One of my favourite Greek dips and a soexialty from the island of Santorini as yellow split peas are grown in the mineral rich volcanic soil, and watered from humidity that rises from the sea, up the cliff faces during the hot summers nights. A specialty also on the island of Crete, and of course Yiayia’s kitchen. Yiayia always prepares a bulk amount to distribute amongst the family. It’s a fantastic substantial vegan dip that creates its own creaminess and flavour, packed with nutrition using very little ingredients.

Description: This hearty split pea soup is packed with flavor, combining tender peas, smoky ham, and aromatic vegetables. A comforting, rustic dish perfect for cold days or family dinners.  Heat olive oil in a large pot and sauté the onion, carrots, celery, and garlic until softened. Add the ham, split peas, chicken broth, thyme, salt, and pepper. Bring to a boil, then reduce the heat and simmer for about 1-1.5 hours, until the peas are tender. Stir occasionally and adjust seasoning if needed. If the soup is too thick, add extra broth or water.
