Description/Taste
Petite® Cilantro™ is comprised of small leaves attached to slender green stems. The leaves may vary slightly in size but are typically broad, pliable, and lobed with toothed, serrated edges. Each leaf has a smooth, soft, matte green surface with subtle veining, and the pale green stems are slim, straight, and delicate. Petite® Cilantro™ is known for its crisp, tender, and succulent consistency. The greens and stems are edible and are hardier than microgreens but more tender than full-grown leaves. Petite® Cilantro™ emits a bright, musky, citrusy, and vegetal aroma and is edible raw, contributing a clean, bold, bright flavor with grassy, herbaceous, earthy, and tangy nuances.
Seasons/Availability
Petite® Cilantro™ is available year-round.
Current Facts
Petite® Cilantro™ is a specialty green curated by Fresh Origins®, the largest grower and supplier of microgreens, Petite® Greens, and edible flowers in the United States. The aromatic herb is a part of a larger Petite® Greens line, which includes leaves of various species harvested between the microgreen and adult stages. Petite® Greens are larger and picked later than microgreens, after the plants have begun growing their true leaves, but the greens are collected before maturity to retain a tender, succulent, and crisp nature. Petite® Cilantro™ features full and expanded leaves, which resemble mature versions, and are used in dishes where more impact is needed beyond the smaller size of microgreens. The herbaceous leaves and stems can be used whole and offer a robust flavor, texture, and visual appeal in dishes. One of the benefits of Petite® Cilantro™ is its ability to be quickly placed on a dish or beverage as a garnish with little to no prior preparation. This allows chefs and consumers to enhance the complexity of their creations without the need for additional plating time. Petite® Cilantro™ builds on a dish, adding fresh and bright nuances, and holds up well, allowing it to be used in a wide array of fresh and cooked culinary preparations and as a garnish for beverages.
Nutritional Value
Petite® Cilantro™ has not been extensively studied for its nutritional properties. Like its full-grown counterpart, the greens may be a source of fiber to aid digestion and vitamins A, B, C, E, and K. These vitamins maintain healthy organs, contribute to energy production, strengthen the immune system, guard the cells against free radical damage, and support faster wound healing. Cilantro also provides minerals in varying amounts, including calcium, potassium, iron, copper, magnesium, and phosphorus. These minerals help the body develop bones and teeth, balance fluid levels, produce red blood cells, build proteins for oxygen transport through the bloodstream, and control daily nerve functions.
Applications
Petite® Cilantro™ has a bright, fresh, grassy, and citrusy taste suited for fresh and cooked preparations. The greens and stems are edible and are used as a finishing element on dishes. Petite® Cilantro™ can be used whole as a garnish, or it can be lightly torn, chopped, and minced, added at the end of cooking to retain the herb’s bright and fresh flavor. Cilantro is widely incorporated in cuisines worldwide and is popularly added to soups, stews, and curries. The greens are also mixed into sauces, salsas, and other dips, or they are placed over omelets. Try using Petite® Cilantro™ in any preparation calling for mature cilantro. The tender greens add depth to rice and noodle dishes and provide fresh flavor in meat main dishes. They can also be incorporated into salads, used as a topping for tacos, or stuffed into bao buns and other dumplings. Petite® Cilantro™ complements beans or potatoes, and the greens are often served on seafood-based dishes like ceviche, grilled fish, or pan-fried shrimp. Beyond culinary uses, Petite® Cilantro™ is used by mixologists as a crisp, herbal addition to various cocktails and mocktails. Petite® Cilantro™ pairs well with other herbs like lemongrass, mint, dill, and parsley, ingredients like cucumbers, zucchini, carrots, and ginger, and fruits like mangoes, papayas, and pineapples. The Petite® Greens will keep for several days when stored in their original clamshell in the refrigerator.
Ethnic/Cultural Info
Petite® Cilantro™ is a young version of the common herb, botanically classified as Coriandrum sativum, and belonging to the Apiaceae family. Worldwide, Coriandrum sativum is known by many regional names in different languages, and it also has several English monikers, including Cilantro, Coriander, Chinese Parsley, and sometimes Mexican Parsley, but this name is also used for Portulaca oleracea. In the United States, Cilantro is the most used term for the species and is derived from Spanish. It is hypothesized that the word appeared in English in the early 20th century, but was used much earlier than this throughout Mexico, Central, and South America, as the term arrived in the New World with Spanish explorers beginning in the late 15th century. Cilantro is thought to have been taken from the Latin word coriandrum, which evolved from the Greek word koriannon. In Europe, Asia, and other regions worldwide, Coriander is the most common term used for the plant. Curiously, the United States has adapted Coriander for the plant's seeds, but the leaves are separated and called Cilantro.
Geography/History
Petite® Cilantro™ is a proprietary creation of Fresh Origins®, a company based in San Diego, California. Fresh Origins® was established in 1995 and utilizes its ideal location in the mild Southern California climate to produce robust, healthy, and eye-catching greens. The seed-to-plate company grows Petite® Cilantro™ year-round in greenhouses, and the leaves and stems are hand-harvested, packed, and shipped at peak quality to provide chefs and mixologists with a quality garnish. Petite® Cilantro™ is a specialty green unique to Fresh Origins® known for its size, flavor, and texture, but the species, as a culinary herb, has been used in civilizations worldwide since ancient times. Cilantro is believed to be native to Southern Europe and Asia Minor and spread over time along trade routes to areas of Asia and North Africa. The species was incorporated into medicinal and culinary practices and was noted in various records throughout the Ancient Egyptian, Greek, and Roman empires. Cilantro later became an extensively cultivated herb in Asia and was carried to the New World with Spanish explorers in the 15th and 16th centuries. Today, Petite® Cilantro™ is a unique variation of the internationally recognized herb and is found through select distribution partners of Fresh Origins® across the United States, including Specialty Produce, and in Canada.
