Description/Taste
Celery is a perennial herb and vegetable that grows in stocks and can reach lengths of 46 to 61 centimeters. It has wide, parsley-like green leaves and thick, juicy, ribbed stalks that join at a common base above the root. These light green stalks are firm and relatively smooth, with fibrous, lengthwise strands on the ribbed surface giving them a slightly textured, raised feel. Celery has a juicy and crunchy flesh with a mild salty flavor. Although celery is most often used for its stalks, its leaves are edible and have a concentrated celery flavor.

Current Facts
The botanical name for Celery is Apium graveolens and it is from the Apiaceae family which also includes parsnip, fennel, cumin, and carrots. Sometimes referred to as smallage, this vegetable is native to the Mediterranean, having been used for its culinary, medicinal, and ornamental qualities for centuries. The crunchy, upright, light green leafstalk version of celery, developed in the late 1700s, replaced the previously bitter-tasting vegetable. Over time, gardeners who cultivated it found ways to make the stalks have milder flavors by growing them in late summer and fall rather than winter. The edible portions of celery were once blanched to reduce their strong flavor, and their vivid green coloring was lightened by burying the plants in the soil during cultivation. In the past 50 years, self-blanching varieties of celery have been developed, which are better suited for growing in less favorable conditions.
Nutritional Value
Celery is a good source of vitamins A, C, and K, which are important for vision, immune function, skin and reproductive health, collagen production, antioxidant protection, cell growth, iron absorption, mood regulation, and inflammation and blood pressure reduction. This vegetable provides the body with potassium to regulate fluid balance, energy levels, and kidney and heart health. Folate, or vitamin B9, in Celery encourages cognitive function, tissue growth, reproductive health, and red blood cell formation. It contains calcium to boost bone health, nerve transmission, hormone secretion, and blood clotting. The parsley-like leaves that grow from the top of Celery stalks were used by the Romans and Greeks to ward off intoxication. The whole plant can be used to alleviate heartburn and a decoction made from Celery may induce vomiting and counteract the effects of poison, snake bites, coughs, and diarrhea.
Applications
Celery can be eaten fresh, steamed, boiled, roasted, or blanched. Served raw, it's enjoyed as a snack, blended into smoothies and green juices, dipped into peanut butter, hummus, or ranch, or chopped up into small pieces for a macaroni, egg, potato, or green salad. Celery sticks often garnish drinks like bloody Mary's or spritzes. This vegetable is combined with carrots and onions to create mirepoix. Celery, onions, and bell peppers are the three vegetables considered to be the holy trinity of Louisiana Creole and Cajun cuisine. This vegetable is often chosen for soups like chicken noodle, gumbo, cream of spinach, and matzo ball. Cooked Celery is mixed into stuffing, pot pie, bolognese sauce, stir fry, gratins, or simply roasted on its own with olive oil or butter. Its seeds are ground into Celery salt that can be used in savory foods and drinks. This vegetable pairs well with apples, red chiles, tomatoes, red onion, garlic, ginger, dill, kale, spinach, broccoli, peas, mushrooms, potatoes, and lentils. Celery should be stored in the refrigerator with its head intact for 1 to 2 weeks or frozen for two months.
Ethnic/Cultural Info
The Ancient Greeks associated the strong scent of Celery with the underworld and used it in burials. Graves were covered with Celery, and dead bodies were given a crown of Celery as a symbol of dignity. In the Nemean and Isthmian games, the winners were also given Celery crowns. The vegetable's association with mortality prevented it from being used in everyday foods for centuries but allotted for its frequent inclusion in ancient writings and folklore that claimed the seeds of Celery visited the devil nine times before they started to sprout. Both Celery and parsley were believed to ward off evil spirits and were dedicated to Persephone, the Greek goddess and wife of Hades, king of the underworld.
Geography/History
Celery is native to the Mediterranean region. Its wild ancestor was called smallage, a bitter-tasting marsh plant that was used primarily as a medicine. Wild celery has been growing since ancient times and eventually spread to areas across Europe and Asia. The first recorded use of celery dates back to the 5th century. The crop continued to be grown in Europe for purely medicinal purposes until the early 17th century when it was used as a flavoring or eaten with oil dressing. When improvements to its flavor were starting to be made, Celery eventually developed into a luxury food in Europe and spread to the United States in the 19th century. Throughout history, Celery has been bred to create improved varieties for culinary purposes. In the modern day, the species is grown commercially and in home gardens, thriving in cool, moist climates with full sun exposure and well-drained soils. Celery can be found in grocery stores, farmer's markets, and retailers worldwide.
