Date & Chocolate Chunks Tray Cake

We are having a week of fall season holidays here, obviously i have to plan everything for a week to bake or cook for my blog baby. Trust me, all my plans went as much as good and i have baked couple of cakes, cookies and breads during my stay at home. Needless to say,my family members were enjoying all the bakes i have baked out for their snacks to desserts. Nothing can beat the freshly baked homemade cakes & bakes rite. Usually i bake only during weekends, coz of my busy professional life. Rite now its fall season here, you might know how the day light will be. Once we enter the home, i dont feel like baking or cooking as the weather makes me lazy and tired. But a week of holidays is definitely worth and fruitful as a blogger. Kids enjoyed their mom's bakes without any fuss,we keep ourself away from the store bought cookies or breads since a week. One among those bakes is this tray cake, this cake calls for finely chopped dates, homemade dates syrup, roughly chopped chocolate chunks as main ingredients along with usual ingredients we usually goes for making a cake. This cake is butterless, sugarless but not eggless.

Addas/Sudanese Red Lentil Soup/Sudanese Addas

Soup, this dish have their own place in our daily meal once the weather starts too cold or rainy. We are in fall season and obviously the weather keeps on changing everyday drastically. Recently we had a super chilled morning with a super hot sunny evening. Yes you heard me rite, we dont even know how to dress ourselves. Obviously i couldnt keep my summer dresses away as Sun god is showing his head once a while. However the weather will get chilled progessively as we are in Autumn. Soups are definitely a satisfying and comforting meal to keep ourselves warm. I love dishing out soups as they are quick, nutritious, healthy and just prefect to please anyone's tastebuds quickly. And my today's post is definitely a fabulous soup to give a try without any fail. This gluten free, vegan Red lentils soup is a hearty and healthy soup to prepare at home without any hesitation as this soup calls for simple and easily available ingredients.

Channadal Khatta/Creamy Chattisghari Channa Dal /Khatte Channa Dal

Nothing can beat a bowl of comforting dal with some rice or rotis to finish our meal. Am a ardent fan of simple dal recipes and whenever i get a prefect dal recipe to cook with, i wont skip making the dish. A prefect satisfying meal must have definitely a dal based dish to please our tastebuds rite. And my space is loaded with many delightful protein rich dal dishes. However i have many to try and show case in my space. My today's post is an interesting dal from Chattisghar cuisine. Actually this dal dish goes for a facebook group event in which i have been a member since three months. Every month either we cook with Alphabets or Recipe swap, and vice versa. Since i like challenges, i couldnt stop myself to join this group. This month's challenge is Recipe Swap and i have been paired with Seema of Mildly Indian. While going through her space, this creamy Channa dal khatta caught my attention and immediately i tried at home to pair with Dhuska. Trust me, this dal works awesome with Jharkhand fried bread and we finished our lunch happily with these two delicious Regional foods.

Muttai Kola Urundai/Spicy Egg Balls

Today's dish is completely one of my trial which turned into some fabulous spicy balls. Actually i want to create a kola urundai aka spicy chettinad style balls with eggs since a while. And this week's blogging marathon theme pulled me to come up with this incredible spicy balls. I used boiled eggs to dish out this incredible spicy balls. If you dont have enough eggs to feed your family member, dont forget to give a try to this ultimate balls. With just 4 boiled eggs, you can definitely feed your family members quickly with this egg balls. Everyone at home enjoyed thoroughly these crispy beauties with hot chilly sauce and just loved it.

Carrot & Oats Kozhukattai/Steamed Carrot & Oats Dumplings

After a super spongy, fluffy light steamed cake, my today's post is an another healthy, fibre rich steamed dumplings aka Kozhukattais. Usually Kozhukattais are prepared with flours or semolina, but for a change, i tried my hands with rolled oats. Rolled oats works awesome for making this easy breezy steamed dumplings quickly than you can imagine. If you dont know what to cook for your breakfast or dinner, just prepare this steamed dumplings and serve them with a simple coconut chutney or sambar to finish your meal happily. Needless to say that this dumplings suits absolutely prefect for anyone as they gets digest easily.

Gluten Free Eggplant Lasagna with Minced Soya/Aubergine Lasagna

My today's post calls for an easy version of Eggplant Lasagna which is completely gluten free but not vegan as i cant imagine Lasagna without cheese. Am happy to say that i prepared this fantastic Eggplant Lasagna with an interesting filling with minced soya and tomato sauce. You may wonder why am talking about Lasagna, yes my theme for this week's blogging marathon is Lasagna for Veggie Lover. Obviously my today's post is definitely a no noodle lasagna and trust me this lasagna is very flavourful and a prefect dish to whip up if you are following a gluten free diet or a low carb diet. You dont even miss the noodles here and this gluten free eggplant lasagna will definitely please anyone's hungry tummy. A prefect dish to relish either for your dinner or for your lunch with your favourite meat or salad.

Ragi Flakes Chivda/Finger Millet Flakes Chivda

Chivda, this easy breezy crunchy snacks gets ready very much easily and ready to munch with less efforts.During my last trip to India , i got some packets of wheat flakes, ragi flakes from organic stores. Actually i bought those packets just to make chivdas back home. Both wheat and ragi flakes works wonder for making some interesting quick chivdas. I have prepared this chivda long back and this dish was sitting in my draft since a year. Finally i have a prefect theme to post this incredible chivda. Yes my theme for this week's blogging marathon is Recipes with Wholegrains, i have already posted two incredible dishes with both broken wheat and quinoa. To finish this theme, i couldnt stop myself to post this chivda which was sitting for a while in my draft. If you get this flakes, dont forget to dish out this chivda, as they are extremely healthy.

Broken wheat, an extremely interesting ingredient to cook with, you can dish out many beautiful and delicious Indian dishes out of this incredible diabetic friendly ingredient. This broken wheat aka Dalia have its own place in my pantry. I just love to cook with this broken wheat as they are extremely prefect to cook from breakfast to dessert. My today's broken wheat biriyani goes definitely for an easy version, with usual spices you can dish out this one pot meal quickly in pressure cooker. Cooking through pressure cooker makes our life easier, obviously if you are in hurry just go with pressure cooking. With handful of mixed vegetables this incredible, diabetic friendly briyani makes an excellent meal to serve along with your favourite side dish and raita.

Quinoa Puliyogare/Quinoa Pulihora/Tamarind Quinoa

You can dish out many ultimate dishes with Quinoa, this grain is very versatile and you can replace this grain very well where we use rice. You have so many ways to add this quinoa in our daily diet. Easy to cook, quinoa can be prepared very much well in our Indian cuisine with our spices. And my today's post proves it well. Last sunday, i was not in mood to prepare something special,actually i felt like having something spicy and tangy. Hence i couldnt stop myself to prepare this incredible fusion dish. Actually Pulihora/Puliyogare/Puliyodharai is usually prepared with rice and tamarind sauce aka pulikachal.I have already posted this tangy Pulikachal/Tamarind Rice paste here, since i had this paste in my fridge, i quickly prepared this ultimate dish easily with less efforts.

Rajma Masala Sundal/Red Kidney Beans Masala Sundal

Sundal is a kind of South Indian evening snacks made with Dry beans aka Legumes (not to mistake with the French word, in French 'legumes' means 'vegetables'). Sundal are made especially during Navarathiri festival, which calls for 9 days of celebrations. However we doesnt need any reason to dish out this protein rich snacks to feed our loved ones with less efforts. Actually sundal is prepared easily with cooked beans like chickpeas, black-eyed beans etc which is simply tempered with usual tempering spices and flavored with curry leaves. Though some sundal preparation calls for some exclusive spice powder in case if you want to prepare the sundal with a twist. My today's post in one among those sundal with a twist, since rajma aka red kidney beans doesnt tastes like other legumes, its better to toss it with a spice powder to make the sundal preparation more interesting.

Rajma Soya Keema/Vegan Rajma Soya Kheema/Minced Soya & Kidney Beans Curry

Rajma/Red kidney beans makes excellent dishes and my today's post is one among those fantastic dishes you can cook up easily with this nutritious beans. Soya Rajam Kheema aka Minced soya with Red kidney beans, trust me this curry makes an excellent side dish to relish with some rotis or else wrap it or simply use as stuff for making parathas. So many option to enjoy this nutritious, vegan keema. Usually i love to make kheema with soya nuggest as they are very much nutritious to enjoy without any guilt. Adding rajma to a usual soya keema makes this already delicious dish more healthy and nutritious at the same time. With all spice powders went in it, this vegan kheema makes an excellent accompaniment to relish even with some toasted bread slices.

Rajma Rasmisa/Red Kidney Beans In Onion-Tomato Masala

Rajma/Red Kidney Beans/Red Beans, are mostly used in Mexican cuisine, though many delicious Indian dishes prepared with this incredible beans do exists. I have been looking for something new to cook with this fantastic beans and i found this lipsmacking rajma curry at Chef Sanjeev Kapoor's Khanna Khazana. This recipe tempted me a lot to give a try with, obviously i gathered all the ingredients to dish out this fantastic bean. Trust me, this rasmisa tastes absolutely delicious and you doesnt need anything special to make this interesting dish. Served along with a simple pulao or rotis, am sure this masala makes an excellent pair to relish without any guilt. Prepared with simple spicy powders,grated onion and tomato puree, this rasmisa curry is one of the easiest dish to prepare without any fail.

Cheesy Black Bean Soup

Soups keep you warm when the climate is really down and chilled. Soups are our favourite dish and i have already shared varieties of soups. However i have couple of soups to dish and post in my space. One among those soups is this fantastic, healthy, nutritious, wholesome soup with black beans, vegetables and cheese. Adding black beans to a simple vegetable soup makes this soup more healthy and satisfying. A warm bowl of this soup with some bread slices as accompaniment will definitely makes a super filling dinner or meal.Since am posting different dishes with black beans, i couldnt stop myself posting this hearty soup which i dished out few days back for our dinner.

If you put yourself in a dilemma of dishing out sandwiches with bread, am sure your brain will think twice than ever. Its happened to me recently and i seriously want to come up with three different sandwiches without bread. You may wonder why sandwiches without bread, yes i have picked Sandwiches without bread as this week's blogging marathon's theme. Once i picked this theme, i was quite excited to dish out some interesting sandwich without running behind those bread slices. Trust me, i simply enjoyed this theme by preparing three different sandwiches with interesting ingredients in it. Adamant Creeper Rasam/Pirandai Rasam/Veldt Grape Indian Soup

I always want to make dishes out of Adamant creeper aka pirandai, its quite a tough task to find this healthy creeper here. Obviously i couldnt resist to dish out some dishes with this creeper during my last year trip to India. Actually this creeper have many amazing medicinal value and its grows easily everywhere with less efforts. Adamant creeper which is known as Pirandai in tamil helps a lot to treat indigestion, fractures, sprains, menstrual problems. Though this creeper have such medicinal values they have their own itchy nature, obviously if you are cooking with this pirandai, you need to smear your hands with bit sesame oil, this helps to prevent the itching. If this creepers are tender, you can just break them easily with your fingers. If they are bit aged, just take a peeler and peel them as we do for ridge gourd and chop them with a knife. Now your creepers are ready to cook. Though chutney with pirandai is quite famous everywhere in Tamil Nadu, my grandma makes excellent medicinal value rich rasam with it.

Ari Nellikai Urugai/Instant Gooseberry Pickle

Ari Nellikai are the small sized gooseberries, which is quite easily available in India. Though i get the big gooseberries in Indian groceriesin Paris, i had an immense chance to give a try to this pickle during my last trip to India. This gooseberry pickle is one of my maternal grandma's signature dish. She makes this pickle quite often whenever this gooseberries shows their head in market or else in her own backyard garden. One of the quickest pickle you can dish out with less efforts, yes no sun drying, no sauteing for hours. With usual ingredients and simple cooking process, your pickle is ready to relish with curd rice or else simply to serve along with rice.

Herbal Gravy/Mooligai Kuzhambu

My maternal grandma makes excellent gravies, with less efforts and simple ingredients. Most of her gravies have loads of medicinal values. Most of her dishes are prepared simply with home grown vegetables and herbs. My today's recipe is also one among her dish which she usually makes with couple of herbs aka medicinal value rich leaves. This gravy asks for betel leaves,curry leaves, mint leaves, coriander leaves,thulasi leaves and ajwain leaves to make this lipsmacking dish. Actually i prepared this gravy during my stay in India where these leaves are easily available there. This gravy makes a perfect pair for hot steaming rice with papads. Very simple to make and definitely healthy with loads of medicinal values. However this gravy stays prefect for more than a week if they are conserved properly.
