Raw banana blossom and carrot salad

 


I usually just have the banana blossom 'heart' for salads, but this time I have included a few of the little flowers that are found under the Petals. Cut the banana blossom from the bunch of bananas (leave them on the tree if they are still green) and peel off the outer pink petals, collecting the little blossoms and dropping them in cold water and lemon juice (I added some to the sink). 


Prepare another bowl with water and lemon juice and cut the banana 'heart' into small slices, dropping them quickly into the lemon water so that they don't brown. If you want to add the flowers you will need to remove the style and stigma, and the papery outer part of the flower. This takes a long time and this is why I only do it for a few of the most tender flowers. The more central flowers, which are completely white (no pink) can be eaten whole.



Rinse well and drain, then place in a bowl and add lemon or lime juice, about 2 tbsp, soy sauce (tamari for gluten free), about 1 tbsp, and half a tsp of grated ginger. Press down with a plate or a second bowl and place a weigh on top (you can find an image in this recipe here). Leave overnight, or even a couple of days (like I did, it was perfectly fine!), then rinse under cold water, shake well and place in a clean bowl. Grate one large carrot and dress with lemon juice, salt and olive oil, then fold in the banana flowers. Mix well, taste for salt, and scoop into the banana petals for serving. I also decorated mine with Vietnamese mint flowers. 

It was very good, but next time, if I have the patience and time to clean all the little flowers, I'll tray to cook them. The 'heart' is definitely much nicer!

Fresh As freeze dried herbs and spices for some Thai inspired Vegan curries


These were soooooo delicious!!! I made the side dish just with onion, tomato, green beans, Fresh As Chili Powder (plus a little oil for frying the onion and salt to taste. The 'main' green curry had all the others Fresh As powders (plus some chili): lemon grass, coriander, ginger, sweet basil and kaffir lime.  The kaffir lime was my favourite! I also added some Vietnamese mint from the garden.  It had tofu, potatoes, carrots, beans, onions and coconut milk, plus organic vegetable stock for seasoning. Served with rice. Amazing!

Coconut tofu and vegetables strips with Eastern herbs - plant based paradise



I planted some ginger roots in my garden from a bought root that started sprouting and got a beautiful plant... but the flower looked like that of the wild ginger (a weed in New Zealand) and I was a bit worried... my neighbour told me that it is a good ginger, the flower is similar but it doesn't make the seeds that birds spread around the forest. Well, since I was worried I remove the plant (the flowers looked good in a vase anyway) and used the root to make gari (delicious, recipe here) and this tofu dish.

Very easy: just simmer some sliced tofu in a pot with coconut milk, vegetable stock, ginger, chili, lemon grass and a shallot. Add some celery, carrots and capsicum strips and simmer for a few more minutes, then turn the heat off and add some cucumber strips, fresh coriander, basil and Vietnamese mint and serve with Thai rice.

And now a few more subtropical delights from my garden: cherimoya (not ready yet) and bananas (the best bunch so far, shared with many friends!)

How to grow and make your own gari (pickled ginger for sushi)


To make gari, the lovely pink pickled ginger for sushi, you need to have very fresh ginger roots, which are not to easy to find. So I grew my own! Bough ginger roots sometimes have a little green bud, or develop one if you leave them outside the fridge, and in this case you can just break a piece off (the one with the bud, of course) and plant it! I did just this, not knowing what to expect, and I was rewarded with a big leafy ginger plant! When I 'harvested' the roots they were fresh and fragrant, perfect for making gari. 

For the recipe I looked up one of my favourite books, The Book of Sushi, published by Kodansha International. Sadly Kodansha doesn't publish anymore in English, which is a real pity as they made some outstanding books on Japanese culture, including several cooking books, so this book may not be easy to find now.


I washed my ginger roots (I could not break much of it, as I made the mistake of planting it in a pot with a lemon tree and the root was too deep down to remove completely), but I had enough.


The skin is easy to remove with a spoon or finger nails. Remove the buds, you just need the root, hopefully with a hint of pink in it. Then slice the root as finely as you can manage.  


Then I added a few generous pinches of salt (I used some unrefined salt, but the book is not specific on which salt - or how much, to use) and left it stand for one day. I put a weight on top too, to make sure that the ginger got well pickled by the salt, but this was not requested by the original recipe.
The day after I rinsed the ginger under fresh water.


Then the book says: ....place in a marinade made of 1 cup of rice vinegar, 7 tablespoons water and 2½ taspoons sugar. Allow the ginger to marinate one week.

Well, first of all I noticed that I run out of rice vinegar, but I had some sushi vinegar, which already contains sugar and salt. Secondly, and this is my personal taste, I rather use less sugar (and salt) so I did a mixture of half sushi vinegar and half water. Thirdly, I brought the mixture to the boil, threw the ginger slices in, boiled them from a few seconds and turned the element off. I did this simply because I felt safer pickling it this way, and the result was great! I stored the gari in a glass jar in the fridge for one week before using it, now it is about two months old, almost finished, but still very good.


The original colour is a very light pink, which I like very much as it feels natural to me. The second pink, very vibrant, I made by soaking my own made gari for just a few minutes in the brine of shibazuke, which is a Japanese pickled mix of cucumber and eggplant and red shiso. It is the red shiso that gives out the pink/magenta colour, so anything picked with this leaf will work (and pickles also have plenty of brine left over, which I never throw away but use to colour rice.

Waste not waste not, this is my motto!

Soft tofu and avocado sashimi served on homemade disposable bamboo dishers made with bamboo leaf sheath



There is no much to this dish really, just soft tofu with grated ginger and avocado (add wasabi and say sauce) plus some pickles, mostly bought except for the cucumber (recipe here).

The exciting thing for me here are the bamboo platters! I have some bamboo in the garden and it is shedding leaf sheaths. I love those fancy bamboo disposable dishes that you can buy in home stores, so I though of making my own. To clean the sheaths I just placed them in the dishwasher! Some rolled up a bit, but after a couple of days they were flat again! The dishwasher took away the dirt but some black stains remained, which makes me wonder how ecologically they treat the commercial plates, since they are so pale and spotless! But now I can make my own and doesn't matter if they are a little stained, they are natural and lovely to look at!

Tofu and spring onion skewers



My friends Astuko and Hideko often send me this dried tofu which I find super versatile! I just soak it in water (or stock) and then use it in a variety of dishes. This time I just soaked it in water and then cut each blog into four pieces, and put them in a skewer (soak the skewers too!) with some spring onions. 

I sautéed the skewers on both sides with a little rice bran oil to which I added a few drops of sesame oil, then I brushed the tofu and spring onions with a sauce made by simmering a teaspoon of sugar or with two tbsp of water, two of soy sauce (gluten free please use tamari) and a pinch of freshly grated ginger. I turned the skewers over one more time and then I served them, hot and yummy! The scrapings from the pan were delicious on plain rice too!

Tip for peeling ginger


This I discovered by chance, and I am sharing because I love grated ginger but I never knew how to peel it, except with a knife. But this only works with frozen ginger. I always have frozen ginger, when I buy some I use a bit and then I put the rest in the freezer and break out what I need from time to time (broken roots in the fridge dry up, and in my kitchen sprout, so the freezer is my only option). Today I took out a piece and I made an incision with a knife to break it. But because it was so hard and frozen I threw it in a bowl of water where I was soaking some mushrooms and dried tofu. After five minutes I took it out and the peel just started came off!
I could not believe how easy it was, this is going to be my frozen ginger peeling method from now on (just water, I don't think that the mushrooms and tofu had anything to do with it!)
This is also great for juices :-)

Vermicelli in coconut and veggie broth with tofu and Asian fragrances


This is an aromatic vegan and gluten free soup, light and delicious.


500 ml vegetable stock
1 can coconut cream or milk + one can of water (rinsing the coconut cream)
1 large yellow courgette (zucchini)
2 fresh red chilies
1 block of tofu
a pinch of freshly grated ginger
1 stalk lemon grass
Vermicelli
a few coriander leaves
a few cherry tomatoes

Simmer all together for a few minutes until the zucchini are soft but not mushy.

In the meantime soak the vermicelli in hot water until soft then divide between 6 bowls.
chop a few cherry tomatoes, and wash some fresh basil and some thai mint

Pour the hot soup over the vermicelli, making sure that each dish has equal parts of tofu and veggies.
Decorate with the tomatoes, basil and Thai mint and serve immediately.

Fresh juice using beetroot stalks and leaves, carrots, apples and ginger


… plus beetroots from the garden, carrots, apples, and a little ginger. For five juices I used about 1.5 kg of carrots, plus a few local apples, and i picked two beetroots from my veggie garden, they were small but the leaves and stalks are perfect for juicing too (of salad) so nothing get wasted. I used just a little ginger (not all the piece in the photo) to give the juice a little zest. It was really sweet and delicious!

Coconut and ginger tofu



Ingredients:

Two blocks of soft tofu
1 shallot
2 fresh red chillies 
1 can coconut cream
500 ml vegetable stock
1/2 teaspoon fresh grated ginger
fresh coriander
fresh Vietnamese mint (or basil)

Drain the tofu and cut into slices. Finely chop the shallot, and roughly break up the chili, discarding the seeds unless you like your food very spicy. Place everything in a pot with the coconut cream and vegetables sock and simmer for 20 minutes. Grate the ginger and add to the tofu, finish off with some fresh coriander and Vietnamese mint leaves. If you don't have Vietnamese mint use fresh basil.
Serve with Thai rice or noodles.

Pumpkin with coconut cream and basil (and add tofu to make it into a main!)





I had half a pumpkin to use, but just a little bit of Thai herbs mix (ginger, lemon grass, chili, garlic and coriander), certainly not enough to give my pumpkin a spicy flavor! Still, I felt like coconut, so I cut the pumpkin and two celery stalks with leaves and put them in my pot, then I added one can of coconut cream plus one can of water (to rinse the cream out), the remaining Thai herbs mix (about half tsp) and one organic veggie stock cube. I cook the lot until the pumpkin was soft, then I adjusted it for salt and added plenty of fresh basil leaves. I wanted to add some of my Vietnamese mint but it has all dried up (no rain in Auckland either) but the basil was strong flavored and I was surprised how nice this tasted in the end! I though of using this as a side dish (like in the photo) but I run out of time to make the main and since this dish had so much sauce I just added some cubed firm tofu to it when I warmed it up for dinner. I served with Thai rice. Very nice way of eating pumpkin in summer!

Vegan pot-sticker dumplings




I love this type of dumplings, for the filling I use what I have at hand really, but generally the base is tofu, Chinese dried mushrooms, soaked and boiled first (keep the broth for later) and fresh coriander. For flavouring I used sesame oil, soy sauce and a little fresh ginger. Blend everything into a smooth paste.


The folding is easy if you are doing it with friends. The fact is that after the first ten I got tired and bored, and I had 50 more to do! So I didn't make some particularly pretty ones to look at! My son loves them, and I wanted to make him fold a few ("so that you can learn darling!"), but he politely declined saying that he was going to take some photos of me making them instead (he is so good at finding explanations!).  One of the things I do when folding the ready bought dumpling disks is to wet the borders with water so that they stick well. And then I dip (lightly) the bottom of each dumpling in a plate lined with vegetable oil. In this way the dumplings don't stick to the tray, and then to the pot (even if they are supposed to be 'pot-stickers'!)

These can also be simmered in broth (I always make a little broth for a just a few, just simmer them until they come to the surface and then they are ready!) or steamed in dumpling baskets. I learned the  pot-sticker method in Japan, where these are called gyoza (but have meat inside). 




Cook the dumpling in a very hot pan, and as soon as the bottom has started to brown turn them and brown both side as well. Then cover with a lid and let the steam finish the cooking for a minute or so. At this stage I do add a spoon or two of water or, even better, the stock left over from cooking the mushrooms.  

Serve them hot! They can be eaten with chopsticks or fingers, dipped in sweet chilli sauce or soy sauce,  Max had about 25!

Avocado sashimi








This is the first course of my Japanese Vegan and gluten free dinner...
 Raw food is better as a starter, apparently it gets the digestion going, and this is easy to make and really delicious.


For each person you will need:

Half avocado, not mushy
Lemon juice
A little wasabi paste
Japanese pickled ginger
Soy or Tamari sauce


Slice the half avocado like in the picture, not to thin and not to thick (diners need to be able to pick up the slices with chopsticks) then spray with lemon juice. Serve with wasabi, pickled ginger and gluten free soy or tamari sauce on the side.

Chinese Vegetables with Cashew Nuts


Vegan MoFo Day 9





Any vegetable is good, but I used a few dried shitake mushrooms (2 or 3 per person), bok choy, and carrots. Soak the mushrooms, cut the bok choy in big chunks, and the carrots into fat strips. In a pan or wok heat 1 tbsp of vegetable oil with 1 tsp of sesame oil. Add the mushrooms (keep the water aside for later), sizzle for a few minutes, then add the carrots, and after 2 minutes the bok choy (first the white stalks, then the green leaves). Add the cashews (about 2-3- tbsp) and stir. Mix the mushroom's soaking water with 2 tbsp of soy sauce (gluten free soy sauce if following a gluten free diet), 1 tsp of corn flour and half tsp of grated ginger. Add to the vegetables and stir until the sauce thickens. Serve immediately with rice.

Ginger Bok Choy


Third day of posting for Vegan MoFo




The bok choy comes from my garden, I believe that it is one of the easiest brassica to grow. It looks great if you cook it whole, but for a family meal it is easier to cut it into pieces first. Wash well and cut into big chunks. In the meantime in a bowl mix 1 tsp of cornflour with 50 ml of water, 2 tbsp of soy sauce (gluten free, if you need to), and half a tsp of freshly grated ginger. Heat 1 tbsp of vegetable oil (I used rice bran oil) in the pan and add the white stalks of the bok choy first. Sizzle for a couple of minutes, then add the green leaves. Cover for a couple of minutes and let the greens wilt in their own steam. Add the sauce and mix until the sauce thickens. Serve immediately with rice or as a side vegetable.

Ginger and Chili Tofu







 I like cooking with ginger, especially when the weather is colder. Most of my Chinese style dishes are very simple, I usually make a tofu or a gluten (seitan) dish, and a side vegetable dish, to serve either with plain rice, or noodles.



 To use fresh ginger I cut a piece from the root, peel it, and then grate it using the ginger grater that I got in Japan (Italian bloggers, you can use the apple grater designed to grate apples for baby food).


Ginger and Chili Tofu


Cut a piece of firm tofu into cubes, top with a chili, sliced, and some grated ginger. Add a couple of tbsp of gluten free soy sauce (or regular light soy sauce) and let the tofu marinate for a few hours, stirring it from time to time so that it gets all coated with the sauce.



 Drain the tofu but keep the sauce and all the chili pieces aside: they will be used later. Heat 1 tbsp of vegetable oil (I use rice bran) and lightly fry the tofu on all sides. Lift the tofu from the pan and set aside. Add one tsp of cornflour to the marinade, and a couple of tbsp of water (if it looks too thick), mix well and then put into the same frying pan (or wok) where you fried the tofu. Do not rinse the pan, usually some pieces of tofu get stuck there (they are the best!), but scrape them all up while stirring the sauce. The sauce will thicken immediately, add 1 tbsp of tomato ketchup, and then the tofu. Stir and serve immediately.

Ginger, lemon and mint tea




One of my favourite hot drinks: lemon (from my friend's garden), fresh ginger (peel it first) and a few mint leaves (from my garden). All into the teapot, add boiling water and let it rest for 5 minutes. Good for colds too!

Green Curry Tofu and Beans with Rice Served on a Banana Leaf








I had some leftover green curry paste in the freezer. When I make green curry I usually have too much for one meal so I freeze the rest (it freezes really well). My paste is really simple, some fresh ginger (peeled) some shallot (also peeled), fresh coriander (with stalks), green chilli (not too much for me, maybe one or two), and fresh lemon grass (one stick). If you have kaffir lime leaves or rind, the are good too, apparently, but I didn't have any. You should use a mortar and pestle, but I just added a little salt and blended everything in the food mixer.


For the curry

1 tbsp of green curry paste
2 tbsp oil
Green and yellow beans
Tofu, cut in big pieces
1 can coconut cream
Water
Fresh Vietnamese mint
Chilli (optional)

accompany with a blend of long and wild rice.


Sizzle the curry paste with the oil, add the beans and tofu, and then the coconut cream. Fill up the empty can of coconut cream with water and add (this way you can rinse and save all the coconut cream that get stuck to the can). Add salt only if you need it (my paste was salty already). Cook for 20 minutes, then add the Vietnamese mint (but also fresh coriander or Thai basil, if you have them) and the chilli, if you wish. Serve with steamed rice.



I love setting the table for different occasions, and since what I like is to source my food from the garden or from the wild, I wanted to source my mise en place in the same way too.

 I have a corner in my garden that looks quite tropical, with a few banana plants.




I went out with my machete: dadadadaaammm!! Those of you who have meet me are probably giggling by now, I am not exactly a bush woman!





The leaves needs to be washed well, like you would do with china, and dried with a tea-towel.




For a romantic dinner share a leaf between two.
Food can be served directly on the leaf (use as a plate) so I put the rice on the leaf but left the curry (it has a liquid sauce) in a bowl. Then you can pour the curry over the rice (use a nice ethnic wooden spoon) and eat with... fingers?? I never managed to, so spoon and fork worked well for us.
