Cherry Tomato and Caramelized Shallot Galette

This post is long overdue…I started writing it a few weeks ago and, of course, got sidetracked by a slew of other things. Given that the star of this recipe is sweet summer tomatoes, I figured I better post it soon before it really turns into fall (it was 80 degrees in Baltimore this past Monday…definitely not fall yet!)

When I was down in Baltimore a few weekends and ago, I did one of my favorite things – making an early morning trip to the farmer’s market with Matt and coming up with a menu for dinner for us on the spot. I hadn’t done so since June, and it was so much fun to be able to do so again.

Sick Day: Easy Creamy Tomato Soup

I’ve been really sick the past few days, so I haven’t had the energy to cook. Last night I really wanted tomato soup and grilled cheese – my comfort food when I’m sick and feverish – but I didn’t have any so I had to make it myself. The soup was totally easy to make and made me feel better – mentally, at least.
Instead of making grilled cheese (I didn’t have any sandwich bread), I sliced up ciabatta, topped each slice with mozzarella cheese, and stuck them in the toaster oven. As for the dishes that are still in the sink…I don’t quite have enough energy to tackle those yet. Who wants to do them for me?

Penne alla Vodka

The 7th annual Baltimore Marathon took place yesterday, and the streets of Baltimore were taken over by about 12,000 runners, one of whom was yours truly. I ran the marathon as part of a four-person relay team that was made up of myself, my brother, the bf, and the bf’s very tall friend. The 26.2 miles of the marathon were divided into 4 legs, the shortest of which was 6.0 miles and was very hilly, and the longest of which was 7.3 miles and had a long downhill stretch. My leg was 6.1 miles, the last two of which were uphill.

Pizza Melanzana

OK, back to the savories. And, of course, it has to feature my favorite, eggplant, and its summertime partner in crime, the cherry tomato.

Green Tomato and Lentil Stew: Thakali Masiyal

I’m not feeling particularly inspired to write thoughtful prose, so I’ll just lay out the important details regarding what prompted me to make this dish this weekend:
  1. It’s one of my favorite things that my mom makes.
  2. It can only be made in the summer/early fall because it requires green tomatoes.
  3. My tomato plants died (from root rot, it seems) and so I had a large harvest of green and pinkish tomatoes on my hands.
  4. I had no other produce in my house and sort of had to make this if I wanted to eat something remotely fresh.

Roasted Eggplant and Tomatoes with Penne

I don’t think I need to reiterate that eggplant is my favorite vegetable. As I previously mentioned, there are so many lovely ones available at the market this time of year, and I always buy lots of them. Of course, there’s also a plethora of tomatoes at the market; I end up buying a few pints of different cherry tomatoes in addition to heirlooms and romas. Of course, at this point, I find myself with too many tomatoes and eggplants (amongst other vegetables) on my hands. Although I love being in the kitchen, trying to use up all this produce sometimes tires me out, which is why roasting has become my preferred method of dealing with much of my summer produce. Not only is it incredibly easy, but I find that it really brings out the flavor of the vegetables.
