Dal Maharani/Queens of Lentils Gravy/Maharani Dal

Dal Maharani which is also known popularly as Queens of Lentils gravy have its origins from Punjab. This dish is a nutritious and very protein rich gravy which calls for Black urad dal, channa dal and Kidney beans. These three dals are cooked and enriched with couple of spice powders and fresh cream hence this dal have a very rich taste.However if you are looking for less rich and no cream gravy, you can replace the cream used in this dish with milk, yogurt of else with no dairy products. This aromatic dish can be served very much with any sort of pulaos, rotis or else simply with bread slices. Yes you have numerous choice to enjoy this rich gravy. However i served this gravy with coconut pulao which turned out our lunch more healthy and tasty as well. Obviously we had a tummy full meal and everyone at home enjoyed this nutritious dish.

Warqi Paratha/Lucknowi Warqi Paratha

Indian cuisine shares varieties of parathas, these Indian flatbreads have their own place in many thalis or in everyone's meals. Parathas are the most popular unleavened breads in India. And parathas are prepared with whole wheat dough.This dough when rolled out either thick, thin or stuffed, which is later cooked in hot tawa makes this parathas. Parathas are eaten for breakfast, lunch and dinner depending upon how they are served with a side dish or simply with spiced curd. You might have noticed that am running a month of blogging marathon with A-Z International flatbreads. And my post for today's blogging marathon goes for our own Indian flatbread. Since today's flatbreads calls for the alphabetic letter 'W', i grabbed an Awadhi flatbread aka Warqi Paratha. Awadhi cuisine is a cuisine of Lucknow city and this city is known of its Nawabi foods. Awadhi cuisine is quite a rich cuisine and this cuisine involves many rich ingredients like paneer, malai, mutton and spices like cardamom and saffron in most of their dishes. Awadhi spread consists of elaborated dishes like kebabs, kormas, biryanis, kulchas, sheermal,zarda, roomali rotis and warqi parathas.

Taftan Naan/Taftoon Bread/Pakistani Flatbread

Pakistan is Islamic Republic country in South Asia. Its one of most populous country with Islamabad as capital. Pakistani cuisine is a blend of various regional cooking traditions of India, Central Asia. Pakistani cuisine is quite flavoursome rich cuisine with western part of the country is strongly influenced by Persian and Central Asian style while the eastern part is more similar to Northern Indian cooking. Located between Afghanistan, India and below China, Pakistan have a rich history with wonderful food and culture. The unique thing about Pakistani food is its changes from season to season. People of Pakistan are fond of eating specific types of foods depending upon the weather and season.Meat plays an important role in Pakistani Cuisine, the National dish is Chicken Biriyani. However lentils,meat, vegetables,flour and wheat products are abundantly used in this cuisine. Coming to my today's flatbread, its a flatbread which is quite common in Persion, Pakistani and Indian cuisine especially in Uttar Pradesh. Taftan Naan is a spongy flatbread which is prepared with simple ingredients available in our pantry.

Channadal Khatta/Creamy Chattisghari Channa Dal /Khatte Channa Dal

Nothing can beat a bowl of comforting dal with some rice or rotis to finish our meal. Am a ardent fan of simple dal recipes and whenever i get a prefect dal recipe to cook with, i wont skip making the dish. A prefect satisfying meal must have definitely a dal based dish to please our tastebuds rite. And my space is loaded with many delightful protein rich dal dishes. However i have many to try and show case in my space. My today's post is an interesting dal from Chattisghar cuisine. Actually this dal dish goes for a facebook group event in which i have been a member since three months. Every month either we cook with Alphabets or Recipe swap, and vice versa. Since i like challenges, i couldnt stop myself to join this group. This month's challenge is Recipe Swap and i have been paired with Seema of Mildly Indian. While going through her space, this creamy Channa dal khatta caught my attention and immediately i tried at home to pair with Dhuska. Trust me, this dal works awesome with Jharkhand fried bread and we finished our lunch happily with these two delicious Regional foods.

Ring Shaped Vegetable Samosas

Samosas, these deep fried beauties are our family favourite and none will say 'no' to these crispy beauties. Am running this week's blogging marathon with A dish with different shape as theme, hence i have been posting different shaped dishes for the past two days. Today is the final post for this theme, hence i opted to our family favourite snacks aka Samosas. Samosas are popular Indian street foods and a prefect evening snacks as well. Usually samosas are shaped as triangles however the usual samosa dough can be rolled as logs and they are called as rolls. Since my theme for this week is a dish with different shape i decided to go with an interesting shaped samosas. And here comes the ring shaped samosas which call for usual samosa dough and a delicious vegetable stuffing.

Vegan Black-eyed Peas Cumin Rice/Jeera Lobia Chawal

Jeera rice is a well known Indian dish prepared with cumin seeds and rice. Its quite a popular and well known dish in North Indian cuisine and in some part of Pakistan this dish is an everyday rice dish for many. Quite an easy one pot meal to prepare with less efforts. Usually served along with rajma, jeera rice makes a prefect meal to enjoy without any fuss. Cumin seeds when fried in oil, brings an extreme flavor to this simple rice dish. To give a twist i couldnt stop myself to add some already cooked black-eyed peas to this flavourful rice. Yes adding lobia aka black-eyed peas to this rice turned this aromatic dish more healthy and rich in protein. I dished out this cumin rice for our weekend lunch and served with chicken kurma and liver masala. Trust me we had a fabulous sunday special lunch.

Nariyal Khoya Laddoo/ Dessicated Coconut & Khoya Sweet Balls

If you are looking for an extremely easy sweets to dish out for some special occasions or else for a festival, dont forget to check this incredible Nariyal Khoya Laddoo. With just easily available ingredients and less than 5 ingredients you can roll out these incredibly delicious sweet balls in an ease. I carried unsweetened Khoya all the way from India and i have freezed them as small portions for further use. And i have been cooking with those frozen khoya portions for a while, trust me even after few months they are still prefect to dish some ultimate sweets or dishes out of them. You may wonder why i have carried those unsweetened khoya all the way from India, all because of their excellent quality. I have a friend who have her own dairy farm and she got a big packet of unsweetened khoya specially for me, how can i refuse her kind gesture. Obviously i brought them to Paris and those milk solids are ultimate to cook with.

Makhana Goond Ka Laddoos/Puffed Lotus Seeds & Edible Gum Laddoos

Phool Makhana aka puffed lotus seeds, its looks like popcorn is a good source of protein, carbohydrates, fibre, magnesium, potassium, iron and zinc. High in fibre and low in calories, its enables weight loss. Makhana seeds can be eaten raw, roasted  or ground. The puffed seeds are also used in some Indian sweets liks kheer, puddings and dry roasted snacks. Makhana Phool is also known as foxnut, makhana or gorgon plant. Basically phool makhana belongs to a family called ‘lilly’. Lillly is a flowering plant, that produces starchy white seeds and those seeds are purely edible. This plant is generally cultivated in low land areas of Indian, china and Japan.These countries have been cultivating this plant since many years to get the seeds. This plant is very well ready in its locations with dry and hot summers and even in cold winters. These seeds can be eaten raw, boiled or cooked in Indian cuisine.Seeds are collected in late summers and before autumn. These seeds are commonly used as fried or roasted, they get popped up like popcorn. Potatoes are our family favourite vegetable, we can survive for many days with anything cooked with potatoes. Obviously potatoes have their own place in my vegetable basket. My today's post is a well known curry dish which is quite popular in North India especially in the state of Uttar pradesh. Its a breakfast dish served along with puffed Indian fried breads aka pooris. And this dish is one of easiest side dish you can prepare with less efforts. Since its No Onion No garlic recipe, this dish gets ready easily for a quick weekend dinner or a simple weekday's breakfast. No Onion No Garlic Paneer Butter Masala

Indian curries have onions and garlic as the most wanted basic ingredients for flavouring them. But however many interesting masala do exists without garlic and onions. My today's post is kinda restaurant style of Paneer butter masala without any onions,garlic but with heavy cream in it. You wont miss the onions or neither the garlic in this dish. Since this is not made with onion or garlic, you can relish this dish during fastings or vrats. This dish is completely cooked in a rich tomato puree which makes an extremely delicious paneer loaded creamy tomato gravy which will definitely please your tastebuds as well as your eyes. This dish goes awesome with any sort of Indian flatbreads or pulao. Besan Mawa Laddoo/Gramflour Khoya Laddus

Besan ladoo is a very much popular North Indian sweet which can be made easily with less efforts. These laddoos are quick to prepare with simple ingredients, however my today's post is a dangerously addictive besan mawa laddoo aka gramflour khoya balls. Traditional besan laddoo asks for loads of ghee, however using khoya, the popular milk solids helps a lot to add small amount of ghee than the usual quantity. Store bought or homemade milk solids works prefect for making this fabulous sweets. If you love besan laddoo, trust me you will definitely fell in love with this beautiful sweet.

Mewa Burfi/Mixed Nuts Burfi/Meva Barfi

If you are bored of preparing badam halwa, kaju katli or else coconut burfi for the upcoming Diwali festival, check my today's post. Mewa burfi is prepared with a combination of different nuts and coconut flakes. Mewa means Mixed nuts in Hindi and not to get confused with Mawa or Khoya the popular dairy product used in making many delicious Indian sweets. I crossed this Ultimate Mewa burfi while googling for a different Diwali special sweets. And the best part of this burfi is you can use any sort of nuts you have on your hand. Ricotta cheese plays an important role to whisk up this sweet quickly. Obviously if you want to prepare this nuts burfi with unsweetened khoya, just go on. And trust me, this burfi is definitely an easy breezy sweet to prepare especially for festivals or for a special occasion.

Murgh Kalimirch/Black Pepper Chicken

Murgh Kali Mirch is also known as Kali Mirch Ka Murgh, which means Black pepper chicken. This chicken dish is one of the most popular and flavourful side dish which you can have with anything. Serve this fingerlicking goodness chicken curry with some flaky parathas or else as side to serve along with simple pulao or fried rice, you can enjoy this lipsmacking chicken without any guilt. Butter Beans Jeera Pulao/Butter Beans Cumin Pilaf

Jeera Pulao, is nothing but a flavourful, cumin flavoured rice. This rice dish is completely an easy breezy dish to prepare with simple cooking process. If you dont want to spend more time in your kitchen and you need absolutely something flavourful, then you should definitely make yourself some Jeera Pulao aka Cumin Pilaf/Rice. Though this rice dish is very simple to make, when served along with some exotic dal, fingerlicking paneer gravies, or else with lipsmacking non vegetarian curries, this rice tastes absolutely fabulous. Yes any sort of gravies or curries goes prefect as side dish to serve along with Jeera Pulao. Jeera Pulao is my all time favourite as this dish replace very well Briyanis or fried rice if you are planning something special for an occasion. I make this rice often and serve along with non vegetarian curries if its Sunday special cooking. But my today's Jeera pulao is a protein rich one. Yes you read it rite, i have prepared a protein rich Jeera pulao just by adding some cooked butter beans.

Moth Beans Khichdi/Matki Khichuri

Moth Beans is known as Matki/Dew beans,these beans are used very much in Indian cuisine. Usually used in preparing many nutritious dishes, this moth beans are extremely nutritious and protein rich. Mostly used in making Misal Pav, Usal, this moth beans works awesome to prepare some fantastic dishes as well. Moth beans have their native from Indian and Pakistan. Moth beans plant grows wonderfully in dry sandy soil, hence these plants are found abundantly in Rajasthan and its grown for both human consumption and fooder.  This beans can be cooked and eaten as a vegetable and can also be processed as dals to preserve them for a long time. These beans can be prepared in sprouts and also be cooked as any other dal or beans.

Thor/Meetha Saata/Deepfried Sweet Pastries

This week's posts are going to be Bookmarked recipes. My bookmark list is overflowing, seriously i want cook or bake all those incredible dishes one by one to finish my list. But am sure its definitely a hard task to finish and close the list, however i dished out three of those bookmarked recipes as am running this week's blogging marathon with 'Bookmarked Recipes' as theme. I have bookmarked this delicious Thor from Jagruti's Space long back, to be honest a year back. I have been looking for a chance to dish out this incredible sweet and finally i prepared them at home. Thor ressembles almost between South Indian Badusha and North Indian Balushahi but with a simple preparation method.

Thandai /Holi Special Thandai

Wiki says that Thandai, or sardai, is an Indian cold drink prepared with a mixture of almonds, fennel seeds, watermelon seeds, rose petals, pepper, vetiver seeds, cardamom, saffron, milk and sugar. It is native to India and is often associated with the Maha Shivaratri and Holi festival. The consumer of this Thandai is mostly from Rajasthan and Northern India. Thandai is the most known drink prepared especially during Holi festival. Holi is a festival of colours and this Hindu festival is celebrated to mark the beginning of Spring which will be celebrated on Monday 13 2017. It is celebrated each year around the time of the Vernal Eqinox, its typically celebrated in March but sometimes as early as February.

Tawa Machli Amritsari/Tawa Fried Amristari Fish

You might have noticed i have been posting Tawa friendly dishes for the past two days, today's recipe is definitely a delicious treat for Seafood lovers. Though am a great fan of fish fries, its been a long i prepared fish fries. However my today's recipe is quite a different dish from the usual fish fries. Amritsari style fried fish is an excellent starter when served for a get together or in a party. When i googled i saw varieties of Amritsari fried fish which calls for deep frying, but today's version goes for tawa frying. Tawa, this pan works awesome for frying fishes, hence i went with this tawa fried Amritsari fish. While watching a TV show, i got hooked to this delicious starter and i bookmarked this dish immediately. Finally i got a chance few days back to dish out this super delicious Punjabi style tawa fried fish for our Sunday lunch.

Tawa Vegetable Fried Rice/Desi Fried Rice

Tawa, this pan is a must in Indian cuisine, most of the Indian dishes are cooked in it, hence this utensil have their important place in every Indian's home. You may wonder why am talking about this pan, i have a reason for it and am running this week's blogging marathon with an interesting theme. My theme is Make in Tawa, obviously the three dishes for this week's marathon is going to be Tawa friendly dishes. For the first day of this week's theme, i couldnt resist to post a delicious and lunch box friendly rice dish with couple of vegetables. Very simple to make this tawa fried rice is definitely an easy breezy rice dish to give a try if you dont have enough time to cook an elaborate meal to pack in your kid's lunch box. If you have cooked rice in your fridge, then this rice gets ready very much quick than you imagine.
