Soba with Vegetable Tempura - and the Leftovers for the Second Night


I don't fry much these days, but I love fried food, like tempura. I made the batter quickly with just flour and beer, nothing special, it was an impromptu dinner. I fried pumpkin, red onions and nori seaweed (in that order). Nori is great to use at the end to pick up all the batter - no waste in my kitchen :-).

I add salt to the fried pieces as I take them out of the hot oil to drain on kitchen paper. Quite a bit of salt, actually, as I don't use any in the batter.

In the meantime I prepared the cold soba. One thing that I quickly learned is that soba is not cooked like pasta. The only thing in common with pasta is that you should use the biggest pot you have, and have enough water as if you were to cook spaghetti. But don't add salt!

Bring the water to boil: add the soba, stir gently. When the water starts to froth add half a cup of cold water and lower the heat. Do this three times. After the third time your soba should be ready. Drain and collect the cooking water to make soup, if you like (full of starch and vitamins and minerals) and place the soba in a bowl with ice water. Or just rinse under cold water (I prefer this way, the soba may not be perfect but I cannot bear to loose anymore starch!

For the dipping sauce, usually I make a kombu broth, but I didn't have any kombu, so I used the water from the soba, to which I add soy sauce. Then this time I used chopped chives, ground ginger, and yuzu citrus with chili paste (wasabi is an alternative). Put everything in your dipping bowl and enjoy, and if there is some sauce left at the end, just add more soba water and drink it like a soup.

The day after:



This meal is even better in my opinion. I had some soba noodles and tempura leftovers, so I just made a light vegetable broth and poured it over the noodles. I warmed up the tempura and put it on top and added fresh chives. Seasoned with soy sauce and Japanese chili.

Vegan pumpkin red curry with Vietnamese mint flowers (and a soup with the leftovers)

 



Bake the whole pumpkin in the oven and then slice and remove the outer peel and centre, slice and set aside. Chop two shallots and one green pepper and sauté with a little vegetable oil,  then add red curry paste (as much as your taste buds suggest) and a can of coconut cream, plus the water from rinsing out the can. Bring to a simmer, then add the sliced pumpkin and some Vietnamese mint leaves and flowers, cover and cook for 20 minutes. Top with fresh Vietnamese mint flowers, and also chopped coriander and Thai or lemon basil. Serve with rice, it is delicious!

If you have made a lot you can also blend it into a soup, easy as!

A carrot soup that actually tastes good!



Do you want a carrot soup that taste carroty but not too much? Carrot taste can be a little 'overpowering' and I am tired of seeing so many carrot and coriander soup recipes, so here is a variation with onions and thyme.

1 kg carrots
1 large onion
olive oil
Fresh thyme
salt
vegetable stock
Salt and pepper to season
Coconut Yogurt to serve (optional)

Clean and steam the carrots. In the meantime slice the onion and cook in a frying pan with a little olive oil, salt and a few sprigs of fresh thyme until translucent. Place the steamed carrots and onion in a mixer and turn into a puree. Place into a soup pot and cover with vegetable stock. Simmer on low for 20-30 minutes (the longer the better). Add salt and pepper to taste and serve hot with a few fresh leaves of thyme and, if you like, a dollop of coconut yogurt.

Eat your colour in a minestrone soup


Lovely colourful vegetables from the garden (except the red onions), all ready for a minestrone. From the bottom: red onions, rainbow chard, carrots, yellow beans, silverbeet stalks, celery, green beans, flat beans, kale. Just add water and salt.

Asparagus and onion weed soup




Soon it will be spring, time for asparagus and onion weeds with some nice juicy bulbs, this is a recipe from last year with I will repeat as I am cleaning the veggie garden, always finding some little potatoes and cavolo nero. Everything goes into a soup, with the addition of asparagus, and vegetable stock. I blended everything (but left our a few whole steamed asparagus tips to add later) and used some onion weed and pansy flowers for decoration.

Using and freezing vegetables from the garden, plus grissini recipe


I love summer and the smell of my veggie garden! It is a bit like a jungle now and we are towards the end of the season so there are more weeds than veggies, but what a joy! One of the best things for me is to make minestrone soup with whatever I can pick on the day, even when it is hot (and then you can have it warm). And I am saving some for winter in some old ice cream containers. So funny, my boy opened the freezer the other day and was excited seeing boxes and boxes of ice cream, I felt a bit mean telling him what they actually contained...


Then I like to put veggies on focaccia and pizza, yellow and green zucchini slices look good and taste even better!


Ok, this is nothing to do with veggies, but it is so cool to make grissini, I just use some basic bread dough (500g high grade flour, 2 tbsp gluten flour, 300ml water, pinch of salt, brewer yeast and pinch of sugar), add a bit of olive oil and stretch out long grissini which I roll in polenta flour before baking.

Asparagus, spinach and onion weed soup



This soup is vegan and gluten free, and makes use of those onion weeds that grow everywhere in Auckland in spring. Forage the onion weeds from a safe and clean place and wash well. The bulbs are fat and delicious just like spring onions (plus they are free!) and you can also eat the stems, leaves and flowers. 


Chop the bulbs, stalks and leaves of a bunch of onion weed and one bunch of asparagus, sauté with a drop of olive oil until fragrant, then add 1 l of vegetable stock and one big potato, peeled and finely sliced. Simmer until the potato is mushy and then add one cup of baby spinach leaves. Blend with an immersion blender and bring back to the boil for one minute. Adjust with salt and pepper and serve, decorated with onion weed flowers.

Leek and potato soup, one of the easiest soups, filling and delicious!



I am surprised when I see people buying already made soups, especially the very simple ones. Ok to buy them if you are going camping. Or if you are staying in a motel and don't want to eat out. Or if you don't have any cooking facilities, for whatever reason.

Ingredients and instructions: peel and cut the potatoes, wash and cut the leek, put olive oil in the pot to sauté the veggies, then add vegetable stock to cover and simmer. Blend. Done.

Brussels sprouts and pastina vegetable soup



One of the easiest way to cook these notorius vegetables is in a soup, a bit like a minestrone, so that all the flavors from the other vegetables, plus the starch of pasta, 'improve' the distinctive taste of Brussels sprouts.

Chop one onion, half a carrot and one celery stalk with leaves, sauté with a tbsp of olive oil and then add 1.5 l of vegetable stock. Simmer until the carrots are soft and then add the Brussel sprouts, a cube of frozen spinach and a handful of pastina (small pasta like stelline). Simmer until the pasta and Brussels sprouts are cooked, add a little more extra virgin olive oil and black pepper to taste. Easy and yum!

Vegan Goulash with tofu


Ingredients:

2 blocks of tofu, frozen for one day and then defrosted
3 tbsp olive oil
1 large onion
1 tsp sweet paprika
1/2 tsp hot paprika (or to taste)
2 carrots
4 large potatoes
1 green capsicum (bell pepper)
1 red capsicum (bell pepper)
2l l vegetable broth
Salt to taste

If you freeze the tofu and then defrost it it becomes porous and easy to cook in stew without breaking up. Also it will absorb flavors really well! Once the tofu is defrosted cut it in big cubes. Chop the onion and sauté with the olive oil. When the onion is translucent add the paprika, the sweet paprika will give flavour, and the hot one… heat, so use this according to taste. Then add the tofu cubes and stir well. Add the vegetables and the hot vegetable broth. Simmer until the carrots and potatoes are ready, but before the potatoes start to break up. Goulash is more like a soup than a stew. If you prefer a thicker stew just cook it for longer, stirring often and breaking up the potatoes. Add salt to taste (no necessary if the broth is salty enough).

Cavolo nero soup with chickpeas and pasta



A low fat, high protein vegan dish

1 bunch of cavolo nero
1 shallot
1.5 l vegetable stock
1 can chickpeas
plus the same amount of water
1 cup of small pasta 
salt and pepper to taste
extra virgin olive oil to drizzle

Wash the cavolo nero and remove the white stalks. Slice the shallot. Put everything in a pot with the vegetable stock and bring to the boil. Simmer for 30 minutes. Add the content of the can of chick peas, plus a can of water. Simmer for other 30 minutes then blend with an immersion blend, but not too finely, leave some of the chickpeas whole. Bring back to the boil, add the pasta and simmer until the pasta is al dente. Taste for salt and pepper and drizzle with olive oil before serving. It is actually better the day after!

Vermicelli in coconut and veggie broth with tofu and Asian fragrances


This is an aromatic vegan and gluten free soup, light and delicious.


500 ml vegetable stock
1 can coconut cream or milk + one can of water (rinsing the coconut cream)
1 large yellow courgette (zucchini)
2 fresh red chilies
1 block of tofu
a pinch of freshly grated ginger
1 stalk lemon grass
Vermicelli
a few coriander leaves
a few cherry tomatoes

Simmer all together for a few minutes until the zucchini are soft but not mushy.

In the meantime soak the vermicelli in hot water until soft then divide between 6 bowls.
chop a few cherry tomatoes, and wash some fresh basil and some thai mint

Pour the hot soup over the vermicelli, making sure that each dish has equal parts of tofu and veggies.
Decorate with the tomatoes, basil and Thai mint and serve immediately.

A basket of veggies from the garden to make soup


Vegetable soup with: yellow zucchini, green zucchini, plum tomatoes, parsley, chives, celery,
carrot, silver beet, onions. The onion are really small but I can't grow them any bigger in the bush so
I grow them in pots.
Chop, add water (rain water for me, so this too is free!) and salt, then cook. You can add a bit of
extra virgin olive oil at the end.

Pasta e fagioli soup with Cavolo nero and a ... purple carrot!


I love pasta e fagioli (pasta and beans) soup, especially when there is cavolo nero too, this Italian kale is my favourite brassica and makes any soup taste amazing! But the surprise here was a purple carrot. Carolyn brought me one, thinking that with me being a foodie I would appreciate the novelty. I told her that I grew purple carrots but that only the outers skin was purple, and inside they were orange. She was a bit disappointed, but hey Caroly look here: I peeled the carrot and, surprise surprise, it was purple all the way through! I never seen anything like it! It almost bleed like a red beetroot (and had a light beetroot taste too, but maybe that was just my imagination, it mostly tasted like... carrot)! And it coloured the soup too, it looked like a borsch!


For the soup use one large (purple) carrot, peeled and cubed, a bunch of cavolo nero, washed, white vein removed and chopped, and one onion, chopped. Sauté everything with one tbsp of extra virgin olive oil  then add one litre of vegetable stock and simmer for about 30 minutes. Add one can of cannellini beans and simmer for 10 more minutes. Remove some of the beans, add one cup of cold water and blend the soup. Bring back to the simmer, then add a handful of risoni pasta. Simmer, stirring often, until the pasta is cooked. Add back the whole beans and cook for one more minute. Serve hot or at room temperature, with a drizzle of extra virgin olive oil. The best soup I made in a long time, thank you for the carrot Carolyn, and for the cavolo nero Sue!

Haute Vegan Cuisine: Asparagus and onion weed soup with edible flowers





This is so easy to make, but looks impressive and tastes delicious.

Ingredients

1 big agria potato
1 bunch asparagus
3-4 onion weeds with flowers
1 l vegetable stock
nasturtium flowers and baby leaves
sage flowers
violet flowers

Peel the potato and cube. Clean the asparagus, remove the woody stalk ends and cut into small pieces keeping the tips aside. Clean the onion weed, set the flowers aside and cut the stalks. Place potato, asparagus spares and onion weed stalks in a pot with the vegetable stock and simmer until all the veggies are soft. Add the asparagus tips and blanch. Remove the asparagus tips and blend the rest of the soup. Serve and top with the whole asparagus tips, decorate with nasturtium flowers and baby leaves, sage flowers, violet flowers and onion weed flowers. Eat everything!

Vegan and gluten free soup: Minestrone with veggies from the garden








Do you get tomatoes plants that die and leave you with green tomatoes hanging there not ripening? I do! What a pity, but even if some veggie are ugly I can still manage to make a soup out of them!


I don't know why the yellow zucchini plant is three times more prolific than the green one! Still, I am not complaining, look at the colour!




My favourite additions to soups are beans, it is just so much fun shelling them and look at the beautiful colours. Pity that they become all brown during cooking.


And here is the minestrone. No recipe, just wash, chop and boil, add salt to taste and extra virgin olive oil at the end. So tasty and healthy! Some of the photos are mine, but the prettiest are Arantxa's!

Japanese dinner: the last course, rice and eggplant and tofu miso soup




These are the final dishes of my Vegan Japanese dinner. For those of you who missed some 'episodes', the antipasto was raw avocado sashimi, and the main Fried tofu puffs simmered in vegetable broth, and by clicking here you can find the side vegetables, Broccoli and cauliflowers with easy miso sauce, and Quick Japanese Cucumber and Radish Pickles.

So, how do you finish a Japanese meal? Usually with soup and rice (dessert is optional really, a little seasonal fruit is preferred, like in this Autumn meal, where the fruit was persimmon, this fancy Japanese picnic basket, with mandarins - they are easy to carry, or this Summer meal, where dessert was... berries). 

But not fruit tonight, we just finished with rice and soup. Rice is served at the end to fill  the stomach, and diners eat what they need according to their body mass (this, I was told by a Ryokan chef in Kyoto, Nami, is it true?). By the time I served the rice and soup the light was gone, so apologies for the bad photos. Also, I had to hurry before the soup got cold! The rice is short grain and needs to be rinsed a few times, and then cooked by absorption. Usually I don't add salt to it. When ready I just put a umeboshi (pickled plum) on top, something usually done for breakfast in Japan, but I don't eat rice for breakfast so I use my umeboshi for lunch or dinner :-). And for the miso soup? Well, I like all types, but miso with eggplant is my favourite!




Miso soup with eggplant, tofu and onion weed

First you have to go back for a moment to the Fried tofu puffs simmered in vegetable broth, I used some light vegetable stock to cook the tofu puffs, and the leftover broth after draining the tofu was the base for my miso soup. Then I cut two long eggplants into six pieces each. I took the stock back to simmering point and I added the eggplants and four small cubes of Japanese freeze dried tofu (available in Japanese shops - but I have Japanese friends who send it to me by post regularly. Thank you Hideko and Atsuko!). I simmered everything for 30 minutes, then I took the miso paste left over from Broccoli and cauliflowers with easy miso sauce (in Japanese Zen cuisine everything is recycled!), and added a bit more miso paste to get the amount I wanted - personal taste here, and mixed it well. With chopstick I picked up the eggplant pieces and tofu and divided them between four bowl (3 pieces of eggplant and 1 small block of tofu for each bowl) then I quickly mixed the miso paste with the broth, and poured it into the bowls. To finish I topped the soups with some chopped onion weed. I love miso soup with eggplants! Did I said that already? :-)

Pumpkin and red onion soup with thyme and rosemary flowers









Ingredients:

1 red onion
2 tbsp olive oil
2 kg pumpkin flesh
1 celery stick with leaves
2 l vegetable stock
Salt and pepper to taste
A few sprigs of thyme
A few rosemary flowers

Instructions

 Chop the red onion and sauté with olive oil. Add cut and peeled pumpkin, a celery stalk with leaves and some vegetable stock. When the vegetables are cooked blend the soup, adjust with salt and pepper and then decorate with fresh thyme and rosemary flowers (these can be eaten and will give the soup a lovely rosemary flavor without any of the woody leaves!).

Pumpkin and coconut soup with coriander and Vietnamese mint





The original recipe is here, but this time I didn't roast the pumpkin because... I had time to cut it! (I don't like cutting pumpkin...). Also I had some celery so I put that in too, plus one carrot and one onion.
I added water and organic veggie stock (Rapunzel), and when the veggies were soft I blended them with an immersion blender. 




 At this point I usually add the coconut milk/cream, but I didn't have any, so I used this coconut powder my husband brought me from a trip to Hainan in China (the place is famous for coconut!). he was told to place the content of a sachet in a cup and add hot water to make a hot coconut drink. We did, and it is ok, basically it is just coconut... but I am not really used to drink hot coconut milk, so I added 4 sachets to the soup instead (we still have plenty more). I simmer everything for a bit longer and then added coriander and Vietnamese mint to flavour.

I love this soup!!

Kumara and Celery Soup








This is such a classic NZ soup, everybody seems to know how to make this one: You just need some kumara (I used the red ones, peeled). Cook about 2 large kumara with 3 or 4 celery sticks (with leaves, most Kiwis do not add the leaves here, but celery leaves have lots of flavour and they are perfect for soup) in a litre of light vegetable stock. When the celery and kumara are soft blend well and serve. 


Serves 4.
