Eggless Chocolate Chip Cookies–Eggless Cookies

Chocolate chip cookies are one of the most favorite and also popular variety of cookie. What is the difference between a biscuit and a cookie? You ask this question and you get different answers from different people. To me, cookie is more softer and chewier but a biscuit (that we get in India) is more harder and crispier. My daughter loves to read Dora stories and one of the stories have Dora's  mom making her Chocolate Chip Cookies and sending it with Dora when she goes to meet a friend. Now my daughter wanted me to make the chocolate chip cookie. So that was when I made my first try on these delicious, mouth melting and soft chewy cookies. I picked up this recipe and did make a few changes. My daughter was very happy with the cookies, so I have made this a few times now and it goes off in minutes before I could take as many pictures as I want!!!

Applesauce Breakfast Bread

Applesauce Breakfast Bread is a great and sweet bread that is perfect for a snack or for breakfast. I did not add any nuts, but will add next time. It was very very moist and sweetness was just correct. Served with honey was a pleasure to enjoy. I have used flax seed for egg substitute

Veg Hakka Noodles

A very delicious and spicy noodles. Noodles and fried rice and so dear to kids and teens. They are also very popular among adults and Indo Chinese food is the next popular food on the menu after the Indian food in restaurants. Before pizza and burgers came to fame in India, it was the Chinese food that became part of the restaurant menu.  I do not know if in China there is anything like this, but in India, Indo Chinese noodles, rice are very popular. Adjust the spice according to taste.

Granola Bar - v2

Granola is a breakfast food and snack food consisting of various nuts, dried fruits, some sweetener and rolled oats. I have never heard of Granola in India or it is known by some other name. First time I heard of it was when my colleagues in the US used it for Lunch.. Looked like big bar and all that they would do is unwrap it and eat it with some milk or juice and call it done… Will look so cool.. And then I went to the shops to search for it and there were too many choices but hey they were also expensive.. I was watching my favorite Alton Brown show (and his Book) and saw him do this and could not delay doing it… I have tried this a few times and all of them were so delicious and so healthy

Granola Bar

Granola Bar is a great, easy and quick snack which is also healthy… Too many good stuff in one.. This quantity would yield 10 to 12 bars. I chose this recipe for BM #25 under Baking with whole grain, the choice of grain today is Puffed Rice. I got this recipe from here.

Eggless Drømmekage fra Brovst / Eggless Danish Dream Cake

A cake with a difference is the first opinion I had when I saw this cake announced by Gayathri for this month's Eggless Baking Group Challenge. This was suggested by Meena. It is not easy to substitute recipes that have 4 eggs, but I got ideas from Archana. The cake needs to be done in steps and finally an assemble needs to be done. Do not forget to make the topping as the first step as it is very important to add it immediately once the cake is baked. You need to use a 9 inch square pan for this recipe. The original recipe is from here and followed it exactly except for substituting the eggs. This cake is from the Brovst region of Denmark.
