Always time for a nice piece of cheese from my favorite cheese merchant of the weekend market. Their newest acquisition is a pecorino cheese with truffle inside (unfortunately with matching price) or a blue basque cheese from the pyrenees. The gouda with nettle inside is not so expensive but also not so exquisite. Yes every type of cheese gets herbs inside these days but not for me.  My favorite still is the 4 year old beemster cheese. Nearly to old to cut. Just have to break it in little chunks.

Dutch Beemster cheese ripened for 12 months on our market at friday mornings.

Here in the Netherlands we make a difference in cheese names controlled by the ripening time of the cheese.

Not ripened at all and still white - may-cheese (meikaas)

4 weeks old - young cheese (jonge kaas)

8 till 10 weeks - young mature cheese (jong belegen kaas)

16 until 18 weeks - Mature cheese (belegen kaas)

7 till 8 months - old mature cheese ( oud belegen kaas)

10-12 months - old cheese (oude kaas)

12-36 months - old cheese or old crumble ( oude brokkel kaas)

The last one is impossible to cut in slices because it crumbles away by putting a knife on it but the taste is really a treat. ( Also a bit salty ).

Behind a workshop for little electric canal boats in Amsterdam I found this submarine. It looks still under rebuilding construction but for sure different then the other canal boats.

I would like to see its second maiden trip in the "Prinsengracht". Who knows.

Saturday on the noordermarket the baker had spring in his mind if I look at the blossom between the crates. The weather had other ideas with an icing wind and temperature.

I saw for the first time that you could have oysters served with fresh citron juice for € 2,75 the four.

In the golden area that the railroad was the king of transport you had to pas this doorway if you worked on the office of the old station of St.Louis. In those times they didn't look at a building budget as they do now.

Here in the Vijzelstreet in Amsterdam this coffeeshop started in 1972 in an abandoned bakery. There was a lot of dealing in soft drugs and so it became one of the first official coffeeshops where the authorities turned a blind eye to the users and buyers of the stuff for personal use. Nowadays this habit is still in discussion but is also still practiced The name comes from the Bob Dylan song Mellow Yellow where he tried to get high by means of smoking banana shells.

 I think this is a nice posting for mellow yellow monday.

Around midsummer night the swedish girls wear a flower wreath in their hair. That habit seems to have reached amsterdam.
