Fruit Rice

Today's recipe with fruits is very interesting form of rice. It is a great idea to pack for lunch, for parties and also a quick dinner.. The flavor is mild and will be little sweet, so please serve them with spicy side dish.. I served them with spicy Aloo Gobi. I got this recipe from a TV show.

Grape Juice–Summer Recipes

One of the easiest and quickest way to get fruits into us is in the form of juice. But when we use the store bought ones, it has the obvious issues of not being fresh, contains preservatives etc.. I always prefer grapes with seed but the issue is the process is longer than the seedless ones.. It is very important to use the skin of the grapes here to get the maximum benefit. I have used honey here, but you can use all sugar also.. This stays good as a concentrate for about a week.. Did not try for longer period as it got over by then…

Chocolate Dipped Strawberry

Some items are so easy, that you do not make note of the recipe, but you forget how easy they are and search for the recipe.. Same happened with me for the Chocolate Dipped Strawberry.. It was strawberry season and fresh strawberries were welcoming us into the grocery shops.. It would be almost a sin that you do not buy these beautiful fruit.. So tempted to buy these, I got a large quantity and made Jam (yes that is the first one I make when I have loads of fresh fruit) and now wanted to make something with the remaining fruits.. I remembered the chocolate dipped strawberry I made long ago and wanted to make it.. I remember it was so easy that it hardly took 10 minutes to make it.. But I did not have the recipe written, reason was - it was too simple.. Now I did it again, but this time, made sure that I am writing it on my blog for me to remember..
We can eat strawberry as is, but add chocolate and it looks even more inviting.. You could also make designs with this.. Sorry I was in a hurry and did not take the photos with the designs.. Next time.. So to the basic recipe now

Raspberry Jam

What is Jam - to me until I made my own was - go to the shop, chose your flavor and buy it.. Did I know there existed a process called Canning - A big No... I watch so many cooking shows and generally I love them or I hate them.. If I love them, I see it so many times and never get bored.. Good Eats is one such series of episodes that is my top favorite cooking show. Love Alton Brown's explanation, his wit and the science and his explanations.. I love to watch the episodes and I guess I have watched most of the episodes a few times now and have read his 3 books a few times.. Thanks to the great Library access I had in US...
In the episode - Urban Preservation, Alton Brown talks about Canning and Jam making at home. That was the first time, I was taken a tour of this beautiful process (on TV of course) and I was so impressed.. Yes I did do the shopping and made the Jam and also Canning them.. It was surely a pleasure. Did I find it boring - no, was it difficult - no.. Was it satisfying - yes.. Was it economical - yes for sure. was it exciting – yes, was I very proud – yes yes.
Now do I buy Jam at store - yes I still do, but I love to make them at home.. I have so far made many types of Jam at home like Mango Jam, Mixed Fruit Jam, Strawberry Jam, Tomato Jam, Apple Jam, Raspberry Jam, Pineapple Jam, Grapes Jam etc. I also have a big list of Jam to do - like Apricot Jam, Dry Fruits Jam, Blueberry Jam, Fig Jam, Dates Jam etc. A big thanks to the Urban Preservation episode.. Now to the recipe..

Mixed Fruit Jam

Bread, butter and jam is a very nostalgic and very simple breakfast. All the ingredients (Bread, butter and Jam) and generally store bought at my place and we just assemble and you have a yummy dish ready.. Now with all the “trying different cuisines and food” aura rounding around me, I try to make all the 3 ingredients at home… Definitely more complicated than buying from the store, but tastes so fresh and so awesome.. I am sure you have heard me say, how rewarding bread baking is.. Now comes the second ingredient which is the Jam. Mixed Fruit Jam is a famous type of jam which is made with a variety of fruits. Since we make it home, we can customize and personalize it. Adjust the sugar, adjust the variety of fruits, add essence if you want, add color if you want… Have fun!!! Now the truth is that I dislike to buy the store bought jam as it almost looks like solidified sugar water!!! But sometimes if I am pressed for time or ingredients, I do have to buy it.. Spiced Pear Chutney

I have never tried to make chutneys from Pear. For me Pear was always a fruit to either eat as is or in a salad.. I saw this in a book (do not remember which one) and was very fascinated by it. It tasted so good and delicious..

Orange Granita–Ice cream (very low fat)

How about an ice cream without cream and without ice cream maker and with very very less sugar??? Very interesting... Need an ice cream with no cream (or very very less) and with very less sugar – this will be it. Also I tried this ice cream with sugar substitute and it was equally good and you can make this with ingredients that are in most homes. I have served this both as is and also topped it with whip cream. So whip cream is totally optional.. From Wiki – “Granita (in Italian also granita siciliana) is a semi-frozen dessert made from sugar, water and various flavorings. Originally from Sicily, although available all over Italy (but granita in Sicily is somewhat different from the rest of Italy), it is related to sorbet and Italian ice. However, in most of Sicily, it has a coarser, more crystalline texture.”

Eggless Apple Walnut Bread–Very healthy Quick Bread

I get very excited to do dishes that are healthy. Generally sweet bakes have loads of butter, sugar and white flour in it. I try to make them healthy and tasty.. In my house people do not appreciate Oats much, but I try to tweak it and hide it in baked goodies and reveal the secret that the dish has oats after its gets the "Tasty and yummy" certificate... I guess lot of us to try to feed healthy stuff by hiding them in the dish... This bread was a very easy winner in getting the "Tasty and yummy" certificate and wins my "very healthy and easy" certificate and it is a win-win. A healthy quick bread which has no processed ingredients. I got this recipe from here. This stays well (when un cut) for at least 2 days in the fridge. I reheat it for 15 – 20 seconds in the microwave and serve them. It also makes a perfect lunchbox dish. It is a good idea to plastic wrap it if storing it in the fridge.

Pineapple Rasam (அன்னாசி ரசம்)

Rasam is one of the most comforting food on Planet... There are so many varieties to it and it is so versatile, so flavorful and so delicious. This rasam is also similarly very flavorful, very aromatic, very comforting.. This rasam is made in a lot of Tamil marriages. It is very simple to do. Do not be intimidated with the number of ingredients, most of them are in our house Pantry.

Vegan Mango Muffins w Hudson Oil

I try a lot of products to keep giving my family healthy and tasty foods.. Some products are well designed and make life so much easier. I got an email from Hudson to try out their Canola oil and was very happy to accept it. They sent me a liter of their oil in a very well packed case. I wanted to make a cake or a muffin and use this oil. When I first opened the main lid, I really liked the next spill proof lid that came along (see image below) and then when we pour the oil out, it is so much easier to not have to worry about spilling around the sides. Very efficient lid as regards to spill proof. I used this oil and made the Vegan Mango muffins and it was a very big hit among my family members. Delicious muffins and the house is filled with mango flavor and aroma. These muffins have very less fat and a lot of healthy stuff like whole wheat pastry flour, flax seed. However this does have quite a bit of sugar. You can reduce the sugar to 1/2 cup if desired. This sweetness was perfect for us. I got this recipe from here and I absolutely love it.

Granola Bar - v2

Granola is a breakfast food and snack food consisting of various nuts, dried fruits, some sweetener and rolled oats. I have never heard of Granola in India or it is known by some other name. First time I heard of it was when my colleagues in the US used it for Lunch.. Looked like big bar and all that they would do is unwrap it and eat it with some milk or juice and call it done… Will look so cool.. And then I went to the shops to search for it and there were too many choices but hey they were also expensive.. I was watching my favorite Alton Brown show (and his Book) and saw him do this and could not delay doing it… I have tried this a few times and all of them were so delicious and so healthy

Mango Halwa (Microwave)

My blog views have crossed 50000 – yayyyyy!!!!!.. Celebrating and thanking you all for your support with a delicious mouthwatering sweet… Mango Halwa is a quick and easy sweet which can be done in less than 30 minutes.  You will get about 12 medium sized pieces. I got this recipe from here. The halwa tastes best when served warm. If it becomes little hard after keeping for a while, microwave for 15 seconds to bring it back to temperature and serve!

Eggless Fruit Cookies

Cookies are fun as they are quick to make, have a longer shelf life and they look so pretty. They are also a great food on the go. While some cookies are very sinful in calories, this one is little on the other side.. I got this recipe from here and this is surely a keeper. Kids delight recipes are fun to make and imagine them to sweets or desserts or cookies that they love!!! I am including this for the Kids delight - desserts for this month's BM.

Apple Cornmeal Bread

A healthy quick bread which has no processed ingredients. It has a very earthy taste from the molasses. This will make 3 mini loafs or a big loaf.. I made 2 mini loafs and 2 jumbo muffins out of this… I got the recipe from here and made few changes.. Very happy to include this for BM - Kids delight – desserts.

Eggless Neapolitan Cake

Neapolitan is a tri color. Have seen the very famous Neapolitan ice creams and this cake also follows the same rule of tri color. We have 3 colors in this cake - green, pink and yellow. When Swathi chose this cake for the baking partners, I was very excited as I would get to do a very colorful cake. Made some changes from the original recipe. The original recipe was done in a loaf pan, I have made this in a 9 inch cake pan, made it Gelatin free and Eggless.

Eggless Banana Bread

Banana Bread is quick and easy bread that can also be served as a cake.  This can be served for breakfast or as a snack. This tastes best when served warm or on room temperature. No toppings or accompaniments are necessary.  This is very soft and moist bread. Slice the bread just before serving as unsliced bread lasts longer. Store unsliced bread wrapped in plastic. This bread can be done in an hour.

Ingredients
All Purpose Flour – ¾ cup
Whole Wheat Flour – ¾ cup
Baking Soda – 1 teaspoon
Salt – 1 teaspoon
Sugar – ½ cup
Ripe Bananas – 3 large
Applesauce – ¼ cup or 3 table spoons milk and 1 table spoon oil
Butter (Melted) – 4 tablespoons
Vanilla Extract – ¼ teaspoon
Chocolate Chips – 1 table spoon (optional)
Chopped Walnuts – ¼ cup (optional)
Tutti Frutti – ¼ cup

Method
Preheat the oven to 175 degrees C
Mix all the dry ingredients (both flours, baking soda, salt and sugar) together in a large mixing bowl.
In a separate bowl, mash the bananas well.
Stir the butter or margarine, vanilla extract and applesauce into the bananas.
Add the banana mixture into the mixing bowl with the dry ingredients.
Mix gently by hand, just enough to form a thick, clumpy batter. If the mixture seems too dry, add more mashed banana or applesauce to adjust the consistency.
Fold in chocolate chips and/or walnuts, if using.
Pour batter into greased loaf pan and bake for 45 - 50 minutes or until the bread is a deep golden brown and a knife inserted in the center comes out clean.

Eggless Blueberry Scone

Blueberry Scone is a popular American pastry. It tastes best when served warm. The key point in the process of making the scone is that all the ingredients must be freezing cold. Using frozen butter gives a flaky texture and a great mouth feel. I did not use sour cream in the recipe, instead used Hung Curd. Click here for home made Hung Curd recipe. This will make 8 big scones.

Eggless Blueberry Muffins

When I saw the theme of Cooking with Berries in BM, I surely wanted to include this muffin which is so simple and delicious!!! This recipe formula can be used for most of the muffins like cranberry, strawberry and other berries.. I got this recipe from here. A very tasty muffin which is simple and quick to do.
