Steak frites is such an iconic dish; a perfectly seared steak and crispy French fries are hard to beat. Add a cold martini or a glass of wine, and you have a perfect meal…well, almost perfect. Though I’m all for a completely hands-on, homemade meal, sometimes it’s just not in the cards. Making everything on a sheet pan and utilizing frozen fries, however, makes this meal come together almost impossibly fast (just 20 minutes!). Next time you want to feel like you’re dining in a European bistro, without a ton of effort, this recipe has your back.
What kind of fries to use:
Because we’re relying on frozen fries to make this possible, using a good brand is important. Don’t go for any shoestring or skinny-cut fries. They’ll burn too quickly under the broiler. I also found that steak fries were too thick and just didn’t get crispy enough. A hand-cut-style fry is best because they have a little thickness to them, but will also cook through in the short baking time. I really like the Grown In Idaho brand for this because they have an extra coating on the fries, making them perfectly crisp. They also had the best results from all of my tests.
Cooking on a sheet pan:
You’ll need to watch the fries and steak closely as they broil to ensure neither burns. Don’t be afraid to take the fries off the sheet pan if they’re done, but the steak needs a couple more minutes. I recommend serving the French fries with a side of mayonnaise for the best Parisian experience.

(1"-thick) NY strip steaks
Kosher salt
Freshly ground black pepper
- 2 Tbsp.
vegetable oil
- 1/2
(28-oz.) bag frozen hand-cut-style French fries
Mayonnaise, for serving (optional)
Directions
- Step 1Arrange a rack in upper third of oven; preheat broiler. Pat steaks dry; generously season with salt and pepper on both sides. Brush both sides with oil.
- Step 2Arrange steaks on one half of a baking sheet. Spread fries on other side in an even layer.
- Step 3Broil for 5 minutes. Flip steaks and toss fries. Continue to broil until medium-rare (an instant-read thermometer inserted into thickest part should register 125°) 3 to 5 minutes more. If needed, broil 1 minute at a time until desired temperature is reached. Remove fries from sheet pan if more time is needed for steak.
- Step 4Transfer steak to a cutting board or plate and let rest for 5 minutes.
- Step 5Thinly slice against the grain, then divide between plates. Serve fries with mayonnaise alongside (if using).
