Once I start seeing those colorful Peeps lining the candy aisle at the grocery store, I know spring is just around the corner. I love enjoying a package all on its own, but they’re also the perfect hack for a fun, easy, and super springy dessert. These 3-ingredient Peeps cookies come together in under 20 minutes, making them the perfect last-minute treat for any spring dinner party or Easter brunch. To make them even easier, I opted to use store-bought cookie dough, but feel free to make your own using our best sugar cookie recipe if you’re feeling extra.
In true Peeps fashion, make sure to get a variety of Peep colors to make these as bright and festive as possible. There are so many new flavors to choose from, but the classic yellow, pink, blue, or lavender are my personal favorites for cookies. And for extra colorful peep flair, take the extra step to dust the cookie dough with colorful sanding sugar.

Ingredients

(16-oz.) pkg. Pillsbury Refrigerated Sugar Cookie Dough
- 6
Peeps
Sprinkles, for decorating
Directions
- Step 1Arrange a rack in center of oven; preheat to 350°. On a clean work surface, separate each roll of dough into 6 pieces. Flatten each piece to a disc, then sandwich 2 discs around a Peep. Using your fingers, close seams so Peep is fully covered. (You should have 6 total.)
- Step 2Pour sprinkles onto a plate and press tops of cookies into sprinkles.
- Step 3Arrange 2 dough balls on parchment-lined baking sheet, spacing 3” apart (they’ll spread a lot).
- Step 4Bake cookies until edges are golden brown, 17 to 20 minutes. Transfer to a wire rack and let cool. Repeat with remaining dough balls and a clean parchment-lined baking sheet.
