 • 1lb. medium raw shrimp deveined & tail off
 • 2 to 3 tbsp. chipotle adobo sauce, to taste
 • 2 tbsp. olive oil
 • 2 tsp. fresh garlic finely minced
 • 1 tbsp. chili powder
 • 1 tsp. cumin
 • 3/4 to 1 tsp. salt, to taste
 • 1 tsp. oregano
 • 1 tsp. coriander
 • 1/2 tsp. black pepper
 • 1 tbsp. olive oil for drizzling on the
 • skillet/pan

CILANTRO LIME RICE
 • 1 1/2 cups long-grain basmati rice rinsed and drained
 • 1 tbsp. olive oil
 • 1 tbsp. unsalted butter
 • 2 tsp. fresh garlic finely minced
 • 2 1/2 cups water
 • 1 1/2 tsp. salt or to taste
 • 1 bay leaf
