1/4 cup sunflower seed oil
1/4 cup apple cider vinegar
1 green onion, minced
1/4 cup minced parsley
1/4 teaspoon each salt and sugar
2 cups sliced button mushrooms
lettuce leaves to serve
Mix the oil, vinegar, minced green onion, minced parsley, salt and sugar. Clean the mushrooms, and slice them fairly thinly. Toss them in the dressing and marinate, covered, in the fridge, for 1 or 2 hours. Serve the salad on lettuce leaves.

I have not tried an uncooked mushroom salad yet. This one looks good!
