Paneer in White Sauce / Paneer in white gravy

There are so many paneer side dishes out there and this one is a delicious addition… I made this one to serve along with roti and it tasted so yummy… I generally love recipes which do not need much chopping as I am little slow in chopping.. Since most of the items in this are grinded, you do not have to worry about chopping them perfectly… so it is one of my favorite recipes.. This Paneer in white sauce is a rich and creamy side dish..

Methi Malai Muttar

Methi Malai Muttar is a simple, quick and tasty side dish which tastes great with roti, chapathi or rice. This is one of the side dishes I make when pressed for time as it does not need much preparation.. I always have a pack of dried fenugreek leaves on hand and also frozen peas ready, so it is a very quick one… I have used dried methi leaves, but if you can lay your hands on the fresh ones, please use it…

Carrot Parupu Usli

A month long marathon comes to an end today.. It was such a topsy turvy ride with so many posts done at the very last minute.. Phew!!!! Today’s recipe is going to be a simple curry with carrot.. Do you like veggies that are not spicy??? I am a yes and no.. I prefer spicy veg when accompanying my sambar rice or rasam rice or curd rice... Some veggies are exception, I do not mind the simple carrot curry with coconut, but love this spicy version which is a great accompaniment to any rice dish.. Adjust the spice according to your preference. I make the regular parupu usli with Beans and the recipe is here..

Parupu Usli

Parupu usli is a very popular dish which is made from dals and green beans. This is served in almost all marriages and functions. This is very rich in nutrients from parupu which is rich in proteins and green beans which is a green vegetable. This one is also very appealing to the eye with green, yellow and red colors. It is a great accompaniment to mor kuzhambu, rasam or sambar. It is very filling as it comes with a lot of protein. Since the grinded dal tastes similar to vadai, we also call this vadaikkari..

Potato Chips

If there is one type of food which is enjoyed in many parts of the world, then it has to be chips.. Ranking top on junk food, these are irresistible and a lot of times you cannot stop with one.. There are many branded chips available, but make them at home and make it even more irresistible. I have tried the baked version here, but this one is the sinfully delicious fried one. You can add any seasoning powders of choice, but I kept it simple this with just salt and chili powder.

Paneer Butter Masala–w/o Onion and Garlic

One of the very common North Indian Side we order in the restaurant is Paneer Butter Masala. This was the first side dish I got introduced to when we tried North Indian food. It is also a very popular menu part of most menus serving North Indian food. Serve this with roti, naan or pulao and enjoy the meal. Normally I make them with onion and garlic, but today I have omitted them both.

Palak Tofu

Palak Paneer is a very popular North Indian dish. It tastes best when served hot with rice, Naan or Roti. It is very attractive from its great and rich green color. Today I have made 2 variations to my regular recipe - I have used tofu instead of paneer and have also not included onion and garlic.

Lachedar Paneer - Orissa

Orissa or Odisha is in the Eastern part of India. It is quite famous for the Puri Jagannath Temple.. The kitchen of Puri Jagannath temple was one of the largest in the world with about 700 chefs working with 750 wood burning clays.. Wow that kitchen would be a treasure to watch. Around 10000 people are fed each day and the very popular Rasagulla and Khiri is from this state. The spices and flavors in Oriya Cuisine are very subtle and mild compared to the other Indian states. Only 6% of the Oriya population are vegetarian and I did quite a search to find this very delicious Paneer dish. I got this recipe from here and made very few changes. . This is a dry curry and goes very well with roti, naan or pulao. We loved it simplicity and flavor.. This dish has a creamy taste from the cashew paste and tastes very flavorful from all the spices added.

Pumpkin Oambal - Nagaland

Come and travel with me to the far North Eastern India to the state of Nagaland. Nagaland is the smallest state in India and is the 16th state established. Agriculture is very rich and the important economic activity here. Principal crops include rice, corn, millet, pulses, oilseeds, potatoes and sugarcane. Nagaland is called the”Falcon capital of the World”. From Wiki – “The Nagas were originally referred to as Naka in Burmese language, which means 'people with pierced noses. Christianity is the predominant religion in this state. Nagaland is also the only “Baptist state in the World””. Another unique information to Nagaland is that there are about 20 languages that are used here. The cuisine of Nagaland, fondly called the Naga cuisine is predominant in meats and fish and they are smoked, fermented or dried. Now coming to today’s recipe, it is a delicious finger licking chutney.. The original recipe had bay leaf and lemon. I omitted them due to our taste and preference. I got this recipe from here and did make a few changes..

Khatta Kaddu - Himachal Pradesh

Kaddu means Pumpkin and this is a dry curry with pumpkin.. Daily food in Himachal Pradesh is very similar to many parts of India and is dominated with dals, rice, roti and subzi.. The spices are used significantly in this cuisine and add a lot of flavor and taste to the dish.. This is a quick and easy preparation which goes very well with roti, puri or pulao.. I got this recipe from here.. Compared to other parts of India, this state prefers a lot of meat based dishes.. From wiki – “The day to day food of Himachalis is very similar to the rest of the north India. As compared to other states in north India non-vegetarian cuisine is more preferred. Traditionally, Himachali cuisine is dominated by red meat and wheat bread. Thick and rich gravy, with aromatic spices, is used in abundance as the base of many dishes. Some of the specialties of Himachal include Manee', Madira, Pateer, Chouck, Bhagjery and chutney of Til.

Mushroom Aloo Mutter

For Vegan Thursdays, I chose to write Mushroom Aloo (Potato) Mutter (Peas) which is a great side served with rice or roti or naan. It tastes best when served hot. You can skip the peas soaking part if it is made with frozen peas, in which case, just thaw it.

Mashed Potato

Mashed Potato is a very famous American side dish. For best consistency, use two types of potatoes. Russet potatoes are high starch potatoes and red potatoes are low starch potatoes. A combination of the two is great which gives creamy and also fluffy texture. This can be made a lean one by substituting milk for cream. If you cannot find 2 types of potatoes, you could use the baby potatoes and the normal potatoes as they have different levels of starch..

Munthiri Maamudi (peerkangai gravy dish)

Some dishes are so interesting that you want to do them right away.. I always buy peerkangay and make thuvayal from it and when I saw this recipe in a TV show, I could not resist making it. It has a very interesting and distinct taste and goes very well with pulao or roti. The name mentioned in the cooking show was little different than what I have put here, but I loved this new derived name, so I kept it.
