Today's recipe with fruits is very interesting form of rice. It is a great idea to pack for lunch, for parties and also a quick dinner.. The flavor is mild and will be little sweet, so please serve them with spicy side dish.. I served them with spicy Aloo Gobi. I got this recipe from a TV show.

Grape Juice–Summer Recipes
One of the easiest and quickest way to get fruits into us is in the form of juice. But when we use the store bought ones, it has the obvious issues of not being fresh, contains preservatives etc.. I always prefer grapes with seed but the issue is the process is longer than the seedless ones.. It is very important to use the skin of the grapes here to get the maximum benefit. I have used honey here, but you can use all sugar also.. This stays good as a concentrate for about a week.. Did not try for longer period as it got over by then…

Chocolate Dipped Strawberry
Some items are so easy, that you do not make note of the recipe, but you forget how easy they are and search for the recipe.. Same happened with me for the Chocolate Dipped Strawberry.. It was strawberry season and fresh strawberries were welcoming us into the grocery shops.. It would be almost a sin that you do not buy these beautiful fruit.. So tempted to buy these, I got a large quantity and made Jam (yes that is the first one I make when I have loads of fresh fruit) and now wanted to make something with the remaining fruits.. I remembered the chocolate dipped strawberry I made long ago and wanted to make it.. I remember it was so easy that it hardly took 10 minutes to make it.. But I did not have the recipe written, reason was - it was too simple.. Now I did it again, but this time, made sure that I am writing it on my blog for me to remember..
We can eat strawberry as is, but add chocolate and it looks even more inviting.. You could also make designs with this.. Sorry I was in a hurry and did not take the photos with the designs.. Next time.. So to the basic recipe now

Raspberry Jam
In the episode - Urban Preservation, Alton Brown talks about Canning and Jam making at home. That was the first time, I was taken a tour of this beautiful process (on TV of course) and I was so impressed.. Yes I did do the shopping and made the Jam and also Canning them.. It was surely a pleasure. Did I find it boring - no, was it difficult - no.. Was it satisfying - yes.. Was it economical - yes for sure. was it exciting – yes, was I very proud – yes yes.
Now do I buy Jam at store - yes I still do, but I love to make them at home.. I have so far made many types of Jam at home like Mango Jam, Mixed Fruit Jam, Strawberry Jam, Tomato Jam, Apple Jam, Raspberry Jam, Pineapple Jam, Grapes Jam etc. I also have a big list of Jam to do - like Apricot Jam, Dry Fruits Jam, Blueberry Jam, Fig Jam, Dates Jam etc. A big thanks to the Urban Preservation episode.. Now to the recipe..

Eggless Banana Bread
Ingredients
All Purpose Flour – ¾ cup
Whole Wheat Flour – ¾ cup
Baking Soda – 1 teaspoon
Salt – 1 teaspoon
Sugar – ½ cup
Ripe Bananas – 3 large
Applesauce – ¼ cup or 3 table spoons milk and 1 table spoon oil
Butter (Melted) – 4 tablespoons
Vanilla Extract – ¼ teaspoon
Chocolate Chips – 1 table spoon (optional)
Chopped Walnuts – ¼ cup (optional)
Tutti Frutti – ¼ cup
Method
Preheat the oven to 175 degrees C
Mix all the dry ingredients (both flours, baking soda, salt and sugar) together in a large mixing bowl.
In a separate bowl, mash the bananas well.
Stir the butter or margarine, vanilla extract and applesauce into the bananas.
Add the banana mixture into the mixing bowl with the dry ingredients.
Mix gently by hand, just enough to form a thick, clumpy batter. If the mixture seems too dry, add more mashed banana or applesauce to adjust the consistency.
Fold in chocolate chips and/or walnuts, if using.
Pour batter into greased loaf pan and bake for 45 - 50 minutes or until the bread is a deep golden brown and a knife inserted in the center comes out clean.
