Replicating a Panera Fave at Home - Sort of

Mindy here and I love Panera Bread. However, until recently, there wasn't one near me. Now that there is, though, I get to visit regularly and one of my favorite things on the menu is their Frontega Chicken Panini. Smoked chicken, mozzarella, tomato, basil and chipotle mayo on grilled focaccia. Delicious!

So one day while I was contemplating what to fix hubby and I for lunch, I spotted this is the fridge.
Smoked chicken breast. 
That's when it struck me. I could duplicate that delicious Panera sandwich at home. After all, I had most all of the ingredients, plus a few extras to make it my own.
Best of all, I could do it on a Joseph's pita and keep it low-carb.
Score!

I sliced up my chicken, grabbed the mozzarella, tomatoes, chipotle mayo and an avocado (my addition).

Now for the assembly.
I laid some mozzarella on one half of the pita, then topped that with some chicken.
Added the chipotle mayo, which is quickly becoming a fave in the Obi household.
(Sorry, I got so excited that I couldn't hold the camera still)

Now for some tomato, avocado and more mozzarella. Notice I used cheese on the top and bottom. Just think of it as glue.

Fold the top half over the filling and place in a skillet over medium heat until the cheese is melted, flipping halfway through. At least this is what I did the first two times I made this. Then, in a rare moment of inspiration--which is kind of like a V8 moment that makes you smack your forehead--I realized that I could use my George Foreman grill and do both sides at once.
With the grill on medium-low heat, close the lid and let it cook for 2-3 minutes, until cheese is melted.
As I bit into this one a short time later, I realized that something was missing. It didn't taste the same as what I'd made before. Why? Because I forgot the bacon!

Seriously? How can anyone forget bacon? 
And while it was one of my own additions, crisp bacon was a perfect match for these ingredients. But  I guess I'll have to wait until next time. And with some chicken still left, that might just be tomorrow.

Who not only gave me two gorgeous grandchildren, Logan...


And Pearlie May...  (her name is really MacKenzie... but she looks like a Pearlie May, doesn't she???)

Here was her Saturday Night Panini Production. 

Start with Italian bread... sliced ham... bacon, cooked and drained...




The bacon bits and shredded cheese were garnish for the Bear Creek Creamy Potato soup mix she tossed together in her spare time:



So you slice the bread in half...

And you can use dressings or seasonings or dijonaisse... As you wish...

Layer with cheese... we had swiss, cheddar or American... If you look carefully, you can see the panini stone press behind the sliced bread...
It's the "weight" that presses the sandwich together. Cast iron.
Heavy.
Wonderful!!!


Now you add a layer of seasoned grilled in olive oil chicken breast tenders...
Note the very unclean/untidy kitchen counter.
It was a writing day.

And in Cordon Bleu style, you add slices of ham and swiss cheese...

Apply the top.
Now you grill it on a panini press. I have an electric panini press.
Lacey has a large broiler pan and a HEAVY STONE PRESS from 
Williams Sonoma.
It was a present. 
It is also useful for keeping husbands in line.
At least she says it works.
Respecting their privacy, I do not ask. Right????

Heat in the press (electric or on the stove) until sandwich is glued together by melted cheesy goodness.

Cut into serving size pieces.

Amazing!

Simply Saturday Paninis!

We bought a panini grill.
I can deduct it from my taxes because I'm actually doing research for "His Mistletoe Family" due out in December of 2012...

I LOVE THIS THING.

This is what it looks like:

I got it for 24.99 on Black Friday. One of the few things I bought.
It's big.
It wipes clean.
It makes amazingly good melty-melty sandwiches and the cheese gloms everything together, just like it should.

I am happy.

Here was our first panini experiment:



Sauteed chicken breast sprinkled with Montreal chicken seasoning
Roasted red peppers
Yellow banana peppers
Ranch dressing
Swiss cheese for me, cheddar for Beth
Sun-dried tomatoes.

Oh. Yum.

I let the chicken saute while I cleaned up the kitchen after the least-un's left.
And then we built the sandwiches.
We buttered the bread just like you do for grilled cheese.
Then I sliced up the chicken into strips so the cheese could 'glue' it back together...

This pic has nothing to do with Paninis and everything to do with why child safety locks are NOT foolproof. Obviously these toddlers are not KIX fans...Unless they are crunching them beneath their feet. And five minutes later had the most delicious sandwich ever created in the history of most of the world.
I don't want to get carried away in my enthusiasm. You understand. I am the queen of subtle.

A-stinkin'-mazing.
And easy.
And it wipes clean.
This could be a dream machine.
I am not kidding.
