South American Cachapas

Do we all love recipes that are too simple, but looks exceptional??? Yeah... I am all for it.. You guessed it right, Today's recipe which I got from here is a very simple and elegant breakfast which is super quick to do... With just a few readily available ingredients, today we will relish a delicious pancake called cachapas from Venezuela. They are traditionally eaten with Queso de Mano (hand made cheese – soft one like mozzarella), but I used the cheese that I got locally here.

Jal-Jeera / Jaljeera / Jaljira–Spiced Indian Drink

Today I am bringing a delicious and tongue tickling drink.. It is Jal-Jeera.. Jal means water and jeera is cumin seeds.. This is a very popular flavored drink in India and I got this recipe from here and changed very little.. All of us enjoyed this drink and it was so refreshing and energetic

Grape Juice–Summer Recipes

One of the easiest and quickest way to get fruits into us is in the form of juice. But when we use the store bought ones, it has the obvious issues of not being fresh, contains preservatives etc.. I always prefer grapes with seed but the issue is the process is longer than the seedless ones.. It is very important to use the skin of the grapes here to get the maximum benefit. I have used honey here, but you can use all sugar also.. This stays good as a concentrate for about a week.. Did not try for longer period as it got over by then…

Carrot Almond Laddu–Diwali Sweets

Laddu - this word makes a lot of people drool... For my daughter it relates to strength and power.. All thanks to the Chhota Bheem cartoon she loves where laddu is a symbol for strength.. Caramel Mousse - no Egg, no Gelatin

When I made the Caramel sauce, I was so ready to make the mousse with it.. I searched online, but most of them had eggs and gelatin in it.. So went back to my own Mango Mousse recipe and made the caramel mousse.. Very tempting and very tasty.. Serve them in cute mousse glasses and it is sure to please everybody...

Thirattipaal / Theratipaal using Ricotta Cheese / Microwave Thirattipaal

One of my favorite sweets is enjoy is thirattipal, but it takes for ever to do them. But the taste and the end result is so worth the time, effort spent. Here I came across a simple recipe and got the thirattipal in 15 minutes... Now that is so delicious and also the time and effort is much less..

Javvarisi Payasam / Sago Kheer

A delicious payasam made from javvarisi. It is quite easy to make.. There are so many varieties of Payasam and kheer we make.. Each is so unique in taste, texture and appearance. This payasam looks so beautiful with the transparent tiny balls floating in it.. I remember my child hood days where we used to play with the balls when this payasam was served. We press with the finger and the balls with move slipping under your fingers and it will be so much fun!!! We make this payasam for a lot of festivals. This can be served both warm and chilled!!

Shikanji / Shikanjvi - Madhya Pradesh

Today we are visiting the state of Central India. Madhya means middle and pradesh is place and I believe that the story behind the name of the state - Madhya Pradesh. This is a very refreshing and delicious drink. It is scotching summer here and what a better way to beat the heat other than a refreshing juice.. So chilling!!! I got this recipe from here. Shikanji is also popular in the neighboring states of Maharashtra, Punjab, Himachal Pradesh also.. Since it is a simple post, I have shared some tricks of serving the juices in my post..

Gajar Ka Halwa – Delhi

Today we travel to the Capital of India – Delhi. Delhi is an Union Territory more closely resembling a state having its own High court to Chief Minister. The Delhi city is the second most populous city in the World. From wiki – “The NCT and its urban region have been given the special status of National Capital Region (NCR) under the Constitution of India's 69th amendment act of 1991. The NCR includes the neighbouring cities of Alwar, Baghpat, Gurgaon, Sonepat, Faridabad, Ghaziabad, Noida, Greater Noida and other nearby towns, and has nearly 22.2 million residents”. Delhi was the site of the ancient Indraprastha, the capital of Pandavas during the Mahabharata. There are many historical sites in Delhi. Some to name are – Red Fort, Qutub Minar, Humayun’s TOmb, India Gate etc. Delhi cuisine is largely influenced by the Mughals and this is where the Mughlai cuisine in India originated. There is street in Delhi called the “Gali Paranthe Wali”. Gali means street and Paranthe is Indian bread. There is an entire street that is full of varieties of Paranthe.. Delhi is a great place for foodies.. From Wiki – “The Gali Paranthe Wali (the street of fried bread) is a street in Chandni Chowk particularly for food eateries since the 1870s. Almost the entire street is occupied by fast food stalls or street vendors. It has nearly become a tradition that almost every prime minister of India has visited the street to eat paratha at least once”. I have made carrot halwa before but that was a much easier one, but this one tastes more yummy and more authentic!!

Eggless Crème Brûlée - Vegetarian Crème Brûlée

Crème Brûlée is a popular French Dessert made with custard as base and a hard caramel on top. This is a very interesting dessert that can be made quickly (although it needs time for refrigeration) .. With hard crust and soft little gooey inner, it is surely a winner of hearts.. For this month’s Eggless Baking group, Gayathri chose Crème Brûlée and I chose this one from here.

Decadent Chocolate Fix / Healthy Chocolate Pudding

Lot of us have this opinion that a dish that looks healthy is not tasty and a dish that looks tasty is not healthy.. Whenever I serve a dish and oats is seen, people in my house assume that is not going to taste great and yes I have to mask the healthy ingredients quite a bit.. But with this delicious chocolaty pudding, all I had to do was keep it on the table and it was gone!!! Where did I get this recipe from??? I got this from a Doctor show.. They were talking about how difficult it is to eat healthy ingredients and how to make them tasty and quick. This delicious pudding has all the great ingredients (from their site – “With over 20 vitamins, minerals and antioxidants, avocado keeps you looking and feeling great, while pure cocoa gives your brain a rush of dopamine to fire up your brain’s pleasure receptors”and can be made in a jiffy..

Pista Kulfi

Have you tried recipes without the utensils required? I have done that done like that many times.. One such example is this Pista Kulfi which I made long before I had owned a Kulfi mold. The recipe here also did not use the mold, but a bowl and then cut the kulfi into few pieces.. Pista Kulfi is an ice cream which can be made without the ice cream maker. Transfer them to small cups and insert wooden sticks into to get the kulfi look. Do not ignore the plastic paper part as it is critical to the recipe. This is a very simple dish which is lesser in fat compared to traditional ice creams. Obviously served frozen!!! This was one of the first ice creams I made.. Surely a delicious and simple one..

Mango Mousse (Vegetarian)–no egg, no gelatin

Mango Mousse, the word makes me droolSmile. And it makes it even more tempting is the way it is served in tiny cute glass serving ware. I searched for a few mousse recipes online and also got one from a friend.. Mixed all these and made a recipe of my own!!!
