Salad:
2 large beets
2 large apples
2 stalks of celery
2/3 cup walnut pieces
4 red lettuce leaves
Trim the beets and put them in a pot with water to cover. Boil them until tender, about 45 minutes. This can be done a day or two ahead. Peel the beets and cut them in dice. Set them aside.
Wash and chop the apples and celery. Mix them with the walnut pieces. Mix in the salad dressing. Just before serving, mix the beets in gently. You can mix them in earlier if you like; the salad will be a much brighter pink.
Arrange the salad over the washed and dried lettuce leaves; either on a large platter or on individual serving plates.
Dressing:
the juice of 1/2 lemon
1/3 cup mayonnaise, light is fine
1/4 teaspoon salt
1/2 teaspoon black peppercorns, crushed
Mix 'em all together.
