Vegan Coconut-Mango Pudding with Rose Gelée

My dad's birthday was a few weeks ago, and, as I do for everyone in my family, I make them a birthday cake.  In the case of my dad, I always make his favorite cake - my signature pistachio-cardamom cake with rosewater frosting - but even though I love it, too, I was starting to get a little tired of it.  I considered making a mango kulfi cake, but that's my mom's birthday cake, and I was also just not in the mood to make a cake this year (I blame it on the interminable stretch of damp grey days).


A few weeks ago, I had spent some time conjuring up a short menu of simple spring desserts (for a now-defunct project), one of which was a meyer lemon pudding with brown sugar-sesame seed tuiles.  For whatever reason, that one had really stuck in my head, so I ran with the idea of pudding and decided to make it mango.

Mojito Cake


Here’s another one from the archives.



I made this for a co-worker’s going away party…which was before Labor Day… Anyhow, I wanted to try something new, and had seen a few recipes for mojito cakes but liked none of them. I concocted this recipe and figured that even if it didn’t come out right, there was enough mint, lime, rum, and frosting going on in this cake to conceal any minor problems.

Kiwi Cupcakes with Lime Frosting

Although I’m not really a summer person (I can’t stand the heat!), one of the things I love about summer is the wonderful fresh fruit that it brings: peaches and berries of every variety are abundant and are perfectly juicy and sweet. Unfortunately, fruit in the winter tends to be limited to apples and bananas – blah. However, it’s summer in the southern hemisphere right now, which means that kiwis are plentiful and cheap, to boot.



I recently bought a ton of kiwis with a new cupcake recipe in mind. 

Unfortunately, my first attempt at it was a bit of a failure. Kiwis have a lot of water in them, and their flavor is really subtle, so my addition of a healthy dose of kiwi puree resulted in wobbly cupcakes with a fair amount of kiwi flavor. I decided that the solution would be to reduce the kiwi puree so as to get rid of a lot of the water and intensify the kiwi flavor.

Coconut Cupcakes with Ginger-Lime Frosting


I’ve been wanting to try my hand at coconut cupcakes for a while and I had some coconut milk left over from the pumpkin curry I made last week, so I decided to go for it. The cupcakes came out incredibly soft and moist, and the ginger and lime in the frosting were the perfectly tart and tangy twist to top them off. They’re a wonderful way to brighten up a cold and dark almost-winter day.

Mango Kulfi Cake

Here it is – my mom’s birthday cake, which is based on my mango kulfi cupcakes but has been spruced up with the addition of saffron to the cake batter and pistachios between the layers and on top of the cake to make it taste even more like real mango kulfi.



Some of these photos are of the original cake, and some are of the corrected version that I made on Monday (the new cake has three rows of piped stars on the border as opposed to the one row of big stars on the original cake). I wish you could taste this – I am not a big dessert person but I absolutely love this cake and have to restrain myself from devouring the leftovers that are in my fridge.

Tropical Dinner Part 5: Kiwi Lime Fizz

It’s almost happy hour, so I figured I’d share the cocktail that goes along with this week’s theme. I came up with this one because I had bought too many kiwis the week before. Some of them were turning to mush, so there was only one thing I could do with them: turn them into puree. And that is how this tasty green cocktail was born.


Tropical Dinner Part 4: Macadamia-Lime Green Beans

I’ve never eaten green beans almondine in my life, so imagine my surprise when I learned that what I thought was a clever way of dressing up green beans was pretty much an brightened up play on the old classic. In my version, lime juice replaces lemon juice, and the almonds have been jettisoned for macadamia nuts. I guess some things were just meant to go together. This would be a great side dish with pretty much anything, but it goes particularly well with the rest of the tropical-ish dinner

Tropical Dinner Part 3: Mango Papaya Salsa

The idea for this fruit salsa came to me along with that for the macadamia-crusted marinated tofu, as a similar fruit salsa was the accompaniment for the crusted yellowtail that was the inspiration for the tofu recipe. I just happened to have mangos and a papaya sitting in my fridge last week, so I decided that I would invite both of them to the party.
This salsa totally exceeded my expectations – it’s perfectly sweet, tart, savory, bright, and spicy all at once. You’ll have more than you need for the 4 servings that the rest of menu calls for, which is a good thing, because you’ll want to just eat it straight out of the bowl – it’s really that good!

Tropical Dinner Part 2: Coconut Coriander Rice

I'm not really sure where the inspiration for this came from; all I know is that the words coconut and coriander popped into my head when I was thinking about what to add to the rice that was going along with the rest of this tropical-ish dinner, so I decided to run with it. It worked out perfectly: the coconut milk lent a silky quality and subtle perfume and flavor of coconut to the rice, and the coriander was just the right foil - smoky and earthy - to the sweetness of the coconut.

Tropical Dinner Part 1: Macadamia-Crusted Marinated Tofu

Last week, I went all out and made a snazzy tropical-ish dinner, complete with pre-dinner cocktail, three sides, and dessert. Every day this week I'll be posting each of the items from that menu. With the exception of the dessert, everything is really easy to make. And everything is absolutely delicious - I have to say that I was really surprised at how great everything came out!
