your macros, these cabbage dumplings should be on your must-make list.
Best part? You can customize the filling based on what you’ve got in your fridge. We went with pork, but ground chicken or beef should also work. You could even replace it with something plant-based, like shredded tofu or tempeh. As for flavoring, we kept things pretty standard, but you can feel free to sub ingredients in and out. Not a fan of cilantro? Skip it! Prefer a different sauce than soy? Give it a try! These little dumplings are also a great way to repurpose random leftover proteins, too, though if yours are already cooked through, you can probably skip the steaming step.

ground pork
- 2
garlic cloves, minced
- 1 Tbsp.
finely chopped fresh cilantro
- 1 Tbsp.
grated peeled ginger
- 2
scallions, thinly sliced, divided
- 1 Tbsp.
plus ⅓ cup reduced-sodium soy sauce, divided
- 2 tsp.
toasted sesame oil, divided
- 1
large egg, lightly beaten
- 13
green cabbage leaves
- 2 Tbsp.
extra-virgin olive oil
- 1/4 cup
water
Directions
- Step 1In a medium bowl, combine pork, garlic, ginger, cilantro, 1 scallion, 1 Tbsp. soy sauce, and 1 tsp. sesame oil. Add egg and mix until just combined.
- Step 2In a large pot of boiling salted water, cook cabbage leaves until tender, about 1 minute. Transfer to paper towels to drain.
- Step 3Cut each cabbage leaf in half lengthwise and remove core. Spoon about 1 Tbsp. pork mixture on one end of a leaf and tightly roll up, tucking in sides. Repeat with remaining pork mixture and cabbage.
- Step 4In a large skillet over medium heat, heat olive oil. Working in batches, cook dumplings, seam side down, until golden, about 2 minutes.
- Step 5Add water to skillet and cover with a lid. Steam until pork is cooked through (test one to check), about 10 minutes. Repeat with remaining dumplings.
- Step 6Meanwhile, in a small bowl, combine remaining scallion, 1/3 cup soy sauce, and 1 tsp. sesame oil.
- Step 7Arrange dumplings on a platter. Serve with sauce alongside.
