Crispy Korean Spring Onion Pancake (Pajeon) Recipe | Verna Gao
For the dough: 300g plain flour, 150g lukewarm water, 1/2 tsp salt For the filling: About 100g spring onions, 50g plain flour (more if needed), 1/2 cup (120ml) vegetable oil, 1 tsp Chinese five spice, 1 tsp salt For the dipping sauce: 1 tbsp light soy sauce, 1 tsp sesame oil, 1 tsp rice vinegar,  1 tsp chilli oil (optional) 1. Make the dough:  In a large bowl, combine plain flour and salt. Gradually add lukewarm water, mixing until a dough forms. Knead the dough on a floured surface for about 5-10 minutes until smooth. Cover with a damp cloth and let it rest for at least 30 minutes. 2. Roll out the dough:Divide the rested dough into four pieces. Roll each piece into a thin circle (about 10-12 inches in diameter).

INGREDIENTS:
 • - 2 cups flour
 • - 1 tsp salt
 • - ¾ cup lukewarm water
 • - 8 green onions
 • - ⅓ cup oil (I used a mix of olive & sesame oil)
 • - 3 tbsp flour
 • For the sauce:
 • -¼ cup soy sauce
 • - ¼ cup maple syrup
 • - 2 tbsp rice vinegar
 • - 1 tsp sesame oil & seeds
 • - ½ tsp chili flakes

INSTRUCTIONS:
 • 1. In a bowl, kneed flour, salt and water. Once a dough starts to form, transfer it to a working surface and need until you have a smooth and soft dough. Cover with a towel and let rest for 30-60 minutes.
 • 2. Meanwhile, chop only the green parts of the spring onions, and in a small bowl combine oil and flour. Set aside.
 • 3. Uncover the dough, place it on a floured surface, divide into 6 equal pieces, take 1 of them and cover the rest with the towel.
 • 4. Roll the pie
