Umbrian Torta al Testo/Umbrian Flatbread

Umbria is a region of central Italy, and its the only region having neither a coastline nor a border with other countries. Wiki says that Umbria is known for its landscapes, traditions, history, culinary delights, artistic legacy and influence on culture.Umbrian cuisine have its origins from its Etruscan roots and they are simple, relying very heavily on the seasonal ingredients that can be found easily in their own soil. Hence their cuisine is highly prepared with mushrooms, wild asparagus and many other fresh vegetables including the highly prized truffles that grow throughout the region.Bread varieties change from region to region across Italy, but also vary greatly across a specific region. Umbrian cuisine is about good flavor, freshness, and simplicity. It’s rich soil provides its residents an unlimited number of amazing seasonal ingredients which are simply prepared to highlight the true flavor of each dish.Umbria is birthplace to the ancient art of butchery, and home to the treasured black truffle. Hence Umbrian cuisine is unique to the region, and authentic to it’s origins.

Peinirli/Peynirli/Boat Shaped Greek Pizza

Greece, this European country is my recent favourite. Did i told you that we went to Greece for our summer vacation?. Trust me, its was a wonderful vacation and we had a fabulous time in Longos, a small village which is 2h30 minutes from Athens, the Greek capital. Greece is well known for their olives and you cant finish a meal without having olives. You can see olive trees everywhere, next to olives you can see oranges and lemons trees everywhere in Greece. You wont fail to cross an olive tree or an orange tree while going through the Greek streets. Greek cuisine is a well known Mediterranean cuisine. This cuisine is strongly influenced  by Ottoman cuisine hence this cuisine shared foods like Baklava, Tzatziki, gyro, moussakka, dolmades with other neighbouring countries. Most of their desserts includes nuts, honey and filo pastry sheets.However Greek cuisine is well known for their flavors, herbs like oregano, mint, dill, bay laurel are used often with loaded of garlic. Obviously Greek cuisine is more flavorful than the other Mediterranean cuisine. I have totally fell in love with this country and we are even looking for an opportunity to visit again as Greece is just 2h45 minutes from Paris by air.

Imeruli Kachapuri/Imeretian Kachapuri/Georgian Cheese Flatbread

Georgia is a Caucasus region of Eurasia which is located at the Crossroads of Western Asia and Eastern Europe. With Tbilisi and Kutaisi, the legislative captial, Georgian cuisine have its own cooking styles and delicious dishes created by Georgian people. Though Georgian cuisine is unique, its also have some influences from Causcasian, Eastern European and Middle Eastern cooking style. The three prominent regional cuisine of Georgia calls for Abkhaz, Adjar and Gurian cuisine. Abkhaz cuisine uses lot of spices and walnuts while Adjar cuisine is considered as diversified cuisine which is completely influenced by its nature and have dairy products as main ingredients. And Gurian cuisine calls for poultry meat, corn bread and loads of walnuts. While googling, i accidently crossed this Imeruli Khachapuri which belongs to the Imereti region in Georgia situated along the middle and upper regions of Rioni river.Khachapuri is one of the most popular, traditional and National Georgian dishes. It’s a gooey cheese-filled bread that looks a little like pizza.There are three different kinds of khachapuri. The standard one is the Imeruli khachapuri which cheese is stuffed inside. There is also the Megruli khachapuri, with cheese added on top and the Adjaruli khachapuri, which is made of puffy hot bread with cheese melted in the middle and topped with hunks of butter and a cracked egg.

No Cook Chocolate Mascarpone Cereal Parfait

You might have noticed that am running this week's blogging marathon with No Cook Desserts as theme. A breakfast parfait dish is quite easy to dish out to please some hungry tummies easily with some wholegrains flakes and fruits. However easy parfait desserts do exists which can be dish out with less efforts as well. Parfait is a type of dessert which have its origin in France. Parfait is made by boiling cream,egg,sugar and syrup to form custard like puree which is not served in glass as its a frozen dessert. But the American version includes some cereals, fruits, nuts, yogurt to make a dessert served in a tall glass.Coming to my today's post, this dessert calls for mascarpone cheese which works awesome to make no cook style of desserts, i have already tried couple of parfaits with this fabulous cream cheese.

Baked Tortilla Cone Pizza/Tacos Cone Pizza

You might have noticed that am running this week's blogging marathon with Make them as Pizza as theme. After two interesting pizza, am finishing this week's theme with an another kid's friendly cone pizza. Trust me this pizza will definitely become everyone's favourite at home, if you make this cute looking pizza at home for a dinner or lunch. My kids went crazy when i served this pizza for dinner with some salads. Initially when i picked this week's theme aka Make them as Pizza, my mind went immediately for pizza with dosas, chappathis, rotis etc. But some leftover storebought tortillas pulled me to finish them as this cone pizza. This pizza is definitely a easiest one to prepare even for your get together. Mini sized cone pizza works awesome and definitely a prefect crowd pleaser as well. You can dish out two cone pizzas with a tortilla, obviously you can stuff this pizza with any of your favourite toppings.

Whole Wheat Minced Soya Naanizza/Soya Kheema Naanizza

Whenever i make naans at home, i will definitely gather all the ingredients to dish out pizza with them. But somehow i have been postponding to post my home made naanizza in my space. Recently, after our Summer vacation, back home kids were missing our spicy foods. One week with non spicy Greek foods, our tastebuds started begging for some spicy Indian foods. Obviously for our dinner day before yesterday, i dished out some whole wheat naans with chicken curry. After having a tummy full satisfying meal, they were some leftover Naans which i freezed for later use. Yesterday after spending a half a day with my Schoolmate who came all the way to Paris from Chennai, i was completely exhausted. Felt super lazy to prepare our dinner, obviously those frozen Naan came to my rescue and turned them as some Naanizza which i simply topped with a soya kheema masala, some chopped onions, tomatoes and grated cheese.

Pizza Quesadillas/Fusion Pizzadillas

When Pizza and quesadillas meet together, obviously the final result will be Pizzadillas or Pizza Quesadillas. My kids are crazy fans of Pizzas, and nothing can beat the homemade pizzas na. However i plan myself to make pizza crust often at home with different grains in it, so that i can feed my kids easily pizza with healthy grains in it. And do you know that these homemade pizza crust base can be freezed easily which will be really handy to use whenever you feel like making a pizza party at home. Thaw the pizza crust and top them with your favourite toppings and your pizza is ready to bake. Trust me this works awesome for me. But in case if you dont have time to make your own dose of pizza crust, dont worry. Now you can dish out some delicious, cheesy, extremely addictive and dangerously tempting pizzas with some store bought tortillas.

Carrot Paneer Rice

If you dont have any ideas for some lunch box friendly dishes on your mind, dont get tensed. Just check my today's dish and am sure this simple but yet a healthy and delicious rice dish will definitely please your kid's tastebuds. I have seen rarely kids saying 'no ' to paneer, obviously my today's rice dish is one of the easiest dish you can prepare in less time than you can imagine. Honestly, my kids are ardent fan of carrot rice, if i feel bored or lazy to cook a meal, i will stick definitely with easy dishes. One among those easy dishes is Carrot rice. Just freshly grated carrots when spiced with usual spice powder,once sauteed and mixed with rice makes a quick carrot rice. If you add some cubed paneer to this simple rice, trust me this simple, quick carrot rice will get an another avatar and becomes a calcium rich rice dish. If you have leftover cooked rice and cubed paneer in your fridge, this rice gets ready within less than 10 minutes.

Eggless Multigrain Tomato Pesto & Cheese Rolls

If you want something easy and cheesy to pack in your kid's lunch box, you should definitely take a look to my today's post. Its quite an easy cheese rolls you can bake either with store bought bread dough or pizza dough or else with homemade bread dough. This time i opted for a multigrain mixture of flours as i was planning to bake a bread rolls with rye flour, spelt flour, oats,quinoa,pearl millet flour along with wheat flour. And this wholegrains as flour works out awesome to bake out this cheesy rolls. My kids enjoyed thoroughly this cheese rolls with simple cucumber salad for their lunch. Yes served along with a salad or cold soup for a summer lunch or picnic these cheese rolls makes an excellent lunch to finish without any guilt. As much as like always, i prepared my own tomato pesto which I have already posted here, but this time i prepared this vegan pesto with some fresh cherry tomatoes & sun dried tomatoes and this combination works awesome.

No Onion No Garlic Paneer Butter Masala

Indian curries have onions and garlic as the most wanted basic ingredients for flavouring them. But however many interesting masala do exists without garlic and onions. My today's post is kinda restaurant style of Paneer butter masala without any onions,garlic but with heavy cream in it. You wont miss the onions or neither the garlic in this dish. Since this is not made with onion or garlic, you can relish this dish during fastings or vrats. This dish is completely cooked in a rich tomato puree which makes an extremely delicious paneer loaded creamy tomato gravy which will definitely please your tastebuds as well as your eyes. This dish goes awesome with any sort of Indian flatbreads or pulao. Though this dish is very simple to prepare, even beginners can dish out this fingerlicking paneer butter masala with less efforts than comparing to the usual dish.

Patatesli Gozleme/Turkish Potato & Cheese Gozleme

Gozleme is a popular Turkish stuffed flatbread and its quite a comforting food whoever loves stuffed flatbreads. My today's post is potato and cheese loaded flatbread which is quite a filling meal for anyone. Gozleme comes from the Turkish world 'GOZ'' which is refers to the Little eyes or brown circles that form on the dough while its gets cooked. Am postng Turkish potato and cheese gozleme for this week's blogging marathon as am running with Stuffed flatbread from different countries. My kids love potato and cheese in anything,and this Gozleme is our recent favourite. Fugazzeta/Argentinian Pizza

Fugazzeta, is a Argentinian pizza with loads of onions and mozzarella on a thick crust of pizza dough. Originally Fugazza comes from Northern Italy but the Argentine went on adding large amount of cheese. Obviously no tomato sauce or toppings are needed other than onions. Sliced onions simply flavored with oregano and olive oil is added to top of the Fugazzeta hence this pizza sounds as much as like Italian style focaccia. Coming to this Fugazzeta, its a double crust version of fugazza, a popular Argentinian treat aka onion pizza. This same fugazzeta can be prepared with a layer of sauteed spinach and vegetables, obviously its called as Fugazzeta de verdura.

White Sauce PaneerPizza/Fusion Paneer Pizza

If you are bored of usual tomato sauce based pizza, then you have to give a try to this fantastic fusion Paneer pizza. Whoever think that pizza without tomato sauce is not a pizza then they should give a trial to this alluring white pizza. Basically white pizza is typically covered with ricotta and mozzarella cheese instead of tomato sauce, anyhow it might also be topped with garlic, vegetables, alfredo sauce or simple bechamel sauce. Though cheese are overloaded in this white pizza, you can also add some chicken chunks or paneer cubes to skip the addition of grated cheese. However my today's post is cheese overloaded fusion pizza prepared with homemade pizza dough, homemade white sauce, paneer cubes and chopped onions. Yes i went with homemade stuffs instead of grabbing store bought dough and sauce.

Mushroom & Spinach Lasagna

After two no pasta/noodle free Lasagna , i couldnt resist to prepare my kids favourite lasagna with lasagna pasta. Actually am running this week's blogging marathon with Lasagna for Veggie lover, obviously vegetarians will enjoy thoroughly this vegetarian version of lasagna. My today's post is loaded with mushroom and spinach. I used buttom mushrooms and fresh spinach for the filling with white sauce  and cheese. Easy to make, this lasagna makes an excellent meal as this ultimate dish is definitely a satisfying dish for anyone. Pasta Free & Gluten Free Potato Lasagna

Potatoes, mash them, fry them, make them as chips, or else drop them in gravies or curries, we can have it as much as can. Potatoes and chocolates are our family favourite, obviously when i picked Lasagna for veggie lovers as theme for this week's blogging marathon, i planned immediately a gluten free potato lasagna for this week's theme. Potato lovers will definitely go crazy if they see this ultimate pasta free potato lasagna. An excellent meal to enjoy for your lunch as well as for your dinner. Though potatoes are easy to cook with, this lasagna takes very less time as well than you can imagine. Coming to this potato lasagna, i went for white sauce aka bechamel sauce, ricotta cheese with Swiss cheese and parmesan cheese for making this ultimate dish.

Gluten Free Eggplant Lasagna with Minced Soya/Aubergine Lasagna

My today's post calls for an easy version of Eggplant Lasagna which is completely gluten free but not vegan as i cant imagine Lasagna without cheese. Am happy to say that i prepared this fantastic Eggplant Lasagna with an interesting filling with minced soya and tomato sauce. You may wonder why am talking about Lasagna, yes my theme for this week's blogging marathon is Lasagna for Veggie Lover. Obviously my today's post is definitely a no noodle lasagna and trust me this lasagna is very flavourful and a prefect dish to whip up if you are following a gluten free diet or a low carb diet. Mewa Burfi/Mixed Nuts Burfi/Meva Barfi

If you are bored of preparing badam halwa, kaju katli or else coconut burfi for the upcoming Diwali festival, check my today's post. Mewa burfi is prepared with a combination of different nuts and coconut flakes. Mewa means Mixed nuts in Hindi and not to get confused with Mawa or Khoya the popular dairy product used in making many delicious Indian sweets. I crossed this Ultimate Mewa burfi while googling for a different Diwali special sweets. And the best part of this burfi is you can use any sort of nuts you have on your hand. Ricotta cheese plays an important role to whisk up this sweet quickly. Obviously if you want to prepare this nuts burfi with unsweetened khoya, just go on. And trust me, this burfi is definitely an easy breezy sweet to prepare especially for festivals or for a special occasion.

Grilled Tofu 65/Vegan Grilled Tofu 65 in Stick

Tofu, this soya cheese is replacing very well paneer in most of my dishes at home. Recently i started purchasing my chinese sauces and noodles from a nearby retail shop which is just 5minutes walk from my place. Obviously they sold many varieties of tofus, from extra firm to smoky flavored tofu. And trust me, i have never seen this much varieties of tofus, however as usual i grabbed a packet of extra firm tofu to make some succulent dish with it. You can dish many fantastic vegan or vegetarian dishes out of this extremely nutritious soya cheese. They are excellent source of protein with many health benefits in it. Tofu can be found in bulk or individual packages. Tofu is also sold in sealed containers kept at room temperature, as they doesnt need to conserve in fridge until they are opened. Once opened, all tofus needs to be rinsed, covered with water and kept in a fridge. To keep the tofu fresh for up to one week, the water should be changed often. If kept in the original package, you can freeze tofu for up to five months.
