Description/Taste
Red Viola flowers are small in size, averaging 1 to 5 centimeters in diameter, and are distinguished by their open appearance. Each bloom contains around five petals, and it is characteristic of the flowers to have two petals pointing upward, while the remaining three petals point downward. The petals have an oval, broad, curved shape, tapering toward the center of the bloom. It is common for the petals to vary in size and overall appearance, with some being curled or curved inward, while others are flat. The petals are smooth, soft, and velvety, bearing a pliable and lightly crisp, succulent consistency and have saturated crimson hues. The flower also features a yellow center with dark, purple-red, or black flushes surrounding the center. Red Viola flowers are edible raw and have a fresh, floral, mild, and subtly tart taste. Some consumers also note a very gentle, light, minty flavor with grassy nuances.
Seasons/Availability

Current Facts
Red Viola flowers, botanically a part of the Viola genus, are the colorful blooms of a low-growing, herbaceous plant belonging to the Violaceae family. The small flowers are found wild and cultivated worldwide, and are favored by growers for their hardiness, prolific blooms, and vibrant colors. Red Viola flowers are seasonal blooms sown in home gardens as ornamentals. The flowers have also been historically utilized in natural medicines and culinary preparations. The Red Violas featured in the photograph above are specifically grown, packaged, and marketed by Fresh Origins® as an edible ingredient for culinary and mixology purposes. The curated blooms are celebrated for their elegant nature and versatility, serving as a strategic finishing element for chefs and home cooks. Red Violas are just one of many Viola flowers cultivated by Fresh Origins®, and the entire flower is edible. The blooms can be placed individually on dishes, separated into petals, or topped in larger groupings for varying levels of impact. Red Violas are known for their mild flavor, which allows them to be incorporated into a wide array of sweet and savory culinary dishes and beverages.
Nutritional Value
Red Viola flowers have not been extensively studied for their nutritional properties, as they are primarily used as an accent in culinary dishes and drinks. In general, Viola flowers are said to be a source of vitamins A and C, which help strengthen the immune system and maintain healthy organs. Violas also provide anthocyanins, which are colored pigments in the petals that give them their signature crimson hue. Anthocyanins possess antioxidant properties that help reduce inflammation and protect cells in the body against oxidative stress and free radical damage. In natural medicines in Europe, some types of Violas have been used to make tea as a remedy to lessen coughs. Poultices have also been created using the flowers topically to soothe irritation, dryness, and insect bites.
Applications
Red Viola flowers have a mild, tangy, and fresh flavor suited for sweet and savory dishes. The blooms can be used whole, or the petals separated for a different aesthetic. Red Viola flowers can be layered into fresh spring rolls, scattered over salads, or served on cheese boards as a decorative addition. The small blooms can also be pressed into soft cheeses, such as goat cheese, for enhanced visual appeal, or dusted in an egg wash and sugar to candy the petals. Candied blooms are served on crostini with drizzled honey and cheeses or used to decorate cakes and other desserts. Try pressing Red Viola flowers into butter or adding them to crudo dishes for increased visual appeal. In addition to using the flowers whole, Red Viola petals can be separated and strewn over frosted desserts, sorbets, tarts, and folded into dough. The bloom’s small size adds delicate touches to seafood dishes or grain bowls. Beyond culinary preparations, Red Violas can be frozen into ice cubes or floated on cocktails, mocktails, teas, punches, and sparkling beverages. Red Violas pair well with fruits such as berries and citrus, as well as herbs like mint, parsley, basil, and thyme, and mixed greens like arugula, spinach, kale, and mild lettuces. Whole Red Viola flowers should be used immediately for the best quality and flavor. When purchased from Fresh Origins®, it is recommended to store the flowers in their original clamshell in the refrigerator.
Ethnic/Cultural Info
Viola tricolor, or the Wild Pansy, is featured in poet William Shakespeare’s famous play “A Midsummer Night’s Dream.” In Act II of the play, Oberon, the king of the fairies, mentions that he witnessed Cupid, the Roman god of love, shooting an arrow at a votaress of Diana, the goddess of the moon. Diana protected her devoted maiden and misdirected the arrow to strike a small white flower. After being pierced by the love arrow, the flower changed color and developed purple tones. In “A Midsummer Night’s Dream,” Oberon commanded his servant, Puck, to go and find the flower, which could be crushed and used as a love potion. The Pansy was later used throughout the play to cause comedic events and to bring characters together in love. Outside of Shakespeare’s play, Pansies, which are a type of Viola, were also called Heartsease or Heart's Ease, as local lore in Europe believed the flowers could be made into tinctures to help heal a broken heart.
Geography/History
Viola flowers are a part of a large genus with species native to various regions throughout temperate climates in the Northern Hemisphere. Viola species are notably found in parts of North America, Europe, North Africa, and Asia, and the flowering plants thrive in shadier areas in woodlands, thickets, fields, and gardens. It is essential to note that Viola species have been growing wild since ancient times and have been selectively bred to produce new species with varying colors, bloom sizes, and tastes. Red Violas have varying histories, depending on the variety. The specialty blooms cultivated and marketed by Fresh Origins®, the largest grower and supplier of microgreens, edible flowers, and specialty items in the United States, are grown in San Diego, California. Fresh Origins® was established in 1995 and utilizes its ideal location in the mild Southern California climate to produce robust, healthy, and eye-catching flowers. The seed-to-plate company grows Red Viola flowers year-round in greenhouses, and the flowers are hand-harvested, packed, and shipped at peak quality to provide chefs and mixologists with a flavorful ingredient. The colored blooms are sold by themselves or seasonally mixed with other types of Violas. Today, Red Viola flowers can be found through select distribution partners of Fresh Origins across the United States, including Specialty Produce, as well as in Canada. The flowers, in general, are also present in home gardens, found through select growers, and are foraged from wild populations worldwide.
