INGREDIENTS:
 • 2 lb chicken pieces (Anything with bones, skin, nerves will work or whole chicken)
 • 2 medium carrots, chopped
 • 3 stalks celery, chopped
 • 1 head garlic
 • 3 bay leaves
 • 1 medium onion, peeled and chopped
 • 3 sprigs thyme
 • 2 tsp sea salt
 • 1 Tbsp apple cider vinegar

PROCEDURE:
 • In a large pot add all the ingredients. Add water to cover the ingredients 2 inches more than the top. Simmer for 2 hrs. If you added any meat with pulp worth eating, it's the time to remove the piece (legs in my case), pull apart the meat and throw back in the broth any bone or skin part. Keep simmering for another 2 hours at least (4-6 hrs total). Let it cool down and separate the broth from the chicken parts/veggies with a colander. Discard the veggie/chicken and enjoy your

INSTRUCTIONS: Sauté onion, garlic, and carrots. Add salt to draw out onion moisture. Add uncooked chicken thighs, season with salt, black pepper, paprika, and cumin. Cook each side for about 4 minutes. Add rice and chicken bone broth, bring to a boil, then simmer until carrots and rice are tender. Remove chicken thighs, shred, and return to the soup.
