I doubled the macaron recipe and got about 24 macarons. Important tips: wipe everything down with vinegar, weigh all ingredients before starting, use powder food coloring, turn on fans around you, use silicone mats, turn your pan unside down to ensure good airflow in the oven, i rested my macarons for about 10-15 mins before baking, after baking dont touch them until you can easily remove from mat. Trouble with your macarons? Here are the tips breakdown!

1️⃣ Use a stencil: in order for your macarons to be uniform and similar in size, use a stencil. This also ensures they will ALL bake evenly because they are all the same size.

2️⃣ Allow macarons to dry: Leave them out for about 20-30 minutes so the tops become dry.

3️⃣ Gently touch a macaron: why? Just for fun! No kidding. If the macaron leaves batter on your finger, they're not dry. The tops should be solid to a gentle touch before baking.
