Ingredients:  • 100g glutinous rice flour  • 100ml milk  • 1/2 tbsp oil  • 50g grated Parmesan cheese  Steps:  ➊ Preheat the oven to 180C  ➋ Place the flour in a bowl, slowly pour in the milk and mix well to combine.  ➌ Add in the oil and mix well to combine  ➍ Add in the Parmesan and mix well to combine. Make sure to add in the ingredients as per order or it won't turn out smooth.  ➎ Divide into 8 equal portions and roll them into balls. Ingredients: 150g silken tofu or 125g 100-115g glutinous rice flour Sauce: 1 tbsp soy 2 tbsp sugar 2 tbsp mirin 1 tsp corn starch or potato starch 2 1/2 tbsp cold water  method: - soak bamboo skewers in water - in a bowl, mix silken tofu with glutinous rice flour until it forms a dough - form 12-16 pieces of bite size balls from the dough (15-18g) - in a pot of boiling water, add the dough and cook until it floats (1-2 min) - place immediately into a bowl of ice water - in a pan, add the ingredients except the potato starch and water, and bring to a boil before reducing down to simmer - stir until the sauce thickens - skewer 3-4 rice balls onto a stick - pour sauce directly, or pan fry/char/grill the surface of the dango before pouring the sauce.

Leftover rice balls.

Cook time: 4 mins | Prep time: 10 mins | Makes: 20

Ingredients.

5 cups white rice, cooked and 1 day old

2 eggs

1/2 cup parmesan, grated

1 lemon, zest

salt and pepper to taste

Method.

1. In a bowl add your rice, eggs, parmesan, lemon zest, salt and pepper. Mix to combine well. 

2. Roll evenly into 20 balls, lightly flatten in the palm of your hand, cover and set in the fridge for 10 minutes. Or freeze in an airtight container until needed. Will last for 1 month in the freezer. 

3. Add olive oil to a medium frying pan. On medium heat fry for 2 minutes on each side. 

4. Serve with mayonnaise, sweet chilli sauce or serve with cubed salmon for the little ones.
