Murmura Chivda/Spiced Puffed Rice Chivda

Looking for a quick, easy breezy munchies for your sudden cravings or to have for mid-day hunger pangs, dont forget to check this incredibly delicious puffed rice chivda. With your favourite nuts and spices, you can dish out this chivda quickly with less efforts. Since this dish call for less oil, one can munch these murmura chivda with any sort of the beverages of their choice for an evening snacks or around 11 o'clock in the morning. Yes this chivda is a prefect munchies to enjoy if you want to have something light and spicy before your lunch. However puffed rice is very much used in Indian cuisine and puffed rice can be munch even without any spices. But i simply love this chivda as it will be bit spicy and nutty at the same.

Pan-Fried Herbed Butterbeans

Dont stick yourself with deep fried beauties or sugar loaded biscuits/cookies for your snacks, get some protein rich snack foods to keep yourself fit and healthy. My today's recipe is one of the simplest snack food you can prepare within few minutes with less efforts. Just by pan-frying in medium flame with less oil and herbs, you can finish preparing this delicious panfried herbed butter beans quickly than you can imagine. Though, i dont want to keep on repeating myself that my freezer will always have already soaked beans, obviously whenever i feel like munching something, i just need to open my freezer to cook my beans. Obviously i can prepare a chickpeas sundal or kidney beans sundal within few minutes. Its seriously handy to freeze soaked beans, and you can prepare many delicious protein rich dishes with those beans quickly than you can imagine.

Chestnut Chocolate Smoothie Bowl

Once the autumn starts here in Paris, you wont miss street vendors selling freshly roasted chestnuts which is quite common in every street corners. Freshly roasted chestnuts are our favourite street food obviously we never miss to get them. Then later i came to know how to roast and steam cook chestnuts at home which is quite similar to roasting/steam cooking peanuts but it will take more time to get roast/steam cook. Roasted chestnuts tastes fabulous while the weather is too nasty. When i picked Seasonal Special as theme for this week's blogging marathon, i seriously want to give a try to a different dish with chestnuts. Hence i want to give a trial with a smoothie bowl with steam cooked chestnuts and this smoothie came out extremely delicious. Trust me, we enjoyed thoroughly our smoothie bowl for our sunday brunch.

Halabessa/Halabisa/Egyptian Chickpeas Spicy Soup

Halabessa/Halabisa is a well known Egyptian Chickpeas soup which calls for chickpeas with some simple ingredients. This soup is served with lemon, mostly hot during winter as this soup is very warming,wholesome, nutritious, hearty and comforting while the weather is down. People call this soup as snack soup, since this soup is a savoury drink which is served in glass cup with a spoon and lemon wedge. Actually Egyptian drink this soup and enjoy eating the cooked chickpeas with the spoon given along with the soup. Actually every food stall in Egypt sells this mildly spicy Halabisa during winter as a street food and this soup is also quite popular in Gulf countries especially in Iraq but Iraqian version of this chickpeas soup is cooked without tomatoes. Yes Egyptian version calls for some tomato pieces and tomato paste which gives a pleasant colour to this simple soup.

September, a new academy year starts for us. So september is definitely a busy month with many new beginnings. Not only in our personnal life, even in blogging, every september we run a month of blogging marathon. Actually we marathoners run twice a year a month of blogging marathon during the month of April and September. We have been following this whole month of blogging marathon since 4 years. Am so happy to begin this Mega blogging marathon though i was bit busy with my new job. Coming to this month's blogging marathon, its going to be 26 days of blogging with sundays off.After many challenging themes,we are going to run this month's blogging marathon under 1 ingredient/1category for all 26days or else 5 ingredients /5categories through the month. We named this theme as Cooking carnival. Though i want to pick an ingredient for 26days, my busy schedule pulled me to pick 5 ingredients for 5weeks.

Vietnamese Carrot Pickle/Pickled Carrot

After a quick instant potato pickle, am taking you all to Vietnam for this week's blogging marathon theme.Yes the theme for this week's blogging marathon is Pickles and Preserves. Banh mi sandwich is one of the popular and well known Vietnamese sandwich is quite famous among the local peoples To give the crunchy texture to this sandwich, pickled carrots and daikon radishes are used while preparing the sandwich.I always want to give a try to this pickled vegetables at home as they are very simple to make. Finally i made them and i tried this Vietnamese pickled vegetables just with carrots. Either sliced as thin match box like sticks or else shredded, carrot is simply added to a vinegared water prepared along with salt and sugar. However if you want to have fun with carrots, you can just create any shapes, size and thickness. This vietnamese carrot pickle stays crunchy,its quite versatile as well.

French cuisine have numerous salads and salad have their important place in every get together or else in everyone's daily meal. From traditional salads to innovative salads, French chefs never failed to surprise us or make us awestruck by creating many beautiful catchy salads. Obviously when i was searching for a recipe from French cuisine for 'S' i didnt hesitate a second to make some chilled salad for our weekend lunch. My today's recipe is cooked beetroot served chilled as salad with some crushed walnuts and a creamy yogurt sauce spiced simply with some herbs and pepper, salt. Trust me the nuttiness of walnut and the crunchiness of cooked beets will definitely satisfy your tastebuds.

Ari Nellikai Urugai/Instant Gooseberry Pickle

Ari Nellikai are the small sized gooseberries, which is quite easily available in India. Though i get the big gooseberries in Indian groceriesin Paris, i had an immense chance to give a try to this pickle during my last trip to India. This gooseberry pickle is one of my maternal grandma's signature dish. She makes this pickle quite often whenever this gooseberries shows their head in market or else in her own backyard garden. One of the quickest pickle you can dish out with less efforts, yes no sun drying, no sauteing for hours. With usual ingredients and simple cooking process, your pickle is ready to relish with curd rice or else simply to serve along with rice.

Spicy Baked Cauliflower Florets

Nothing can be easy as like baking veggies in oven, i have been baking vegetables constantly whenever i feel like having healthy foods for our lunch or for our dinner. Especially cauliflower, this vegetable works awesome for baking or for oven roasting. I have already tried couple of baked dishes with this vegetable and one of my recent trial with this incredible vegetable is this simple baked guilt free baked and spiced cauliflower florets. Usually my family like cauliflower when deep fried either as crispy pakodas or bajjis, this time i quickly baked those florets with a spiced chilly paste just to serve along with our meal for lunch.

Irish Soda Bread Farl

In Ireland, soda bread are usually eaten as an accompaniment for main course or else for breakfast, obviously Irish soda bread goes for two colors, brown and white and they are called cake and farl. When making farls, the soda bread dough is rolled out into a rough circle and cut all the way through and in crosswise, into four pieces or farls as "farl" is a generic term for any triangular piece of baking or 4 parts, and usually baked in a heavy frying pan or on a griddle, on top of the stove rather than in the oven. It's a flatter bread than cake, and moister after the baking's finished. Each farl is split in half "the wide way" before eating. Its best when eaten hot once gets cooked in the griddle, but sometimes its allowed to cool and then grilled or fried to have along with other dishes.

Oven Dried Cherry Tomatoes - How to Store the Oven Dried Tomatoes

If you are buying your favourite sun dried tomatoes from stores, am sure after going through this post, you will definitely change your mind and make your own dose of those dried tomatoes at home. This method may be bit time consuming but trust me its really worth to give a try. Recently i tried my hands in making some oven dried tomatoes at home, they simply came out fantabulous. With less money, your oven dried tomatoes are ready to be used. Later i just prepared a small bottle this herbed oven dried cherry tomatoes with olive oil along with rosemary sprigs, needless to say am really happy with those oven dried tomatoes. You may think sun dried are better and cheaper when compared to oven drying, but if you live in a Country where you can see sun rarely its better to make oven dried ones na. Actually its summer here, but the Sun god is playing hide and seek with us, my yearly dose of vathals are still waiting to be prepared and dried  since Sunny days are very rare here now, its often raining or either chilled since few days.However if you are having hot sunny days,you can make your sun dried tomatoes easily too.

Ragi Paal Kozhukattai/Fingermillet Paal Kozhukattai - Version 2

Paal Kozhukattai, this is one among my favourite and now its my daughter's favourite, obviously i'll make this delectable dish often as they are very easy to prepare at home. I have already tried couple of versions with this healthy sweet dish. Paal kozhukattai can be prepared either with milk,coconut milk with sugar or else with jaggery syrup and coconut milk..This time i went for sugar and milk, this healthy ragi paal kozhukattais turned out super delicious.Instead of rolling the dough as small balls, i prepared them with murukku press. When the ragi dough pressed directly to the sweetened milk, gets cooks prefectly and makes this super delicious ragi paal kozhukattais.Sending to Pari's Only - Gluten Free Cooking.

Sweet & Sour Mango Chaat

Mango, this king of fruit is everyone's favourite at home. Its peak season in India and my mom came back from India with some green mangoes. I was very happy to get those green mangoes, since i have tried couple of delicious dishes with green mangoes, i seriously want to make completely different from the usual dishes with those super fresh mangoes. One of those mangoes my mom brought was between sweet and sour when i chopped it,immediately my mind went for both raita or a simple plate of mango chaat. Finally i ended it to this super attractive chaat,trust me this chaat was extremely delicious with a mixed taste between sweet, sour and bit spicy.

Paneer, this fantastic Indian cottage cheese is our family favourite. We love this calcium rich Indian cheese in anything as anything. Obviously my fridge or either my freezer will definitely have enough paneer cubes to cook up. If you have paneer in your fridge trust me you make a couple of delicious dishes within few minutes. Since this cottage cheese is quite versatile you can do anything with it. Sprouted Methi & Dal Powder/Mulaivita Vendhaya Paruppu Podi

My followers knows very well that i make quite often sprouts with beans and seeds at home itself. For sprouting we dont need any specific container. A small bottle container and a dark place can make some magic also you need patience for sprouting,coz sprouts may take more than two days while some may take three days to sprout. Recently i prepared few fenugreek sprouts at home, after making some instant pickles and spicy tamarind based gravies aka kaara kuzhambu finally i prepared this incredible dal powder using some leftover fenugreek sprouts and dals.

Actually this is the first time am trying a paruppu podi with sprouted fenugreek seeds,trust me this podi turned out extremely fabulous with a mild tolerable bitterness. Am having twice a week this podi mixed with rice topped with gingelly oil or ghee. Sprouted fenugreeks, we call in tamil as  mulaivita or mulaikattiya vendhayam(à®®ுளைவிட்ட à®µெந்தயம்) tastes less bitter when compared to the fenugreek seeds. Anyhow this bitter better seeds are seriously very healthy and definitely a diabetic friendly dal powder which helps to reduce the sugar level in blood by frequent intake.Today is the first thursday of the month and its time to post for Vegan Thursdays, an vegan event running twice a month and this healthy dal powder goes to this event too.

Dry Ginger & Dry Amla Powder

Actually dunno whether this post need an introduction, all of us know the medicinal value of dry ginger and also needless to say how healthy amlas are. Seriously these both dry ginger and dry amla makes an incredible home remedy for cough and cold. I simply prepare a drink with this spice powder whenever i was suffering from both sore throat and cough.Trust me with frequent intaking of this concoction will helps you very much and they works wonder anytime of the day. Simply add a teaspoon of this powder in a boiling water, bring it to boil, strain the water and drink with palm sugar, and see how wonderfully they works while you are suffering from the cough and cold.

One of my recent favourite is this dry amla, my mom got them during her last trip to India from an organic shop.No problem, if you dont get dry amla pieces and dry ginger, you can make this drink with fresh ginger and fresh amla pieces, just crush both and bring them to boil with crushed black peppercorns and coriander seeds, your concoction is ready to drink.Sending this home remedy to my event  Healthy Diet - Fat Free Recipes guest host by Dhanish and to WTML guest hosted by Asiya, event by Gayathri.

Channadal Sweet Paratha

I was searching something sweet also at the same time something healthy for our evening snacks few days back, while going through my fridge i saw a cup of channadal halwa and finally i prepared this excellent sweet parathas. With a simple wheat chappathi dough, i prepared quickly this sweet paratha and this parathas tastes absolutely fabulous to enjoy with a mug of spiced black tea.

These parathas turned out extremely light,filling also at the same time an excellent tea time snack, this sweet paratha may sounds exactly like our famous puran poli, but the dough usually we make puran polis goes for all purpose flour aka maida, i completely skipped maida here and went for whole wheat flour.Since i cooked this parathas in a non stick pan, these parathas are completely oil free, in case if you want to drizzle some oil, you can definitely go for it. Watever,we just loved this delicious channa dal halwa stuffed sweet parathas for our evening snacks and we just loved it.Sending to my own event Cooking with Seeds-Dals.



2cups Wheat flour
Warm water (for kneading)
Salt

Take the wheat flour,salt in a large bowl, add the warm water slowly and knead everything as a soft dough and keep side for an hour.

Make 6-7small balls from the channa dal halwa and keep aside.

Also make 6-7 medium sized balls from the wheat dough.

Flatten the wheat balls as medium sized circles,place the small ball of channadal halwa inside the circle and close the edges of the dough completely.

Dough with some flour and roll it gentlu as medium sized parathas.

Heat a non stick pan in medium flame,once the pan is hot,drop gently the already prepared parathas and cook both sides until they get well cooked on both sides.

Enjoy with a cup of tea.

Steamed Zero Oil Mixed Dals Masala Vadas

My third post for this week's blogging marathon with zero oil cooking as theme is these healthy,protein packed steamed mixed dals masala vadas. Eventhough i have posted already baked and deep fried crispy masala vadas, these steamed vadas was my recent favourite, eventhough none at home enjoyed it. These masala vadas served with a spicy chutney or a simple chilly sauce tastes simply fabulous. Again this vadas are oil free and dont even have a single drop of oil.

I used parchment paper while steam cooking these vadas as they tends to stick to the vessel.Seriously parchement paper helped me a lot obviously i didnt even greased my idly plates i used for steaming these vadas.If you have any leftover of these steamed vadas, you can even serve them with a spiced buttermilk as dahi vadas or you can add them very well in spiced gravies like kuzhambu,rasam or in kurmas.Check out the other bloggers running this 23rd edition of blogging marathon here.Sending these vadas to my own event CWS-Channadal and to 60days of Christmas hosted by Priya and Divya.




2cups Mixed dals (channadal,masoordal,toordal and soaked for 2hours)
1no Onion (big &chopped)
2nos Green chillies (chopped)
1tsp Ginger (chopped)
1/2tsp Fennel seeds (crushed)
Few Curry leaves
 Few Coriander leaves (chopped)
Salt
Oil for greasing

Drain the excess of the water from the dals and grind the dals coarsely without adding water, if its too hard to grind just springle few drops of water.

Now add the chopped onions, chopped green chillies, ginger pieces, chopped curry leaves, coriander leaves, crushed fennel seeds with enough salt to the grounded batter and mix everything well.

Make small balls from the vada batter and flatten them.

Arrange the flattened vadas over the idly plates lined with parchement paper.

Steam cook them for 10-15minutes in an idly cooker and enjoy warm with ketchup or chutneys.

Zero Oil Baked Potato Chips

Hardly peoples say no to potato chips, if you want to give a try to zero oil,guilt free potato chips this is for you. Yep even am not sure about making these chips until i choosed the theme zero oil cooking for this week's blogging marathon. So for the next two days i'll be posting dishes with zero oil cooking.When i choosed zero oil cooking as theme, i know i'll be making potato chips but not through microwave oven as i have already tried them and obviously i wanted them as baked ones. Until i saw the final result of these crispy and guilt free potato chips i wasnt sure of this baked version.

For my surprise they turned out simply awesome, if you are searching for prefect chips as like deep fried ones, sorry they dont tasted as though , but i wasnt disappointed of this zero oil baked potato chips. 2nos Potatoes (medium sized)
Salt
Dry parsley leaves

Peel and slice the potatoes as thin chips with a mandolin.

Preheat the oven to 175F, line a baking sheet and arrange a single layer of sliced  potatoes, sprinkle the salt and herb as per need, bake for an hour until the chips turns super crispy..

Enjoy with a cup of tea..

Low Fat Soya Aloo Kofta

For my third day of blogging marathon, am posting here a low fat version of kofta, prepared with soyachunks and potatoes.Usually koftas are fried either by deepfrying or shallowfrying, being a health conscious person i always goes for baked ones. Since a long,i want to give a try to this low fat version after going through some of my blogger's space.Finally i decided to prepare my koftas through appam pan with few drops of oil and am very satisfied with the final result.

Seriously these koftas turned out absolutely prefect with a crispy outer. Everyone at home just loved it simply with ketchup. With less oil,this koftas are definitely healthier than the deep fried ones,if you dont like baking this version will definitely helps you a lot. 1cup Soyachunks (cooked & grounded as small pieces)
2nos Potatoes (cooked & mashed)
1no Onion (chopped finely)
2nos Green chillies (chopped)
1/2cup Roasted gram flour/pottukadala maavu
Salt
1tsp Garam masala powder
Few curryleaves
Oil

Take the grounded soyachunks,mashed potatoes,chopped chillies,chopped onions,roasted gramflour,salt,garam masala powder and curry leaves together in a bowl.

Mix well and make small balls with this mixture.

Heat the appam pan,drop few drops of oil.

Once the oil is hot,drop gently the already prepared balls to the warm oil,put the flame in medium and cook on both sides until the crust turns brown.

Serve hot with ketchup.
