Eggless Oats Chocolate Biscottis:

For this month's HBC, the choice was to do Biscotti.. I have baked Biscotti twice before and loved it both times.Eggless Pistachio Tutti Frutti and Orange Biscotti and Pistachio Cardamom Biscotti are the other two... This one is little different with chocolate in it and has a great deep dark chocolate flavor.. A great thing about biscotti is its crunch and its shelf life.. Love this with coffee or juice as an evening snack.. So yummy!!

Oats Sweet Kozhukattai

Oats Kozhukkatai is a fusion variation I tried for Vinayaka Chathurthi.. I combined the very western oats into the very traditional and authentic kozhukkattai.. It was delicious... Kozhukkattai is a traditional sweet prepared during Vinayaka Chathurthi. Vinayaka Chathurthi is celebrated on the birthday of Lord Ganesha. You can click here to see the other forms of kozhukattai. Ganesh Chathurthi Celebrations and Recipes

Today is Ganesh Chathurthi which is one of the most popular festivals in India.. It is celebrated in a lot of places and in many different ways.. Some other names of this great festivals are Vinayaka Chathurthi / Pillayar Chathurthi.. Ganesh Chathurthi is celebrated as the birthday (rebirth) for Lord Ganesha.

From wiki – “It is believed that Lord Ganesh bestows his presence on earth for all his devotees during this festival. It is the day Shiva declared his son Ganesha as superior to all the gods, barring Vishnu, Lakshmi, Shiva and Parvati. Ganesha is widely worshipped as the god of wisdom, prosperity and good fortune and traditionally invoked at the beginning of any new venture or at the start of travel. The festival, also known as Ganeshutsav ("festival of Ganesha") is observed in the Hindu calendar month of Bhaadrapada, starting on the shukla chaturthi (fourth day of the waxing moon period). The date usually falls between 19 August and 20 September. While celebrated all over India, it is most elaborate in Maharashtra, Gujarat, TamilNadu, Goa, Andhra Pradesh, Karnataka, Odisha and Chhattisgarh. Outside India, it is celebrated widely in Nepal and by Hindus in the United States, Canada, Mauritius,[1] Singapore, Malaysia, Thailand, Cambodia, Burma, Fiji, Trinidad & Tobago, and Guyana
We celebrate Ganesh Chathurthi with pooja, arati and nivedhanam.. We try to incorporate all the favorite items of Lord Ganesha, much similar to what we do on our kid's birthday. Try to bring all the kid likes.. So we offer some delicious nivedhanam, offer arugam pul, offer erukam poo garland, coconut, banana.. etc

We buy a Lord Ganesha statue made with clay, decorate it, put erukam poo garland, do prayers with many flowers with the main one being arugam pul. After the festival, the statue is ready for Visarjan in 1,3,5,7 or 11 days.
Lord Ganesha is elephant headed and there is a very nice epic behind the same.. It is believed that Goddess Parvati created a statue with sandalwood and gave life to the statue and made it to a child. She made the child as a guard while she went to take bath. Lord Shiva (husband of Goddess Parvati) came at that time and the child did not know him and did not allow him to enter. Lord Shiva got angry and sent his boodhaganam (army men I guess!!) to defeat the child. But the child who was created by the goddess herself was very powerful enough to defeat the army with very little effort.. Then the devas and Lord Indra himself attacked the child but they too did not stand a chance. Then finally Lord Shiva beheaded the child. This enraged Parvati and she revealed her true self as Adi Shakti (supreme power) and she vowed to destroy the entire universe where her son was killed and will create another one.. The gods prostrated before her and Lord shiva promised to give life to the child. There was a hunt for the head and an elephant’s head was attached to the child and he got his life back. Lord Shiva named the child Ganesha (Gana Isha – lord of the Ganas). Lord Shiva also declared that all auspicious occasions and prayers will begin with the worship of Lord Ganesha..

Betel Oats Manchurian

Dishes with an interesting name are sure to catch your eye and you want to read about it. Same happened with me when I saw this dish here and it was not just interesting, but also tempting and very eye appealing too. Loved the thought of combining the very Indian Betel to the very Western Oats in a Chinese dish which is a Manchurian... So I can call this Indo-Western-Chinese. So what comes after A??? B .. SO this is my second dish for the month long A-Z marathon. This will be for B - International / Fusion group..

Strawberry Oats Milkshake (no sugar added)

Strawberry Oats Milkshake is a quick and healthy drink. It can be made in less than 5 minutes, but tastes better chilled, so refrigerate for at least an hour before serving. This will serve 3 – 4. Just before serving give it a good mix. Love this for breakfast and makes a great start to the day!! I am choosing this delicious milk shake for the Potluck Party and Kid's delight - Summer Special

Oats Wheat Rava Idli / Oats Cracked Wheat Idli

Oats Wheat Rava Idli is a quick and easy breakfast or tiffin item. It tastes best when served hot and best accompanied by Sambar, coconut chutney or tomato pickle. This resembles and also tastes like rava idli, but has a lot of goodness attached. A guilt free food. I got this recipe from here.

Granola Bar - v2

Granola is a breakfast food and snack food consisting of various nuts, dried fruits, some sweetener and rolled oats. I have never heard of Granola in India or it is known by some other name. First time I heard of it was when my colleagues in the US used it for Lunch.. Looked like big bar and all that they would do is unwrap it and eat it with some milk or juice and call it done… Will look so cool.. And then I went to the shops to search for it and there were too many choices but hey they were also expensive.. I was watching my favorite Alton Brown show (and his Book) and saw him do this and could not delay doing it… I have tried this a few times and all of them were so delicious and so healthy

Granola Bar

Granola Bar is a great, easy and quick snack which is also healthy… Too many good stuff in one.. This quantity would yield 10 to 12 bars. I chose this recipe for BM #25 under Baking with whole grain, the choice of grain today is Puffed Rice. I got this recipe from here.

Eggless Oats Almonds Cookies

As the name says this is a cookie made with oats and almonds. All the ingredients in this recipe are unprocessed and are guilt free. No white flour, no white sugar and not much fat, but this cookie is soooo tasty. I got this recipe from here. I chose this recipe for BM #25 under Baking with whole grain, the choice of grain today is Oats.

Multigrain Bread

What an amazing tasting bread that screams – “I am healthier”. This Multigrain bread as the name says has a lot of grains added to it. You could individually go and select each of the whole grains, but I chose an easier path, which is use the Bob Red Mill’s 6 grain cereal (details are below). I got this recipe from Americas Test Kitchen show and this is a super keeper!!!.. This is a much healthier version of regular bread. This recipe makes two 9 by 5 inch loaves. Don't confuse 6-grain hot cereal mix with boxed, cold breakfast cereals that may also be labeled "6-grain." I have used the branded 6-grain mixes that are Bob's Red Mill and Arrowhead Mills. Leftover bread can be wrapped in a double layer of plastic wrap and stored at room temperature for 3 days; wrap with an additional layer of aluminum foil and the bread can be frozen for up to one month.

Kezhvaragu Oats Samba Godumai Idli

Kezhvaragu Oats Samba Godumai Idli is a quick and easy breakfast or tiffin item. It tastes best when served hot and best accompanied by sambar, rasam or tomato urugai. This resembles and also tastes like rava idli, but has a lot of goodness attached. It is very filling and one can eat maximum 4 for dinner and 2 for breakfast. I got this from here and this healthy is yummy too.. This recipe will yield 16 idlis. Also the idlis will raise a lot, so be sure to fill the mould to 75% – 80% only. Quinoa Idli (Instant)

Quinoa – something I heard a few years ago. A very healthy grain which is a rich source of protein. I got this recipe from here and we love it.. Anytime a quick breakfast, a healthy breakfast and a tasty one is surely a winner as it comes more repeatedly on the menu. This idli screams healthy and is delicious. I served it with coconut chutney.

Ingredients
Quinoa - 1 cup quinoa
Oats - 1/2 cup 
Kezhvaragu Maavu / Ragi flour – 1/2 cup
Sooji / Ravai / Semolina – 1/2 cup
Curd / Yogurt - 1 cup
Coriander Leaves - 2 table spoon (chopped)
Baking Soda – 1 tea spoon
Salt – 1 tea spoon

Method
Heat a pan on high heat for around 2 minutes, and reduce the flame and roast the quinoa for around 2 to 3 minutes and grind to a powder and set aside.Do the same for oats also. Grind them both to a powder and set aside

Mix the ravai, kezhvaragu maavu, salt  and baking soda with the powdered quinoa and oats. Initially add about 1 cup of curd and mix them well with a spatula. Add the chopped coriander leaves and add the remaining yogurt and stir to combine.
The batter should be similar to a normal idli batter consistency, if not add some more water. Grease the idli moulds, and the pour the batter, steam it in the cooker until the idli's are cooked.
Serve warm with sambar and chutney.

Fruits and Nuts Urundai / Fudge

Fruits and Nuts Urundai / Fudge is an interesting, quick, tasty and healthy sweet. You can use any choice of nuts. With lot of festivals lined, we can do this sweet which will be quick and easy but a crowd pleaser.. Another interesting point about this sweet is there are no processed ingredients making it so much healthier. I got this recipe from here and it is a huge hit with my family.

Ingredients
Almonds – ½ cup
Cashews – ½ cup
Pistachio – ½ cup
Quick Cooking Oats – 1 ½ cups
Raisins – ½ cup
Dates – 1 ½ cups (22 – 24)
Ghee – 1 tea spoon + to grease
Cardamom Powder – ½ tea spoon
Nutmeg Powder – ¼ tea spoon
Salt – A pinch

Method
Dry roast oats for 2 to 3 minutes and grind it to a powder when cool and set aside
Dry roast the nuts separately and grind it to a powder when cool and set aside
Grind the raisins to a fine paste and set aside.
Grind the dates to a fine paste and set aside. You can add the nuts powder or the oats powder to make grinding easier
In a mixing bowl, add the oats powder, nuts powder, ground dates and raisins and mix well
Add cardamom powder, nutmeg powder and ghee and mix them all very well until they resemble wet bread crumbs
Consistency we are looking is – if this mixture binds and holds together when you can make a fist
Grease a plate with ghee and also your hands with ghee
Make golf sized or little smaller than golf size balls from the mixture
Fruits and Nuts Fudge / Urundai is ready to be served!!!


Points to note – about Dates (from Wikipedia) - Dates have a high tannin content and are used in traditional medicine as a detersive (having cleansing power) and astringent in intestinal troubles.[citation needed] One traditional belief is that it can counteract alcohol intoxication. The seed powder is also used in some traditional medicines.

Manganese is used by the body as a co-factor for the antioxidant enzyme, superoxide dismutase. Copper is required for the production of red blood cells. Magnesium is essential for bone growth. Further, the fruit has adequate levels of B-complex group of vitamins as well as vitamin K. It contains very good amounts of pyridoxine(vitamin B-6), niacin, pantothenic acid, and riboflavin. These vitamins are acting as cofactors help body metabolize carbohydrates, protein, and fats. Vitamin K is essential for many coagulant factors in the blood as well as in bone metabolism.

Instant Oats,Wheat and Corn Idli

One of the healthiest foods is Idli (meaning regular Idli). When we are sick and go to the doctor, we are advised to eat Idli. How about an idli which is even healthier and even quicker? For taste and create, this month I am paired with Priya of seduce your taste buds. She has an awesome blog and I love her recipes. I have been following her blog for sometime now and have bookmarked a lot of her recipes.. Now I had to choose which one I should do first for this month's Taste and Create. I chose this simple, yet nutritious and delicious idli. It was awesome and we loved it. I got about 18 idlis from this recipe and we enjoyed it with tomato chutney

Ingredients
Corn Meal - 1 cup
Cracked Wheat - 3/4 cup
Oats - 3/4 cup
Curd - 2 cups
Carrot - 1 cup (grated)
Coriander Leaves - 1/4 cup (chopped)
Curry Leaves - 10 (chopped)
Lime Juice - 2 table spoons
Mustard Seeds - 1/2 tea spoon
Kadalai Parupu / Channa Dal - 1 tea spoon
Ulutham Parupu / Urad Dal - 1 tea spoon
Cumin Seeds - 1/2 tea spoon
Oil - 2 tea spoons
Salt - 1 1/2 tea spoons
Asafetida - 1/4 tea spoon
ENO Fruit Salt - 1 tea spoon

Method
I used regular oats, so I pulsed it until I got coarse pieces. If using quick cooking oats, ignore this step
In a bowl, mix together grated carrot, coriander leaves, salt and asafetida and set aside
Heat a small pan and add oil, crackle mustard seeds and cumin seeds, add the ulutham parupu and kadalai parupu and sauté until golden brown.
Add the curry leaves and sauté for 10 more seconds and transfer the entire mixture to the carrot and coriander leaves
Add curd and mix well and set aside
In another bowl, mix together cracked wheat, corn meal and oats and mix well
Add it to the wet ingredients and mix well until combined
Add lemon juice and mix well to form an idli batter consistency. Add water if needed
Heat water in the idli cooker and grease the idli plates
Once the water in the idli cooker starts to boil, add the ENO fruit salt to the batter and mix well. You will see it foaming
Mix thoroughly and immediately scoop it to the idli moulds and steam cook for around 12 - 15 minutes or until a toothpick inserted in center comes out clean
Serve hot with tomato chutney

Oats Dosai

For blogging marathon, under low cal breakfast, I chose Oats Dosa which is a quick and easy breakfast or tiffin item. It tastes best when served hot and best accompanied by Sambar, coconut chutney or tomato urugai. We loved it with sambar. I got this recipe from here. I love the rava dosai my mom makes and this resembles and also tastes like rava dosai but much more healthier.

Raisins Oatmeal – A perfect breakfast

Oats is always on my list when I think breakfast and happy to share this recipe as part of BM for Low Cal Breakfast. Raisin Oatmeal is a quick and healthy breakfast that can be prepared in less than 10 minutes with only a few Ingredients. If a chewy texture is desired, add the oats and salt when the water is cold and then bring all to a boil. Some of topping that can added to this oatmeal are dried fruits, nuts like almonds, brown sugar, cinnamon, cream etc. This recipe is the basic version and will serve 2 with ¼ cup of oats per person. Adjust the amount of milk needed as per preference.

Chocolate Oats Bar

For third day of the Blogging marathon - Kid's delight, I am including a Chocolate Oats Bar which is a quick and easy snack which also make a great nutritional food on the go. This is done in microwave and can be done in less than 30 minutes, but needs time to set. I got this recipe from here and this is a sure keeper and a big hit with both kids and adults..

Savory Oats Muffins

Think about oats in cooking and many people can relate to the oatmeal or the granola bar, which are yummy and sweet in taste. This recipe will use oats, oats and mostly oats and make a muffin, but wait.. this is not sweet!!!. So this is a muffin with oats which is savory in taste. I got this recipe from here and made a few changes. They are best when served warm or at room temperature with ketchup, spicy chutney or as is. I have used regular oats, if using quick cooking oats, then powder only the 3/4 cup and the other 1 cup can be used as is. This is a guilt free muffin and my kid loves it with ketchup. So it is a win win.. I can make a favorite, healthy, easy and quick breakfast. This can be eaten for breakfast, an evening snack, packed in lunchbox or eat on the go. This is a very healthy dish and can be made from start to finish in around 30 minutes.

Oats Dates Almonds Shake

Tell calcium rich food and everybody will say Milk… Milk and its products are very rich in calcium. Oats is another calcium rich product. Almond is another calcium rich product. Some also say that dates are good source of calcium.. How about a dish with all these added?
That makes the dish calcium rich. This shake is a super hit in my house. Anybody I have shared this recipe with has appreciated and even better, they do it in their kitchen. It will be very filling and is a perfect breakfast. You can make this day ahead and serve chilled. So you have the morning breakfast waiting for you even before you go to bed.. How cool is that? If preferred you could not use honey and add more dates if more sweetness is required. Dry roasting the nuts is optional but it brings a lot of flavor. I got this recipe from here and made some changes.
