Potato Ham Scallop

2 cups ham, chopped
2 med potatoes , peeled, thinly sliced
1/4 cup onion chopped
1/2 cup flour
2 cups milk
3 Tbs bread crumbs
1 Tbs butter melted
2 Tbs parsley

place half the ham in 2 quart casserole dish
cover with half the potatoes, half the onion, sift half the flour over, season with salt and pepper and repeat
pour milk over all
bake covered at 350 for 1 hour
uncover, combine breadcrumbs & melted butter, sprinkle on casserole top with parsley bake for 15 more min

Ham and Tater Bake

1 pkg frozen steak fries
1 pkg frozen chopped broccoli, thawed and drained
1 1/2 cups diced fully cooked ham
1 can condensed cream of boccoli soup
3/ cup milk
1/2 cup mayonnaise
1 cup shredded cheddar cheese

Arrange the fries in a grease 3 qt baking dish; layer with broccoli and then ham. Combine the soup milk and mayonnaise until smooth; pour over ham. Cover and bake at 350 for 20 min. Uncover; sprinkle with cheese. Bake 20-25 min longer or until bubbly.

Yield: 6-8 servings.

*Editor's Note: Reduced-fat or fat-free mayonnaise may not be substituted for regular mayonnaise.
